I think those will keep 3 days if you have refrigerations; iffy on the cooler. But I think your main problem is the cookies are going to end up soggy after 3 days.

eBay recipe? Haven't seen that before! Honestly, I think they would get runny...maybe look for another type of recipe without Cool Whip.

Cookies will be soggy. Can you make the filling and then put them together when it's time to eat them?

The cookies will take less then 3 days to become soft. How about bringing the cookies and bringing the mixture. Let everyone top their own cookie.

If it were me I would choose to make something that can be kept at room temp unless you have a fridge available.
I would rather eat a cookie that I can trust than something fancy looking that makes me wonder with every bite.

The cookies will get soggy in that amount of time. I make a pie with a similar cream cheese and Cool Whip layer and unless it's a potluck where it gets wolfed down in one day, the crust does get soggy.
I would probably go with a dessert I could make there, or something more shelf stable like brownies, bars or cookies.

IF I were going to take them on a camping trip I'd take the ingredients to make them the day I plan to serve them. Frozen cool whip and cream cheese will travel better as individual ingredients than as a mixture. You could measure out the sugar at home so you are only taking the amount you need for the recipe. A small hand mixer will make quick work of beating it all together. Save
