Here's the rules: we have to do it on a major budget ($20 or less), I don't like fish, and he despises tomato sauce. We don't care if it's healthy or not as long as it's delicious. We're hoping to stay away from our usual tacos, spaghetti, meatloaf, etc. cheap dinners that we're burned out on.
Any suggestions?

We're having grilled cheese sandwiches for dinner tonight. Doesn't get much easier or cheaper than that.

stuffed squash if you don't want to do the pepper route. Just bake it a little longer. You could even use leftover meat like cubed ham.

This Korean Beef dish is a favorite of a lot of people here on this board, myself included. It is CHEAP and it is QUICK so fits your criteria. Normally I'm not a fan of ground beef, my spoiled taste buds can't bare to eat ground beef more than once a month. But I do like this dish. ETA: Link fixed.

This Sticky Chicken is another one that is cheap, quick and low calorie. Only 4 ingredients: chicken thigh, sweet chilli sauce, soy sauce and peanut butter. Oh, and coriander (cilantro) to serve.

Instead of tacos, I make quesadillas. Get a fried chicken breast from the deli. Remove the skin, take off the chicken. You should be able to peel it into shreds. Saute onions and peppers; once they're done, add the chicken in and heat through. Sprinkle with some taco seasoning and a little bit of water to get a little sauce. To make a quesadilla, spray your frying pan with cooking spray. Put a flour tortilla in. Put some chicken/veg on half. Sprinkled shredded cheese on top of the half. Fold the other half over. Cook til golden brown. Spritz the top with some cooking spray and flip to cook the other side. Serve with salsa/sour cream, etc., and a side of Yvonne's mexican rice. I really like this skillet chicken and spring vegetables. I use yellow squash, corn I've cut off the cob, pea pods, and asparagus as the veg (and broth instead of wine). This is a tasty crockpot chili: Chicken Taco Chili. I use the "make your own taco seasoning" and it isn't overly taco-tasting. We like it on baked potatoes (I put avocado on mine). I like pork carnitas in the crock pot as well. The pork roast can get a little pricey, though. I try to get it on sale and then I can put half of it in the freezer for next time. (Two people don't need four pounds of pork anyhow.) Tip: double the spices (everything except the salt), and cut the pork into pieces so you can cover more area with the spice rub. (I also cut way back on cumin because I hate it.) I do usually use the carnitas first in lieu of taco meat, but next time I make it, I am going to use some of the leftovers to make a BBQ pork pizza. Do you guys like Chinese food? See if your grocery store has InnovAsianmeals. I like the general tso's (spicy) and garlic chicken. I usually doctor them up. I bake the chicken in the oven as directed, and then once it's done, instead of adding the sauce, I start a skillet where I stirfry up some vegetables, then add the chicken, then the sauce. (Or sometimes with the general tso's, I just serve with steamed broccoli.) I also buy some potstickers and microwave those up (or trader joe's has mini chicken cilantro wontons that are delicious). If your DH despises tomato sauce, what does he eat on spaghetti night?

If your DH despises tomato sauce, what does he eat on spaghetti night? He'll eat my spaghetti sauce if it's all meat and arrabiatta style. He just doesn't like stuff heavy on tomato sauce, like some pizzas, lasagna, chicken parm, etc.

I'm just marking my spot because our quick and cheap is burritos, omelets, or grilled cheese and tomato soup.

Is it $20 for the meal? Or a different period of time?
Because I can make two or three meals with $20...
We have several meals a week that are meatless-black beans and rice is an all time favorite around here. One adult, two teenage boys can be fed for probably about $5 for the whole meal. Homemade mac/cheese is made often along with a vegetable, pasta primavera (no red sauce-combo milk/chicken broth) and loaded baked potatoes are also requested meals.
The meat is the big ticket item for most meals, a couple of meatless meals a week will really cut your food budget.

