I will start us off with tonight's dinner. www.tiktok.com/t/ZT8GPmCbY/I am using breasts and making roasted potatoes as that is what I had on hand. Also serving goazed carrots. Had some carrots I needed to use up. I will post directions later for those who don't use tiktok.

I have cooked several new dishes already this year. I like to try to do one per week. My son saw this recipe on Tik Tok, and we all loved it, so I have made it twice already this month: Buffalo Chicken Mac & Cheese. All the other new dishes I have made have been from the cookbooks I bought at the restaurant we went to on NYE. The recipes aren't on-line, so I can't post any links: Steamed Red Curry of Prawns Spicy Corn & Coriander Fritters with chilli jam Red Curry Salmon

This was our dinner on Tuesday, and I’ll be eating the leftovers tonight. We are trying to eat more vegetarian meals this year and this was our first new recipe. cookieandkate.com/vegetarian-stuffed-peppers-recipe/As I was making it, I was already thinking of variations - using bulgur or quinoa instead of rice, other beans or lentils, different seasonings ( middle eastern came to mind), stuffing other vegetables (like roasted eggplant)

Chicken Cobbler www.allrecipes.com/chicken-cobbler-recipe-7966464Next time I would reduce the chicken broth to 1 cup (it is pretty soupy with 2 cups). To make it a bit cheaper, I used Bisquick cheese garlic mix instead of the Red Lobster biscuits. It is delicious!

Great thread!
I follow someone on Instagram, I believe she’s on TikTok too, who does 5 ingredients (or less), for $10 (or less) in 30 minutes (or less) and made a good Chili Mac
Easy Chili Mac
1 lb ground beef (I used ground turkey) 1 can Bush’s Chili Magic 1 can Rotel Tomatoes 1 can water (use Chili Magic can) 1 can macaroni (use Chili Magic can) 6-8 oz shredded cheese
Brown & drain ground beef in large soup pot, add remaining ingredients (except cheese) and cook in medium/high until pasta is done. Stir in cheese.
It was good & quick.

I am getting ready to make this for our dinner today. Dinner is at noon at our house, and is the big/main meal of the day. It is something I used to make on the regular, when my kids were home and I made bigger meals. I will portion this up and send some with my daughter so she has an easy meal in the fridge. I have a nice head of cabbage that needs to get used up. Was thinking Bierocks, but this casserole with be so much easier. Not sure what I will make with it. I usually make mashed potatoes, but I am out of potatoes! Since this has rice in it, I might just call it good with the casserole and maybe a small can of green beans. *edited to add - I use a whole pound of ground beef in this. Unstuffed Cabbage Casserole

We like this Keema Curry. I add carrots and don't serve with rice or naan since there are potatoes in the recipe. I also cook the potatoes in the oven, on a Pampered Chef stone so they crisp up a bit. oursaltykitchen.com/keema-curry/#recipe

I could live on soup and THIS white chicken chili is my new fave! Do the optional thickening step. It's sooo good! Not heavy in spite of the cheese, just the right amount of creaminess. Perfect subtle kick. It has quite a lot of ingredients and isn't really budget but it's delish!

I made Farro Risotto with Butternut Squash last night, it’s one of my favorites! I also throw in a couple of cups of baby spinach with the cheese at the end, it’s so good. 😋 Pumpkin risotto is my favourite! (Butternut squash is called butternut pumpkin, or just pumpkin, here.) I especially love it with goat cheese added. I have never made it with farro before. I'm keen to try this recipe, TFS!

Great thread, it’s been a while since we’ve made anything new. Thanks! We did just have some instant pot chili we liked at my sister’s, when she sends me the recipe I’ll share. This looks great, and I love that you add spinach. Thanks! About how many cups does this make? Do you think this would still be good if we reduced the chicken broth and cream cheese? My goal is to thicken it a bit without adding the butter and flour, plus having less cream cheese to make it a bit healthier. Trying to avoid the widow-maker title plus we are diabetic so try and avoid carbs without nutrition when we can. The seasonings sound amazing, and with chicken and high fiber beans this would make a great meal with a salad.

Have you tried freezing this? I’d love a recipe with cabbage we could make in bulk and freeze the remainder that we don’t eat that evening. But I have texture issues so I want to make sure it wouldn’t be slimy. Also, would you consider substituting strewed tomatoes (and spices) instead of the tomato soup? Or does it need to be the consistency of the soup? I’m with you, the rice is enough without potatoes. Actually considering quinoa instead of rice for my blood sugars. Do you think that might work well? This was our dinner on Tuesday, and I’ll be eating the leftovers tonight. I use tiny French lentils in place of ground beef in many recipes. I’m thinking that would work with these as well. Cupcake the faro risotto sounds delicious!

I made this Lemon Chicken Soup this week. We really liked it. However, I had to use Arborio rice instead of orzo. You can not buy orzo in our town, apparently. Lemon Chicken Orzo Soup

Thanks! I make a recipe similar to the unstuffed cabbage casserole and I use riced cauliflower instead of rice. Instead of tomato soup I use Canned tomato sauce that I season with some Worcestershire and a penzey’s seasoning blend called krakow nights. I’ve never tried freezing it.

I did make the beef curry from above last night - it was a big hit. I served it topped with cilantro, yogurt and peanuts.
