I saw a stuffed fajita chicken recipe on fb earlier. Sauté peppers and onions, add cream cheese, pepper jack and cheddar, stuff into chicken breast rubbed with fajita seasoning.
It looks soooo good.

I have a couple of cookbooks at home dedicated to Philadelphia Cream Cheese. The Philly website has hundreds of recipes. I could spend hours going through them! I use a whole tub (same size as a block) of cream cheese in my pumpkin soup. I usually use light so I don't feel quite so guilty, but if I had a block of full fat that had to be used I would happily chuck that in.

Pretzel Salad! (okay, really a dessert but of course if you call it salad you can eat more without guilt).
I don't have the recipe in front of me but if you google, you'll find lots. Basically, bottom layer crushed pretzels/sugar/butter. Second layer 8 ounces cream cheese/whipped topping. Last layer jello/fruit (I used strawberry jello/fresh strawberries at Easter).
It's a combination of salty and sweet. Too simple and too good!

My grandma always makes her "cheesecake" which is a graham cracker crust, a filling which is whipped cream, powdered sugar to taste, and a brick of cream cheese. Then too with cherry pie filling, or any kind you like really. I like lemon curd on top.

One of my favs is to whip the cream cheese with brown sugar to taste, then add some vanilla. then I dip apple slices in it. Sometimes I cut back the brown sugar and use some caramel sauce in it. Hot dang, it is good!!

I'd make a cheeseball with it instead of dessert. Dh & the kids will snack on cheese and crackers over a dessert any day.
Add in some shredded cheddar cheese, finely cut up some slices of ham luncheon meat, add Hidden valley ranch seasoning (I use less than a full packet because I find it too salty), form a ball and roll it in more chopped ham luncheon meat. Wrap in plastic wrap and refrigerate for a couple of hours. Serve on buttery crackers.

Meg, was the stuffing enough for 4 breasts instead of only 3? I have a family of 4 and would need to make at least 4 - although with 2 teen boys, one who has literally been growing 1/2 inch per month this year, I could probably just double it and make 6 and maybe have enough left for my lunch the next day.

Yes the filling is definitely enough for 4. I have a quarter of it left over, I am going to mix some shredded chicken through it and use for wraps for lunch tomorrow. And the chicken breasts that I used were a decent size too. Which reminds me, I had to cook them for longer than the 5 minutes per side recommended in the recipe.

There's a Jello dessert -- lime jello, boiling water, brick of cream cheese while the jello is still hot. Smash the cheese and break it up with a fork. Then add the cold water that the regular Jello instructions ask for. Add crushed pineapple and pecans, stir it up, pour it into a 9x13 glass dish, and chill. Stir it every 20-25 minutes while it's setting so that the cheese doesn't all float up to the top. It's really, really good, and not a super-sweet dessert!

I'd make potato chowder. It uses 8oz of cream cheese. You could freeze it instead, depending on what you wanted to do with it later. The texture would be a little different but it would taste fine.

Loved that stuff. I have not had it in years, since she passed away, I haven't tried to make it. I should do that now, since I have 2 blocks of cream cheese I need to use!

I can't link it now but check out Cream Cheese Squares on allrecipes.com. it's crescent rolls, cream cheese, butter and cinnamon. Substitute butter for the margarine in the recipe, OMG, they are delicious!

Ok Gale, I'm sorry to continue the derailment . . . but I have to share my favorite dip using cream cheese.
Block of softened cream cheese on the bottom of dish Drain can of rotel and can of black beans and layer across cream cheese Top with lots of grated colby jack
Bake in oven until colby jack is very melty and serve with tortilla or pita chips. And it is amazing reheated as well.

8 oz cream cheese, softened 1/3 cup lemon juice 1 tsp. Vanilla 1 can Eagle Brand sweetened condensed milk
Beat together and pour into graham cracker pie crust. Chill. Top with 1 can cherry pie filling. Enjoy.