I need to save this thread. Thanks OP for starting it! I don't eat beef but need quick, easy, and cheap. I tend to eat a veggie and protein for dinner but still have to make something more filling for everyone else. I love the crock pot too, especially when it's 9/20 and still 105 degrees at dinnertime. We'll be trying that Sticky Chicken and some of the other suggestions. One super easy dinner I do is chicken in the crock pot with a bottle of Sweet Baby Ray's BBQ sauce. That's it. Some rice or potatoes and broccoli - done! Another that I grew up with, single mom special LOL, was baked beans and brown bread with a veggie. Pretty yummy

Quick and cheap for us sometimes involves some convenience foods.
At Costco I like to get these pineapple chicken meatballs. They're Aidells brand and they're all natural. I will toss those in a pot with some teriyaki sauce and let them warm on a burner while I cook a pot of brown rice (I'm a rice cooker girl) and I will steam some broccoli and carrots. Boom done.
We will often eat a rotisserie chicken with some roasted vegetables.
We are big fans of cooking up chicken thighs in the crockpot with green salsa and shredding it to make into tacos, tostadas, enchiladas, or eat over rice.
That Korean beef someone posted earlier is terrific.
We sometimes make mini pizzas on FlatOut bread and everyone likes those because you can customize your mini pizza.

I just made a huge crock pot full of Mexican black beans. I mash some and keep some whole. The I freeze portions in Tupperware.
I use the black beans to make:
Tortilla wraps - beans, cheese, lettuce, cut peppers, and avocado.
Nachos - regular nachos with beans on top
Quesadillas - I pan fry veg and then put the veggies, beans and cheese in between two tortillas and grill or pan fry on both sides
Mexi-salad - beans and rice on the bottom, then lettuce, pan fried veg, cut veggies, salsa and cheese (like chipotle's salads!).
Those are my quickest / healthiest (because healthy is important to us) go to quick meals that are budget friendly.

The meat is a big ticket item, but this guy is a homegrown Texas country boy and won't go meatless. I used to be fine going without, but having eaten with him so long, I'm kind of the same way now.

Chicken spaghetti? Just found a yummy recipe on Pinterest and its a cheese sauce -but has rotel in it. It sounds so good I am craving it now and of course don't have the ingredients in the house now.
What about crockpot beef roasts or stew!?
Go to Pinterest. You will find much inspiration!
ETA: I just realized my suggestions don't really meet the "quick" criteria. Sorry!

Gyros, these take 10 min tops Yeah, gyros! I get the Opaa ones in the freezer section. The meat is precooked. (Look for the one that makes six sandwiches, because it comes with pita instead of flatbread!) I buy tomatoes (which I dice) and a sweet onion (sliced really thin) to put on it, just because that's how it came at a restaurant I used to go to. Serve with french fries. Yum! This is a super awesome recipe for baby back ribs if, like me, you do not know how to grill them. Baked potatoes have been one of my fill-in dinners. (Fill-in, as in, I can't decide what else to put on the menu for the week.) If I am not specifically having them with the crockpot chicken chili I posted above, then they have been ending up as ham and cheese potatoes-- I just dice up some sandwich meat and shred some cheddar cheese. I usually add green onions, too. Get a fresh take-n-bake pizza-- my grocery store's is my favorite, but I like Sam's Club's too (and theirs are huge). I can make my half spinach and mushrooms, and the other half a carnivore's heart attack. Or Papa Murphy's I think has $10 Tuesdays. I like this Baked Ziti. You can easily halve it (for two people, you should). I like it better with italian sausage. See if your grocery store carries Papa Charlie's italian beef. (It's usually in the freezer, by precooked meatballs and things.) Just thaw it in the fridge and then heat it on the stove, then make sandwiches (provolone or mozzarella cheese) and toast under the broiler. I like to cook up green peppers, onions, and a banana pepper to put on mine. In the winter, I will make a version of Olive Garden's zuppa toscana. (It's a good use for the other half of the pound of italian sausage you're going to buy for the baked ziti.) You don't like fish but do you like shrimp? Baked Coconut Shrimp. If you want a pina colada sauce, mix some yoplait coconut greek yogurt with sour cream and some finely diced fresh pineapple. (There's a recipe for making it with coconut cream, like you'd use in an actual pina colada, but that stuff is like $5. A carton of yogurt is $1.) Serve with some type of cheddar biscuit, a salad, and other side of your choice. Watch for sales on the shrimp--get it frozen but raw. I can often get a 2-lb bag on sale for about $12. They thaw quickly in the sink. Also, yes to the korean beef! ( Ryann, here is a link, I hope.)
