I'm looking to make some dietary changes in our house. The first one that will be relatively simple is to limit red meat to once a week.
The big one for us, and the one that will prove to be the most challenging, is to go meatless on one of the other days.
What are your favorite meatless meals? (and it can't be full of carbs or fat either)
I'm thinking of something bean'y...but that even may be too much "weird" for DH and DS. (the girls will be away at school and not often home for Meatless Monday.)
My DH and DS are both pretty picky. Is there any hope of finding something healthy that isn't too far "out there" for them?
Edited to add : I know I could google recipes and find plenty of stuff...but nothing even close to stuff I've made before...so I'm asking the peas for their favorites. |

There are various combinations of beans and rice (Mexican, Louisiana, etc) that create a complete protein and can be adjusted to be very low fat. Add a little cheese on top (at least for the Mexican version) for flavor and mouth feel, but not so much that it defeats the low-fat purpose.

I love steamed veggies (broccoli, cauliflower, red bell pepper & corn) over pasta with a bit of shredded pepper jack cheese sprinkled on top.

There are various combinations of beans and rice (Mexican, Louisiana, etc) that create a complete protein and can be adjusted to be very low fat. Add a little cheese on top (at least for the Mexican version) for flavor and mouth feel, but not so much that it defeats the low-fat purpose. Beans and rice would be a good choice. I don't think it would be difficult to convince either of the guys to eat that. They don't know I'm planning this yet. I'm looking to get together a big list of ideas before I spring it on them.  |

Veggie tacos are a favorite here.... beans, corn, tomatoes, guac... Salsa. I use leftover roasted veggies and some cotija (sp) cheese and you don't even miss the meat.
Same sort of thing for quesillidas.
Soup.. broccoli and cheese, vegetable, enchilada soup.
You could also try some of the soy crumbles like ground beef they are good in chili or spaghetti sauce.

I love steamed broccoli...in fact when we go to Red Robin...instead of the bottomless fries...I substitute broccoli and usually ask for a refill. Not sure there's a steamed veggie that they'd be happy with. |

A good, chunky pasta sauce with lots of veggies (zucchini, mushrooms, onions, tomatoes) over a chewy pasta feels really 'meaty'. Also, look into Indian recipes as a large portion of those are vegetarian. With the flavorful sauces, you never miss the meat. Another choice in our family is quiche or frittata; there are all kinds of veggies that can go into either and playing with the spices can give loads of different flavor profiles.

One of our favorite meals is black beans and yellow rice. Add cheese and onions on top and it is darn near perfect. LOL There are tons of pasta recipes that are meatless or the meat can be left out (think pasta primevera, lasagna or marinara) that are delicious. Another favorite is burritos or fajitas with just veggies. In fact, when I am alone and can't decide what to eat I very often will saute black beans, corn, onions and peppers and eat it on a soft burrito shell with cheese and sour cream. Good luck! Once you get a rotation of dishes set up, you will find it easier and easier to pick out recipes that you can adapt to meatless.  |

We do Meatless Monday at our house. Grilled portobello mushrooms, leeks on toast, soups, egg dishes. So many good options! There's a lot of blogs and pinterest boards out there that are dedicated to Meatless Monday. I get most of my meal ideas from the Pinterest boards.

Since this is also one of our go-to quick meals I generally use the canned black beans. Bush's maybe? (it is in a blue can.) I make yellow rice, plop a scoop of black beans on top of the rice, sprinkle with chopped onions and cheese. I had a really good recipe that combines the black beans, red peppers, corn, onions, peas (really any veggies) and the yellow rice along with munster (?) cheese and baked like a casserole. I wish I could find it because it is delicious and I haven't been able to recreate it.  |

DH loves beans and sausage (with or without rice). You could also try tostadas and use refried beans instead of meat. Nachos with beans (with maybe lettuce and tomato) would make it look fun (like game food)! Also, what about chili made only with beans (a couple of kinds, perhaps)?

