I'm eating alone again tonight and really don't want to put any effort into it. I think I'll have my standby of Kraft blue box mac and cheese. I'll eat the broccoli left from last night with it so I can pretend it's healthy What are you having?

I have a batch of chicken breasts in the crockpot with buffalo sauce. I'll shred that to make Buffalo Chicken Bowls. (Brown rice, shredded chicken, black beans, avocado and probably lettuce.) I'll just do fresh veggies on the side.

I'm so happy that dh is craving Chinese food tonight so we are getting take-out and I don't have to cook He has a bunch of stuff to do today so no idea when we will eat ... I'm going to pick up wine though

I don't remember what we had on 8/21, but tonight we are having the teriyaki beef over rice that we were supposed to have last night. I might also roast some broccoli that I bought today.

Chicken lickin' good pork chops are in the crock pot and we'll be having homemade harvard beets (pulled the last jar from the freezer!) and steamed rice. Probably peaches for dessert.

Something my husband makes tonight, hopefully! He's a much better cook than I am (he likes fancy stuff, I'm more of a meat potatoes person) and he taught me everything I know.

I've had beef stew bubbling in the crockpot all day, so the house smells fantastic! A loaf of French bread is rising on the counter and will go in the oven soon. Love stew and fresh bread!

But tonight 8/29, I'm thinking meatloaf with mashed potatoes. But that could change. I actually HATE meatloaf with a passion. Growing up we were poor and ground beef was cheap when I was a kid, like $0.99/lbs cheap, so we ate it a lot. But DH loves meatloaf, so I make it every so often.

I'm back to the old standard of corn tomato salad and green beans. Today's corn is non- gmo, and I'm anxious to see if I can tell. We went to a town about an hour away, and discovered an authentic Japanese restaurant. The food was fantastic! We really don't need much dinner.

It's cold and rainy tonight, so before it gets back into the 90s, I'm making homemade zuppa toscana (which SO says is better than olive garden's) and breadsticks.

Meatloaf is one of those things that sounds good, but just is not. I make it about once every two years when I forget that we don't like it or convince myself that we will look it this time! I have company tonight...my friend is taking her little boy to see a monster truck rally near my house and her 14 year old would "rather die a thousand deaths" than to be seen there, so she dropped her off at my house for a few hours.
The Ravens are playing tonight so I think we will order a pizza and watch the game.

We're having peel-and-eat shrimp (they're huge!), rice pilaf, and corn souffle. The 14 y/o is on this kick for corn souffle lately. But it's vegetable and he make the casserole himself, so hey... corn souffle it is.

Was going to make manicotti but the store was completely out of manicotti pasta, so I got jumbo shells and was going to stuff those. However, my patience is nowhere to be found so I just mixed the shells with my ricotta mixture, dumped a jar of Classico on top and threw it in the oven. Am waiting for it as I type this. I was also going to make garlic bread but I don't have the patience for that either. We should have gone out!

My regular grocery store doesn't always have manicotti, so I grabbed it from the Italian market today while I was out. I don't cook the manicotti, just stuff and bake!

DH said it's too hot to turn on the oven for a hour, so to use up the ground beef we're having taco salad instead. YES! Crushed tortilla chips, seasoned ground beef, black beans, lettuce, salsa, avo and sour cream. With sliced sliced melon.

DD just rang to ask if her boyfriend can come over for dinner, so I need to make sure I have a lot of food! I think I'm going to do a slow cooked roast lamb with roast vegies (potato, pumpkin, parsnip) plus cauliflower and broccoli with cheese sauce. It's been a while since I've had a big roast dinner.
