So...my nephew, his wife, and 2 youngest kids (8 and 10) are coming for dinner tomorrow - surprise! They're actually coming to visit with my MIL but they're arriving at our dinnertime so...I'll need to feed them.
Looking for easy, kid-friendly, and low-carb (diabetic friendly) ideas. There will be 9 of us total - MIL (diabetic), Dh and I (both diabetic), my 16 y/o and my 9 y/o (picky) and the 4 of them.
What I had planned for dinner won't stretch - spiced country style ribs, corn on the cob, and broccoli. My kids like it (except the broccoli) but I have no idea if my grand-nieces would.
I'm drawing a blank...

"Hey, nephew, I hear you're visiting with grandma and will be over at my house for dinner. How fun! I am making ribs and corn and broccoli-- will your girls eat that or is there something else I should grill up with the ribs?"
That, or just grab some extra ribs and corn, and add a salad, and a box of kraft mac n cheese. You and DH and MIL don't have to eat the macaroni, but I bet the girls will eat it even if they don't want ribs or corn or salad. Or you could grab a pack of hot dogs.
I don't really see a need to deviate much from what you have already planned.

I'm envious that you can eat BBQ sauce and corn in the same meal! I'd run high for days.
I've found tacos are popular with a picky crowd. People can pick and choose what to eat and I buy some good low carb tortillas. Add some rice for something bland for picky eaters. Lots of lettuce, chips, salsa, guac, and I'd probably do shredded pork and shredded chicken just to add more choices.

I would prepare the meal as planned. It would be easy enough to make enough for everyone. Plus, make some mac and cheese. Most kids like mac & cheese.

I would just pick up more corn and ribs! You could BBQ hamburgers instead. Kids always love those.

Add some chicken or hot dogs to the ribs on the grill, pick up some more corn and broccoli and a bag of chips and call it good. Honestly, all of the dietary issues seem to be on your end, and you have that covered.

I'd pick up some extra ribs, broccoli and corn, add some hot dogs, buns and a couple boxes of mac and cheese. Possibly get a watermelon or cantaloupe and call it good.
OR add sloppy joes instead of hot dogs. Easy enough and most kids love them.

Thanks all - I'm not grilling the ribs - they're boneless and we cut them up and they're made on the stovetop...fiddley and a bit time-consuming and my skillet isn't big enough to make a double batch at once (and they take about 1.5hr so not really practical to make two single batches). So we'll make those tomorrow. We also don't have a bbq grill (nor do I know how to grill) and it's WAY too hot to be outside anyway. I'm envious that you can eat BBQ sauce and corn in the same meal! I'd run high for days. no bbq sauce in my ribs recipe (it's all spices and beef broth) or yeah - there would be no corn. I only eat a little of the corn anyway but I'm sure you noticed the lack of potatoes it's definitely corn OR potatoes (and not much of either). We're going with pulled chicken (I'll have buns but won't have one myself), coleslaw, baked beans, and potato chips (for the kids) and I'll put out some raw veggies and dressing for dipping (I have broccoli, cucumber, baby tomatoes, and carrots)

I'd be asking the nephew... And I'm sure he would have been fine picking up pizza (he manages a pizza shop) but while my kids would have been thrilled, MIL, DH, and I can't really eat pizza and I'm not comfortable asking him to bring something that would work for us. I'm fine feeding them - I was just drawing a blank on ideas
