Still trying to clean out odds and ends in the freezer - tonight we're going with chicken and veggie stir fry w/white rice - maybe a small salad too.

It's Friday night, so it's pizza night. Whoop, whoop! So you know how my mom left yesterday? Well, her train hit a car on the tracks just north of Atlanta last night. The occupants of the car ran for their lives, the engineer was able to slow down enough that the last few train cars didn't even realize there was an impact, and no one was injured as far as she could tell. They were delayed about 3 hours while everything got cleaned up, so while it was inconvenient, we're just thankful she and the other passengers are okay. How's that for a memorable end to a great vacation? Holy cow!! What a story to tell later!! I'm glad to hear the end result wasn't as awful as it could have been! KelleeM tell your grandson he will do great and that if my part sloth son made it through basic with flying colors, he will do amazing. I had my favorite Taylor Farms chopped Asian salad at about 3 this afternoon. I added chicken, a whole lit more chicken than I meant to and I am stuffed so I am guessing the later snacking I planned won't happen.

Trixie Bender is there really a green bean shortage? I buy them weekly at Trader Joe's - we like the thin Haricot Verts (which always makes me laugh because it is French for green bean). Not that I'm aware of. I just had a difficult time finding a store that had them today.

Normally we go to dinner on Friday nights but I wanted to go to Cheesecake Factory and that is a MADHOUSE on Fridays. So we went for that last night. Tonight is grocery store pizza.

Love their Chicken Madeira. So yummy! I found a recipe online for it but the Madeira wine called for in the recipe costs more than buying the dish from CF ~ a LOT more!

How's that for a memorable end to a great vacation? What an ending to a nice vacation. I was in a similar train wreck. Some cars were derailed, but ours was fine. The tractor driver was instantly killed and there were some minor injuries. Thank goodness no one was injured in your mom's case.

Well, I have now become a responsible adult and put dinner in the oven ... I'm trying these chicken legs that @scrubologist posted last week, and I threw some potatoes in there to bake, too. Will steam or sauté some veggies when it's almost done. I won't eat until 8:00, but it's just me, no big deal, and I'll have leftovers for tomorrow. But the donut was pretty excellent. ETA chicken recipe was easy and delish. I'm going to try it with thighs next time.

Is it too late to be baking? Lol! I had about six pounds of apples sitting on my counter that were going to get mushy if I didn't use them soon. And since I came home with a free 5lb bag of apples today I felt the urgent need to bake! So I've been busy peeling, coring and dicing apples late tonight. I made some apple muffins for breakfast. I've got Applesauce going in the Ninja. And I'm making apple pie filling for the Apple Pie Egg Rolls I'm going to serve for tomorrow's dessert. For some reason I find Baking late at night very therapeutic.

I found it a bit salty and was short on the ginger needed which I think made a big difference in the flavor. I will give it another try with more ginger and maybe add shitake mushrooms.
