Love the meme!!
Dh and I are in the parking lot of a Mexican restaurant waiting for them to open. I’m thinking 11:30 isn’t too early for a margarita when you’ve been up since 4:30. And I’m guessing fajitas will be lunch. Dinner will probably be a pizza out of the freezer.

DH's client cancelled for this weekend so we ended up not going to the Bay Area. We'll see DS later in the month when we go down for DH to play in a golf tournament.
So, dinner tonight will be in the middle of the LSU football game so it has to be something I can get on the table quickly during halftime. Maybe tacos.

I've sent DH off to the US, so am home alone again. I was walking to the nearest supermarket this morning and to get there walked through the local Farmer's Market. One of the stands had rotisserie chickens, so I bought a half then found all the veggies I like with that. Potatoes and pumpkin are cooking right now, chicken needs to be reheated, and I'll also cook peas or beans and maybe make some gravy. Simple, tasty and healthier than I might otherwise have made. Also - note to self: Farmer's Market is there, right across the road, every Saturday morning. Go more often! Farm fresh veggies at really good prices. leannec - that meme is how DH and I watch Masterchef!

Busy here readying for the move; this morning was spent removing pictures from the walls and separating those to keep and those to donate. I planned a little bit ahead and defrosted some ground beef, so we're doing spaghetti and meat sauce in the Instant Pot...hopefully.

I am on my own again tonight, so my neighbor friend and I are going to a local pho restaurant. It's one of our favorites... Can't wait!

I bought my first baking pumpkin of the season the other day, so it's going to be pumpkin stuffed with everything good for dinner tonight. I have to make it on the weekend because you know the 8yo won't touch it with a 10-foot pole. My sister will help eat it. I'm also making mashed potatoes for my niece who had to have knee surgery yesterday (24 years old!) and she claims my mashed potatoes are better than her mom's and that's what she wants. Right now I'm babysitting her while my sister is at the gym and she's enjoying ringing her little bell for me every few minutes. Bad girl.

lucyg I’m determined to make a baked pumpkin this year although dh will whine and complain...he certainly doesn’t have to eat it! Do you make yours according to the recipe or change it up? I love pumpkin!

I made an apple pie this afternoon. The kitchen smells like fall, but it's about 85 outside. I'm going to run out to a local deli soon and pick us up some sandwiches. I'm reading and keeping one eye on the football games. Just a great Saturday!

It looks delish ... I pinned. Can you please share your modifications? Thanks. 1. I normally like to try recipes as written first and then modify, but I just about died when I asked for flank steak and the butcher handed me a $15 package of meat. I also consulted my phone which said flank steak is lean, so then I was skeptical about whether it even belongs in the crock pot. (Maybe that is why the cook time is so short.) So I grabbed a pack of my store's "beef for stir fry" because that was only $4.50 and it was precut into strips. It turned out okay, but still had that "beef in the crock pot" texture. So maybe if I ever find flank steak on SUPER SALE, I'll try it with that to see what I'm missing. Because for $15, I can just go get mongolian beef FROM A RESTAURANT. 2. With the 3/4 cup of water, I have some beef stock in the fridge, and I often sub beef/chicken stock/broth in place of water in recipes, so I made that about half water and half stock. (Note: I don't think it made much of a difference, except to add a little more saltiness. So it's not a modification I will worry about trying to make in the future, since I don't usually have beef stock around anyway.) 3. The next item in the recipe is 3/4 cup of soy. I thought that might make it a salt bomb. So I cut back to 1/2 cup soy and added another 1/4 cup of water. This is a modification I might keep. Or maybe buy low sodium sauce for. 4. The sauce was VERY thick (thanks to the cornstarch) which wasn't bad, but it was just starting to get that gelatinous look to it stuff sometimes does when you use cornstarch to thicken. So I used some of the beef stock to thin it out. Water'd probably work fine, too. 5. I used to work in a Chinese restaurant and our mongolian beef was just beef and scallions. So I added the white/light green parts of a bunch of scallions (save the dark green for garnish), cut in about inch-long pieces. I put them in with an hour to go (I was cooking on low)-- that was too long, though, because they got too soft for my liking. Next time, I will put them in at the same time I put the rice on the stove. 6. Oh, and no carrots. Just because I don't like cooked carrots. I thought it turned out pretty tasty. I liked the sauce very much-- tasted about like I think it "should" (from my restaurant days). It was not a complete fail, and I would probably make it again. The only downside is that even on low, it's only supposed to be like a 4-5 hour cook, so it still has to be a weekend meal.

After all the excitement of my 50th birthday, today it is DS's 13th birthday! We are having the extended family over for dinner. DS has asked for pasta - specifically spaghetti bolognese and tortellini carbonara. I will have to think of something else to make to feed the hungry hordes but I'm not sure what. I'm going to make some chocolate mousse in the Thermomix.

Well we underestimated the traffic in Napa and missed our first wine tasting. Made it to the 2nd one and honestly that was plenty. Then we just had appetizers. It's 8 local but 10 my time. Tomorrow we head to Lake Tahoe. Just want to stay on eastern time and drive over early.
