I took a chicken breast out of the freezer and plan to pound it out and roll it up with Swiss cheese and Canadian bacon, bread it with panko and bake it. I'm going to toast some almonds and make a rice pilaf with last night's leftover rice to have with it. I may have homemade peach ice cream for dessert What are you eating today? ETA: My plans just changed. A friend invited me over for a roast pork dinner! Who could refuse that? I guess I'll have the chicken and rice tomorrow night.

Your chicken sounds good! We've just got back from lunch with friends at their house so we've had roast lamb today. I have some smoked salmon in the fridge so I think we'll have that for supper later. No cooking for me today - yippee!!

We managed a trip to the grocery store this morning and I can taste again! We're grilling sirloin steaks. No idea what we'll have for sides...maybe potatoes and broccoli or cauliflower.

Heading to a BBQ/Swim party, we're taking dessert. For once, I wasn't the one cooking everything. Dh is making watermelon sorbet and the boys made fruit salad, chocolate dipped strawberries and blueberry yogurt cake. OK, I did assist the kids with some of it, but even so, it was nice to not be the only one stood in the kitchen for hours. The best part, it's not even 10am and the work is done!

It's gonna be hotter than hell here today, so again no cooking inside or grilling outside, lol.
The plan is Texas Roadhouse for dinner. We'll still celebrate the last weekend of summer with some BBQ, we're just not cooking it!
I absolutely love their ribs. They are consistently awesome and tender and fall off the bone. I usually get mine with very little sauce and just a side salad. Yum!

I can't think about this right now. The best I can come up with is I'm going through the fridge and making a chopped salad from all the odds and ends in there. There's also lots of chicken & veggie soup left from yesterday. I'm taking a chicken out of the freezer to roast for tomorrow, but then that's practically a guarantee my sister will invite me over for a BBQ instead.

I am going to a fantasy football draft this evening so I will expect to eat lots of finger foods. If the food is limited I will probably stop for a burrito on the way home.

So I have probably a dumb question about pounding chicken. How do you pound it out without flesh flying everywhere? Do you put something on top? When I try that the stuff on top gets pounded into the chicken? Maybe I'm pounding too hard?

I use Press and Seal which is thicker than most ... you could use a gallon plastic bag as well ... then pound it with your mallet ... no mess!

I'm roasting a chicken today. I'll decide on sides when the time comes to fix them and I see what's left in the fridge/freezer. I desperately need to go grocery shopping, I've put it off for as long as I could.

I use waxed paper and the side of my wooden rolling pin. I have also used my smaller cast iron pan to pound larger pieces.
We just got back from a big Sunday lunch at my in-laws. She did a pork roast with chutney & Dijon mustard along with potato casserole, broccoli casserole, and corn on the cob. Cheesecake for dessert. So tonight will be something light and easy!

Lots of steaks apparently on the menu today - yum . We're having pulled pork tacos, from the pork my husband smoked last week. It's so easy to throw it frozen in the roaster in the morning, and have it falling apart by the afternoon. It smells great too!

I've got an almost 3 lb tri-tip roast marinating which I will slow roast in a 275* oven for a few hours after 15 minutes at 425*. Yummy for dinner and yummier for sandwiches tomorrow for lunch! Throw in a fruit salad and some broccoli and I call that dinner!

We're off to an annual BBQ at a friends today. So tri-tip, chicken, garlic bread, green salad, mac salad, beans, etc. I'm taking my usual trays of cookies.

But you have to get ALL the air out and put the zip part facing AWAY from you. Or you can just use plastic wrap. That's why I use non-Ziplock bags. No mess, no fuss and the chicken parts don't get near the opening.

I've got a pork roast in the crock pot with some potatoes, onions and carrots. Too hot to bake bread so I had my husband pick some up at Costco. One of the few meals everyone in the family will eat.

I needed to use more of the dark pumpernickel bread I bought for the Reuben sandwich I had last night while watching SEC college football so I made chicken salad with pecans and dried cranberries and had another sandwich.

We've been invited over to some friends' house for something different tonight - a waffle bar! Everyone is supposed to bring a topping, so I've made butter pecan. I've also made a bacon and kale quiche to share. Some people are bringing bacon, sausage, that kind of thing. I think there will be about 20 people there.
I'm really looking forward to it!