Baked eggs over rice or sweet potatoes is our favorite. Mushroom ragout over whole wheat toast. Veggie stirfry with rice noodles. Red pepper grits with cheese and fried eggs. Quiches. Veggie pasta sauce over garlic bread. Build your own baked sweet potato with veggies and cheese or yogurt and spices. If meatless is hard to do, try just reducing the portion size. Most people are eating 8-12 ounces of protein in their meals. Try reducing to 4-6 and only using red meat a couple times a month. So more chicken (ground chicken), turkey (ground turkey), pork (ground pork) and seafood/fish. DH and I eat very little red meat; I've slowly replaced ground beef with ground turkey/chicken. At first it was half beef and half other. Then 1/4 beef and 3/4 other. Now both DH and I prefer the texture of other ground meat for everything other than a burger. I still make turkey or chicken burgers also. Small changes over time tend to stay, rather than big sweeping changes all at once. |

The other thing is that meatless meals once a week don't always need protein. If you're eating protein the rest of your meals, missing one is ok.

One of my favorites is Eggplant Parmesan. I don't fry it. You just dip slices in egg white whipped with a little water and then in seasoned bread crumbs mixed with a little parmesan cheese. Then bake it in the oven on a cookie sheet (I use foil) brushed with olive oil. Turn once while baking. Top with Spaghetti sauce and shredded cheese if you like.
Last night I made Shrimp Tacos and they were very good. Marinated shrimp in lime juice and Chipoltle and Ancho Chile powder and 1T. olive oil, then cooked them on the grill. I use flour shells and topped shrimp with Peach Salsa, guacamole and goat cheese and lettuce. You can also just use a Romaine lettuce leaf instead of the shell if you want to cut down on carbs.

My goal us two meatless dinners a week. You'll find things everyone likes. The black bean and rice enchiladas on allrecipes are fantastic. The only thing I do differently is I use half a can of Rotel rather than the whole can. Many ethnic cuisines are heavily vegetarian, such as Indian. I make a dal that is one if my kids' favorite meals. I also make from scratch Mac and cheese. I make the white sauce with skin milk and keep an eye on the amount of cheese I put in.

You could do black bean and corn quesadillas. We heat up a can of black beans, a can of corn, a couple tablespoons of salsa, and a little bit of brown sugar. You could also do meatless pasta shells with just a ricotta cheese mixture, and a tomato based sauce.

I make this with chicken, but you could leave that out:
spaghetti PLUS red/orange/yellow peppers sliced thin PLUS a can of diced tomatoes with italian seasoning PLUS some cilatntro PLUS chopped peanuts, tossed together while the pasta is warm, but served cold.

Portobello burgers w/melted provolone or mozzarella. I load mine up with all the regular hamburger fixings. I like to marinate them in balsamic.
Portobello "cheesesteak" sandwiches. I like to roast a mixture of portobello and button mushrooms with sliced onions, green and red bell peppers and sometimes a jalapeno seeded and membrane removed. Grill a hoagie roll, add a little mayo, top with veggies and melt cheese on top. Add a little shredded lettuce and sliced tomato.
Spaghetti sauce with chunky veggies in it.
Mushroom stroganoff.
Rice and bean burritos with all sorts of veggies like at Chipotle or Moe's.
Once in a while meatless nachos with beans, shredded lettuce, diced tomatoes, black olives, avocado. Black beans are great for this.
Grilled cheese with tomato soup.
Noodle soups with lots of veggies.
Egg drop soup.
Cheese (or spinach or mushroom) tortellini salads with good veggies in it.
I love mushroom and spinach quesadillas with sliced tomatoes and olives and a little sour cream (dinner tonight actually).
Sometimes we just roast all sorts of vegetables for dinner. Any assortment of cauliflower, bell peppers, onions, mushrooms, broccoli, green beans, squash, zucchini, asparagus, tomatoes, okra (doesn't get slimy), cubed sweet potatoes or red potatoes. We may each have a half of an acorn or butternut squash baked with a little butter and sprinkle of brown sugar.
Spaghetti squash with marinara or olive oil and herbs or any spaghetti type sauce is good.
"Fried" egg sandwiches or egg salad sandwiches with sweet potato fries or zucchini chips. Or oven "fried" pickles.
I make taco salad without meat all of the time. I just just mix taco seasoning in sour cream for the taco flavor.
Layered bean tostadas with beans, cheese, shredded lettuce, tomatoes, onion, black olives and a dab of sour cream.
Some of this may seem too carby or fatty but you can control that.
We love all sorts of salads. Make them different so they don't seem like the same old thing. Add nuts and fruit or eggs.
