Happy Thursday. Is it just my imagination or is this week flying by?
Tonight I'm really going to make the chicken sautee I keep promising to make. Last night ended up being Tacos. Since I'm a nice mom I'll make my homemade mac and cheese for the child who really hates the chicken sautee. I don't short order cook often, but I will do it for this dish.
What's on your menu tonight?

I don't even know if I'm going to tae kwon do or not, and if not, I might be going out for dinner. If I'm home, I guess it will be night #2 of chicken broccoli cheddar soup, which btw was delish. ETA I did have to give half of it to my neighbor, though. Because lactose intolerance. Not that that's keeping me from eating it, but there are limits.

Ds 1 and his dad are going to the Cardinal's football game tonight. Go Cards!
So it's just me and ds 2. That means I will probably take him out somewhere quick. He will want pizza. I will not. On the other hand, I do have coupons for the create-your-own place that I like. So that could be an option.

If it's your imagination, then mine is in on it too. Each day seemed a few hours too short for me to accomplish everything I wanted to accomplish that day and now it's Thursday already. *sigh*
I'm trying to get done all the things from today's and previous day's to-do lists, so I took some sausage spaghetti sauce out of the freezer and will cook some pasta and serve it with roasted broccoli, cauliflower, and carrots, whatever fruit I can find, rolls, and dessert to be determined.

For some reason I ordered 3 lettuce from the CSA, so tonight we need to start eating them before they turn limp and lifeless. So....we're having flank steak and black bean salad. As of right now the only other salad-type food I can think of that I have in the fridge are carrots and celery. Fingers crossed I can dig up way more than that. Hmmmm, I do have kale too.....

I am picking my daughter up from school early for a doctor appointment in Anchorage. We will do a little Christmas shopping afterwards. She is DYING to try Panda Express that just recently opened in Anchorage. So I guess that's what for dinner!!
Last night I made Pioneer Woman's red and green stuffed shells. They were delicious!!! The first thing my husband said was Where's the meat?" Men!

DH requested beef stroganoff, so that's what we're having. I'll serve it over brown rice quinoa noodles, which surprisingly are hard to distinguish from regular pasta noodles.

MIL has been in the hospital for months after a brain tumor removal ... we take her out on day trips from time to time and tonight we're taking her out for dinner It's up to her where we go so I have no idea what I'll be eating but hopefully a glass of wine will be involved

DS was released from the hospital on Tues and I took him to the doctors yesterday to follow up and his dr looked at me and could tell I wasn't feeling well. He tested me for strep while I was there and it was positive. Ugh.
So, DS and I are both recuperating and chicken soup is just what I need to feel better.

I have a recipe for Butternut Chili, which I got from Adventures in Cooking. Besides butternut squash, it calls for pork sausage, vegetable stock, tomato paste, cumin, chili, turmeric, kidney and cannellini beans. It's not a crock pot recipe but I'm going to cook it in the crock pot on high.

We went to Olive Garden. I had cheese ravioli with a glass of sangria. DH had eggplant parmigiana. It was all good plus I brought some ravioli home for lunch tomorrow. We had been out Christmas shopping for ourselves. We had grown checks in three different states so we send a check with their Christmas card. Makes life easy since we don't know what the kids have or have not.
