Fair warning: I am going to poke around to see if I can find out why our pal KelleeM has left us, but if my CSI skills don't yield anything, I'll be back here to ask. This does NOT mean that I am going to stalk her in real life! I am just hoping she's simply taking a break and wasn't made to feel that she had to leave. As for dinner, it's the ever popular, never healthy Hamburger Helper here tonite!

I just spent the last however many days eating like a pig at the trough. OMG. And the icing on the cake was the place we found yesterday-half bar, half restaurant, plastic chairs, slightly seedy kind of hole in the wall that the single best grouper sandwich that I have ever had. I am the queen of grouper sandwiches-I eat them everywhere and have for years. This thing was perfection on a bun. And the sweet tea was like nectar in a glass. *swoon* I had mine fried, my brother had his blackened and my mom had hers grilled and all of us said the same thing. (We eat a lot of fish and for all of us to agree is the sign of something special...) Anyway, all that to say I need to settle down a bit. So I will likely eat something really light tonight, but who knows what that will be. I should really start thinking about it but...you know what? It's my birthday and I don't really want to cook.

Happy birthday, anxiousmom . And of course you shouldn't have to cook! Thank you! I am stretching out my birthday and oddly enough, tonight isn't one of the celebration nights. The boy offered to take me out to dinner, but we decided a movie 'date' would be more fun and will be going on Saturday. So tonight is just me.

We are having grilled marinated skirt steak that I first bought from Costco in June and it was so good that I went back and bought and froze 4 more. It was a limited time item. With it, the same salads from last night, plus corn on the cob. I'm going to try to have corn at least 4 times this week and see if my family objects! Corn season is really short here and it is one of my absolute favorite things.

anxiousmom, happy birthday. Wishing you a great year ahead. 50's rock. At 50 a certain confidence appears and you really learn to let a lot of bs in your life go. I'm telling you, you'll love being in your 50's. tiffanytwisted, I got the feeling that Kelleem was a bit skeeved out by what happened w/Carblover, but I also think that she is very busy right now. I wish her well and look forward to seeing her, again.

On reconsideration, it IS going to be the coolest day (relatively speaking) day of the week here. I want soup. I have chicken, stock, a head of cabbage I want to use, and lots more veggies. I'm making soup!

Happy Birthday, anxiousmom! Hope you're having a great day! I'm also sad that recent events have caused some of our members to leave our happy little group. I hope they come back. As for dinner? Not a clue... I'm still glowing from my cheesecake success yesterday so we'll probably just have some soup or something from the freezer.

DH is having left over pizza from the other night, I won't eat it because it's the part with hot peppers on it.
So I will use up some of the left over bacon from last night and have bacon and eggs. I don't often get to have breakfast for dinner.

Tonight we're having a burrito bowl bar/buffet: -- cilantro lime rice (instant pot) -- pork carnitas (instant pot, cooked yesterday) -- elaine 's Mexican black beans (instant pot, cooked yesterday) -- shredded taco chicken (instant pot, cooked a couple days ago) -- sautéed peppers and onions (instant pot, cooked yesterday) -- roasted corn salsa (from the grocery store deli) -- fresh-made pico de gallo (from the grocery store deli) dessert: fresh blackberries and tomorrow will probably be leftovers of the same, in some fashion, lol!! eta: I really like being able to cook without risking making a mess on the stovetop, and without things having to take an hour or more to get ready!

Happy Birthday, anxiousmom!
Tonight I made meatloaf in the Instant Pot and was very happy with the way it came out - and it was so easy!!!! Loved it, and so did my husband.

I am making chicken enchiladas. I was even smart enough to plan ahead and cook the meat in the crockpot last night so it's all nice and shredded now.

This is a very bad Fibro day for me and I am hurting so bad, I am gritting my teeth. So we are having the leftover baked pasta casserole I made for lunch on Saturday with a bagged salad and sweet onion vinaigrette. If you are in my house and don't want it, you know where all the take out places are! I'm sorry you are hurting! You do have a good dinner planned despite it. I've been under so much stress for the last couple of months. I'm paying for it from many sides, including the Fibro. Dh is working second shift. So, we are eating whatever we want to grab. After cleaning the blackberries and portioning out what I needed for a pie, I had enough berries leftover for a small bowl and topped with milk and a sprinkle of sugar. The boy didn't want it. So, it was my side to 1/2 a PB sandwich. No jelly, just PB. Need to pick some up tomorrow. The boy chose a Hot Pocket, instead of a sandwich paired with chips and some cherries. Tomorrow, I bake the pie. I simply don't have it in me today.

I would rather eat dessert w/you, though. I think you must be great fun IRL.

Though our beloved akathy is our true thread mama, I feel like the thread stepmom. So, if anymore peas leave our family I'm gonna start sending peas to their rooms w/o supper! MsKnit, take it very easy. I'm sorry that you're going through stress and pain. It's OK to call it a day and rest.
