We had a couple of hogs butchered and all I have left is sausage! I'm using the last roast today and I have one package of pork chops left but the rest is sausage...and lots of it! We eat breakfast for supper about once every other week. I've used it in meatloaf but we aren't as fond of that. I do use it for meat in spaghetti but I need some other ideas. Care to share your favorites?

I recently made Egg Roll in a Bowl (several recipes on pinterest) and it was good! I also often make sausage lentil soup and occasionally use sausage in chili.

I found a sausage roll recipe from our church cookbook that we like. Brown a roll of sausage and then stir in a block of cream cheese (can use low fat). Then take half of your meat/cheese and spread it onto a sheet of crescent roll dough (press out the seams or buy the sheets if you find them). Roll it up like you are making cinnamon rolls and refrigerate to get it "firm" then cut into slices. Repeat with the other half of your meat. Lay them flat on a cookie sheet and bake at 350 until the dough is lightly browned. We like them for appetizers or brunch. They freeze well too and are easy to reheat a couple for a quick breakfast on the go.

We also brown sausage and use it when we do a baked potato bar for dinner to add in a protein besides cheese.

I would make tortillini soup. The stuffing of the tortilini is a sausage/onion mixture. Then you cook it in a homemade meat broth. OMG, so yummy!

I learned it from a Pampered Chef recipe book but saw this one on-line: link We don't do any veggies in it. Depending on how your sausage is flavored, I might spice it different. We make "breakfast cups" on weekends which is just sausage crumbled in a muffin pan with cheese and whisked eggs on top. Lots and lots of different versions on pinterest of that one.

Did you save any of the stomachs? You could make Stuffed Pig Stomach. This recipe is pretty much how my mom makes it but she doesn't add the flour and coriander. Stuffed Pig Stomach

This sounds like a weird combo, but Rachel Ray made sausage/broccoli stir fry and added it to pasta with Parmesan. I simplified her version, it's one of our favorite easy dinners

This is a guilty, guilty pleasure, but we occasionally make toasted sausage and cheese sandwiches. This is best with spicy sausage.
You take a loaf of french bread and dig out the center. Brown a pound of sausage. Mix the sausage, cheddar cheese, and about half of the bread you dug out together and then stuff the loaf of French bread. Top with more cheese if you are feeling brave. Bake at 350 for about 10 minutes.

What you call "ground beef" we call "beef mince", so I was wondering whether "ground sausage" is what we call "sausage mince." After googling, I came across a website called Yanks Downunder , and according to the "Yanks" on the site, American-style breakfast sausage is nearly impossible to find in Australia. In Australia "sausage rolls" are very popular - they're served at pretty much every kids (and adults) birthday party. I'm not sure whether they are common in the US, I've never seen them mentioned. They look like this: There are lots of variations. The most common recipe is sausage mince mixed with either beef/pork/chicken mince, breadcrumbs, herbs & spices and (in order to appear a bit more healthy) some grated carrot and maybe even zucchini. I usually add BBQ and/or sweet chilli sauce to mine. Then you lay out a sheet of puff pastry, cut it in half, then put a length of the sausage mix down the centre of the puff pastry. Roll it up to enclose the filling, cut into about 6 little rolls, and brush with an egg wash then sprinkle with sesame seeds or poppy seeds. Cook for about 25-30 minutes in a moderate oven. Serve with tomato sauce (ketchup). There are about a gazillion recipes for sausage rolls, each claiming to be the "best ever"!!!

I use it in a soup with gnocchi, spinach/kale, squash and whatever else you feel like having. It is based off of a Olive Garden recipe I think, something like Toscana soup, but I just use veggie broth and ad way more veggies. I actually like to crumbled the sausage into little balls. I usually have enough soup to freeze!
