Looking for something for 3-4 people that can also be played with 2, that's interesting but doesn't take an hour. Ages 8+. Any recommendations?

I put together a small list for you of games that are known to be good with 2-4 players and be good for families including children, without being terrible for the grownups. At the bottom I added some other great games that play well at 4 but not 2. These are all available on Amazon, Cool Stuff Inc and Miniature Market - shop around for the best price. Amazon is very unreliable for availability and pricing, at least in Canada.
The top games are great for adults and children, starting at quest for El Dorado they are more geared toward kids, but still enjoyable for adults. I bolded some of the ones I think are probably the best for the range of ages.
Games that work well for 2 or more:
Splendor - One of my favourites. Set collection. <30 minutes. Simple. Pandemic - Great co-operative boardgame. 8 is borderline too young, depending on the board games they are exposed to.
Forbidden Desert Another great co-operative boardgame, just a bit simpler than Pandemic and good for 8+
Pandemic: The Cure Pandemic in a dice game. One of my favourites.
Clank! A Deck Building Adventure Borderline for 8, but above that should be great. Quest for El Dorado Starting here the games are designed a bit more specifically for kids - but good for gown-ups. Karuba

There's actually many games that are fantastic for 2 people. Let me know if you want some suggestions. But finding games that are good for 2 to 4 with various age groups down to 8 - still lots of games but a bit more challenging.

My fourth graders like to play Boggle, Yahtzee, headbands, and Scrabble. Most adults are happy to play those games too.

Exploding Kittens is a really fun fast game. My 10 year old thinks it's hilarious. We are getting the expansion pack for Xmas this year (from Santa!)

We played Speak Out during our HappyGivingMasKah, that we just had (we meet when we can and celebrate it all at once 😂). Hands down, one of the funniest games we have ever played. As in we literally laughed so hard it became a problem to play. It would be perfect for little kids too as it's quite silly.

I just ordered Rivals of Cataan. It got great reviews as a 2 person game.
I'm not sure but I think it is only for 2 people. We love Settlers but there will just be my daughter and I so I figured it was a good xmas gift.
We love Rummicube and it is good for all ages. Also Qurikle

Our family played triominoes for years. Small children can play as well as adults. 2 can play, but more fun with several people.

we like Skipbo, Uno, Mille Bourne for mixed ages and anywhere from 2-5 people. None require reading so worked even with 4s and 5s but are fun for teens/adults on their own as well.

We got Timeline last Christmas. My boys (13 & 11) loved it! We got the Historical Events version. Unfortunately, it got packed up in preparation for our move. My boys have asked about it more than once.

I'm a huge fan of Bananagrams. It's a simpler, faster version of Scrabble.
The game is fun w/ several players, but works well for just two players. You can even play a solitaire version!
Best of all, it's cheap and very portable. You can order it on Amazon.
