I'm having friends over for dinner tomorrow night, 6 total people. One is vegetarian & another one is a pretty strict low-carb eater. I want to make something delicious & impressive for all. I'm planning to do meat and meatless options. Any ideas? TIA! ETA: Low carb eater told me that she doesn't eat any vegetables that are grown under the ground ie. carrots, potatoes, sweet potatoes, beets, turnips, etc. Do you think that includes onions? ETA: Love your awesome ideas, peas!! How about a low-carb dessert? I'm guessing no pie, cake or cookies.

Thanks, quiltz Good idea! They will be here two nights & we're going out to dinner the 2nd night. I should have mentioned that cooking is "my thing". LOL, so I want to make dinner at home for them tomorrow night.

Low-carb vegetarian is basically my diet. You could make zucchini lasagna ( meat-free, obviously) that I think is delicious. Just use sliced zucchini in place of noodles. Or you could use spaghetti squash in place of pasta with Alfredo. Plus a tossed salad. You can even find low-carb recipes for cheesy breadsticks made with cauliflower or sometimes almond flour.

For the meat eaters and low carb person I would grill some steaks. For the vegetarian I would grill a couple of the large portabellas. For sides, twice baked potatoes, roasted veggies (zucchini, broccoli, sliced bells, mushrooms, etc), maybe a green salad and rolls. For dessert, brownie bites with vanilla ice cream and chocolate and caramel sauces.
ETA: Hmmm, I think I just planned tonight's menu at my house!

Instead of grilling steaks (in case you don't grill) like I mentioned above, you could do stuffed portabellos and stuffed chicken breasts/pork chops in the oven with the same sides.

It is free food that you didn't have to prepare. I am not a short order cook. I serve meat and lots of veggie dishes. If you are unhappy with that. Drink water.
If I know somebody has an allergy, I always suggest we go out. My house is not allergy friendly.

Onions are fine on a low-carb diet, but they're hardly a side dish. Make a vegetarian side dish with green beans, slivered almonds, and a balsamic vinaigrette, some roast chicken, and a pasta dish with a marinara or arrabiata sauce. That should please everyone. I personally would agonize over this shit and then just cancel the dinner even though I just offered the perfect solution

I recently made this Cauliflower Fried Rice and it was delicious!!! Leave the egg out so the vegetarian can eat it as well (it tastes the same without it)

I would make one dish everyone could eat. Probably a cauliflower rice stir fry with snow peas, napa cabbage, red peppers, zucchini, mushrooms and cashews. I would include onions unless you know for sure they are on the "no" list. Make the rice and vegetables separately and you can do regular steamed rice, too, as an option.
ETA it would be easy to add chicken, shrimp or some other protein to this as a separate dish.

An assortment of mixed berries (blueberries, raspberries, blackberries) and a sugar free whipped cream are my go to as a low carber. Maybe add vanilla bean ice cream for those that are able to indulge, too.

Bless you. I wouldn't deal with such restrictions. So what do you do when you have guests for dinner? To me, making an effort to accommodate your guests’ needs is just good manners.

With so many types of eaters these days, it's hard to please everyone.
I would go to a restaurant, that way everyone could get what they want.
I usually decline home dinner party type invites, as I usually don't care for what they are serving. Most especially, if they are the "chef" and/or "foodie" types, as they usually serve fancy gourmet type food, that I won't eat.

How about a Taco bar? That's my go-to for a crowd with mixed food issues. It's easy to prepare most of it ahead of time and then people can pick and choose what they want.

But I don't entertain any more so that might be why And my family either eats it or goes without, since we don't have any allergies we just eat what is offered.

Our circle includes a vegan and several who eat Paleo and so we have this question come up often. I sometimes make soup and salad for those meals, usually curry pumpkin soup and chicken tortilla soup, with the salad set up so you can choose your toppings. Plus bread/cornbread. Easy, make ahead, suits many kinds of eaters.
