New thread here!
I haven't done much besides making turkey vegetable soup in my IP this week. Dh has been out of town, and with me being on WW, it has been easier to make something for the kids (taquitos, Pizza, etc) and have turkey soup myself for dinner. Since I got 5 quarts of soup out of that batch, there has been plenty.
I can't tell you how happy I am that we will be having a whole new group of peas joining us here. The more the merrier!

I'm eating steel cut oats at the moment. Looking forward to trying new things. I might get the Vegan IP book I saw on Amazon. I'm not vegan, but am always looking for new clean eating recipes.

I used 2c of water, 1c almond milk, 1c oats, 1/4c craisins, a dash of vanilla. Use manual mode 3 minutes, let the pressure release on its own. The recipe mentioned olive oil, but not how much or why or when to add, so I put in a small spoonful of coconut oil. I'm guessing it's to help with the foaminess or to help prevent sticking to the pot? It worked, in any case. Turned out perfectly! ETA in case I was unclear, I added the coconut oil before cooking, not after!

I made boiled peanuts yesterday so I had those and a beer for dinner last night. lolol. Dinner was leftover butternut squash soup that I'd made the day before, so I just had that at around 4:00 since I was hungry, then had my peanuts with dh while he ate soup. He doesn't like boiled peanuts which is just fine with me, that way I can have them all. I don't share well. hehe Tonight I'm making lasagna in the IP, hopefully two pans of it. Last time I only made the one springform pan but I'd like to have more leftovers this time. I also made steel cut oats this morning, enough for three days, so breakfast is taken care of for the rest of the week.

Thanks for making the new thread! I got an Instant Pot and an Air Fryer the same week. Things are exciting and NEW in my kitchen right now. LOL
I've had a stove top pressure cooker for years but the Amazon sale did me in for the Instant Pot. Used it the first time for meatloaf last night. So good!
Right now, our favorite thing in the Air Fryer is PIZZA ROLLS. LOL Takes about 6 minutes to cook a whole batch. :-)
I would love to find a home made pizza roll recipe some day. :-)

I got adventurous with the weekly pot of yogurt yesterday and added coconut extract instead of vanilla. It was delicious! I'm not much for adding fruit or other things to the yogurt...guess I like the smooth texture but I do like some variety. I'll be checking out other flavors of extract on my next trip to the grocery store.

Last night I made egg boats in silicone cups. I used ground pork I had cooked in the freezer, dried chives, dried parsley, and dried spinach. I scrambled up the eggs and dried ingredients and poured them over the ground pork in the silicone cups. I then put jarlsberg and asiago cheese on the top. I put a cup of water in the bottom and put the silicone cups on the rack. They turned out ok but would be better if I had flavored sausage instead of just the ground pork. I liked that I put them in there and cooked them without making more pans dirty or turning on the oven. It said to pressure cook for 8 minutes and let set for 3. If I do it again I will cook them for a shorter time, they seemed a tad bit rubbery for my taste.

I am having health issues and have a cat scan tomorrow afternoon and am really scared about what is wrong with me so am going to save the opening of the IP until I am done with that and can focus on cooking.

We have been having weekly/bi-weekly threads here since February, that might be more easily navigated if you start feeling overwhelmed. If you click on my name and then click on "member's recent threads" you will find them all. We try to be fairly good about responding to questions within an hour or two - there are a number of us who check this thread regularly throughout the day - so feel free to ask any question you may have.

My little pot has been sitting idle since Thanksgiving. I'm going to have to get on the ball and use her more! She's going to think I forgot about her. I've been letting the family pick the dinners and DH has been trying his hand at some new dishes (Pad See Ew and Beef in Oyster Sauce) so I'm not going to discourage him!

We finished leftovers tonight, but tomorrow I'm making Honey Sesame Chicken (the Pressure Cooking Today recipe) and I need to hard boil some eggs. I'm going through my recipes, making myself crazy trying to decide what order to make them all in Save

I made 1 pot meatloaf, potatoes, and carrots in mine tonight.
Used my regular meatloaf (which is just a "little of this, little of that" kind of mixing). Cut up potatoes and carrots into big chunks and put them in the bottom with beef broth, garlic powder, onion powder, salt, and pepper. Pulled the handle out of the lotus steamer and set it on top. Put the meatloaf "mound" on top of that. Manual high pressure for 25 minutes. Perfection.
Next time I'll do like 22 minutes so the veggies aren't so soft, but the big pieces prevented them from becoming total mush.

Quick question...I assume using the IP does not beat up the kitchen like the oven does, right? Ok, now that I write that , I think that is a pretty dumb question. We don't have AC in our new house so this will be an extra special bonus.
I ended up ordering the 220v from Amazon.uk. They were having BF deals also. Not as good as the US Amazon site, but way better than the German Amazon.

Mine just got delivered today from Monday's Amazon deal. Water test is complete. DH requested I make steel cut oats first so that's in there now (the recipe from the book that came with it.) My to-do list today just got tossed aside to play with this. Sadly, we have a ton of leftovers in the fridge that we're having tonight so I won't be making anything for dinner today. I had planned to make beef barley soup this week before DH saw the Amazon deal so I think I'll try that this weekend.

I made my almost-weekly Southern Style Green Beans in my IP as a side dish tonight. They are so easy and so good. I typically use 1/2 cup of chicken or beef broth instead of water for even more flavor.

The first thing I did was hard cook some eggs. They seem to have turned out OK, but I forgot to put one in my lunch bag today! Yesterday morning I made myself a single serving of Scottish oats, which turned out well. The honey sesame chicken was delicious, and we finished it tonight. Tomorrow I'll do some beef short ribs.

So glad you got your's. I have zero, zip, zilch, nadda, no recipes in line to make. I bow to your order! I had an overripe watermelon I cut into yesterday, not knowing it was old, and ended up with quite a bit of nice, strained pulp and juice. The taste was fine, but the texture was just Yeck. Anybody use watermelon in a recipe as a glaze for something for the InstaPot? I froze most of what I got, but I reserved a bit in the fridge and would like to use it up.

I buy ground pork and ground beef on sale, fry it up, and freeze it. I then have handy vacuum packed bags of cooked meat to use later. I guess commas are a good thing!
