We had a teacher's appreciation breakfast after church today so I'm still full from that. I'm getting ready to bake some strawberry rhubarb muffins for my Mom, the muffin lover My grandsons are going with me later to deliver them and we're planning on bringing her at treat from the DQ. I think she likes ice cream better than muffins I haven't a clue what I'll have for dinner if I even feel like having it later. What are you planning tonight?

I think I'm going to try a new recipe for bacon cauliflower cheddar chowder ~ a low-carb replacement for a less-healthy potato soup I'm craving as the temps begin to cool.

Ds' baseball game starts at 4, and is a full nine inning game (hs aged baseball plays seven normally, and fall ball is often two six inning games. Ours is one nine inning game). We might stop for Five Guys afterwards. Ds has an anatomy/physiology test to study for.

I'm making moussaka. I found some tiny eggplants yesterday and figured this was my last chance for 2015. I have most of it prepped including some end of season green beans.

I'm making homemade alfredo sauce to toss with grilled chicken, bowtie pasta and broccoli. And I made homemade garlic bread. And an apple cake w/caramel drizzle.

We had roast pork dinner followed by homemade cherry roulade - from my course a few weeks ago.
My hubby cooked as my hand is out of action for two weeks, my mum, sister and brother in law were here for lunch today - he did a great job

Tonight is one of those nights where I cook something that dh and I like ... aka food with flavour Dh suggested beef stew with baking powder biscuits and I said "YES!!!" The dd's can fend for themselves because they don't like anything

I made some American goulash this morning that's supposed to taste better after it sits in the fridge overnight. I figured 7 hrs or so is better than none, so we shall see, but it sure smelled good as it simmered. I think we'll have some biscuits with when I reheat it for dinner.

I'm going to Brandy's house...she's only an hour or so away and her dinner sounds awesome!!!
In reality we ate grilled burgers a little while ago. I haven't felt great all day. I just put a pan of boxed brownies in the oven because chocolate always makes things better.

I am waiting for out temps to cool as I would love soup. I can't do soup when it is 80 degrees or more which is what it still is here.

It's a tomato-based ground beef, macaroni, seasonings stew-type dish. It's kind of a classic comfort food with several different variations and names, including American chop-suey, slop - depending on what part of the country you're from. It's good.

And an apple cake w/caramel drizzle. would you share the sauce recipe, I have yet to find one I like Ummm, I loosely followed Pioneer Woman's recipe. I made a double batch so we could get several lunches plus another dinner out of it. Here's PW's recipe...I used chicken stock (not wine) and I used all light cream instead of the half & half & heavy cream. I also grilled my chicken instead of pan frying it. And I used grated parm, not shredded. 12 ounces, weight Bowtie Pasta (farfalle) 4 Tablespoons Butter 2 whole Boneless, Skinless Chicken Breasts Salt And Pepper, to taste 2 cloves Garlic, Minced 3/4 cups Dry White Wine (may Substitute Low-sodium Chicken Broth) 1/2 cup Half-and-half 3 Tablespoons Heavy Cream Low Sodium Chicken Broth, As Needed For Thinning 3/4 cups Parmesan Shavings Or Grated Parmesan 2 Tablespoons Fresh Parsley, Minced INSTRUCTIONS Cook pasta according to package directions. Drain and set aside. Salt and pepper both sides of the chicken breasts. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken breasts and cook until deep golden brown on both sides and done in the middle. Remove from the skillet, slice into thin strips, and set aside. Add additional 2 tablespoons of butter to the skillet, followed by the minced garlic. Stir the garlic around the pan to avoid burning, and cook for 1 minute. Pour in wine (or broth), then let it bubble up and reduce for 1 1/2 to 2 minutes. Add half-and-half, cream, and extra salt and pepper, whisking constantly until it's all combined. Allow liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth. When the sauce looks good, remove it from the heat. Add Parmesan to the pan, then throw the hot pasta right on top of it. Toss it a bit. Add the chicken and continue tossing until it's all combined. Again, if it gets too gloopy, splash in a little broth (you may return the pan to low heat if it needs it.) Taste it, adjust seasonings, and top with minced parsley and extra Parmesan. Serve immediately!
