We'll be hosting our small family gathering for lunch and my youngest DD & family will be going to her inlaws for a big dinner. DH and I don't want a ton of leftover desserts, but so far, only pumpkin pie is in the running. DH and I really like pecan pie, but we'd be the only ones eating it, so that's out. I think I'll make a batch of cookies the day before for the kids, but I need at least one other option.
What are you all having? I saw a recipe for a pumpkin icebox cake, but since we are already having pumpkin pie, that's probably out. My kids love this strawberry pie I make but with 5 family birthdays in December and one in early January, that's a lot of strawberry pie requests with off season berries. LOL
No one is crazy about apple desserts but me. They're a bunch of haters.

I'd make mini pecan pies personally. If that's what you guys like, you can enjoy and scale to appropriate serving size.

Another vote for mini pecan pies. If there are any extras, wrap them individually and freeze. They make a great sweet snack at any time without the fuss of baking again. My late MIL always had a stash of frozen mini pecan pies in her freezer. DH and I still miss those things 20+ years later!

You could make up a batch (or even a half batch) of these pecan tassies. They’re cookies that are like tiny pecan pies. They’re a family favorite here so I always make them at Christmas. Pecan pie will freeze great. You can slice up the leftovers and freeze in individual slices.

I love Emeril's Luscious Lemon Bars. Shortbready crust, no eggy flavor, limoncello and lots of juice and zest. Really fab lemon flavor. Is that too summerish?

My 2 year old grandson is allergic to peanuts, wheat and eggs. When his mom had little sis in August, we had he and his big sisters for a week. He's also picky, big surprise for a little kid, lol. Food prep was a JOB.

Also our pecan trees have just now had a good run in the past couple of years after years of nothing. We do have to fight the squirrels for them though.

And an excellent egg replacement I have had success with is: 2 tbsp water + 2 tsp baking powder + 1 tsp oil (I use canola) = 1 egg I have used that to make cutout cookies, cakes, muffins, cupcakes, and quick bread.

I did no water bath and it came out perfectly. It is lighter than a traditional NY cheesecake which I like. Doesn't weight you down.

My favorite special holiday dessert is pecan pie cheesecake. Incredibly decadent, and a very small slice satisfies the dessert stomach.
Trying to figure a way to make a smaller version, maybe for Christmas.

We always did Amaretto Pumpkin Pie, Pecan Pie, and what we called Lynn Cake, because she brought it, but I suspect might be Texas Sheet Cake. Like brownies, but better. eta: Okay, I just compared recipes, maybe it’s a variation of Texas Sheet Cake, they look a lot alike, dense, moist, super chocolatey but Lynn’s doesn’t have sour cream, but does use buttermilk, coffee, and hazelnuts. My family often makes half with and half without nuts, is that an option for you? Just throw some on (or push some in) a small portion of it? Toasted nuts make everything better! Every salad and a lot of veggies we eat get sprinkled with toasted nuts.
