So all of a sudden pork belly is everywhere. Why so popular? Well, she’s in Australia. Isn’t pork belly just what we call bacon? I don’t know. I’m confused and probably should just stop talking now.

No. I mean, I think bacon comes from the same area, but it's not like bacon. Whenever I see pork belly, it's like a 1/4" slab of something. So all of a sudden pork belly is everywhere. Why so popular? Food network. Also, Arby's (SO likes the pork belly sandwich from them.) It has started to snow, and will probably snow all night and tomorrow, so I am making chicken enchilada soup.

For our dining pleasure this evening we will be enjoying leftovers. We have several that would make a meal. For lunch we had baked tenderized tip steak in gravy with mashed potatoes and corn. We only had 8 today and just enough leftovers for one meal left. I sent most of the chocolate chip cookies home with the two families so we do not eat 12 dozen cookies......LOL
It is up to 22 degrees today and then it started snowing, geez there is no winning this winter. Tomorrow it's supposed to be around zero again...not looking forward to work tomorrow. I want to hibernate until spring.
Here pork belly is unsliced, uncured, and unsmoked bacon......so from the same place on the pig but treated differently.......

I'm sitting at the airport waiting for a flight home and getting caught up. Over the last week I've eaten some of the best & worst food of my life. I expect the dining room where my dad lives to serve bland food and it lived up to expectations but the Chinese place my in-laws took us to was a surprise disappointment. I've never had such flavorless food in my life. Sadly it looked as bland as it tasted. Fried rice should not be white IMHO. 😩
Fortunately, the meals at Lemongrass (Thai) and Las Margaritas (Mexican) reminded us that great food is out there and worth every calorie.
I'm not ready to go back to an empty fridge and meal planning.

I had housekeeping come to our room today to fix my sink and they found another half a tooth in there. I am not sure how I feel about this. If you lose something as big as a tooth down the drain don’t you tell someone? I am not sure. Very, very strange.
We came back to the resort to eat dinner. It was another really nice day.
I had to show my ID to buy nail polish remover. It didn’t like my postal code so I used a US one 90210 of course because what other postal code do I know?
It is time for red wine.
In other news the ocean is amazing, the salt spray comforting, the shade warm the breeze cool and I still love the Island of Hawaii

I've been ordering it at restaurants and making it for at least 5 years, if not more. I've even heard some people say that the fad needs to be over now and we should move on to something else. we had spaghetti squash with pesto and grilled chicken tonight. I'm thinking red beans and rice tomorrow....its Monday afterall.
the kid is out if school tomorrow so I asked what he wants for breakfast.
pancakes.
'come on dude, pancakes are number 1 on my list of things I hate to make. got a second choice?"
"French toast, cut in half with powdered sugar?"
"that I can do I have some banana bread leftover. do you want banana bread French toast?"
"mom, why do you always have to make things weird."

It looks pretty good cooked. I’ll have to try it maybe the next time we go out and it’s on the menu. My favorite way to cook it is using this recipe: Crisp Pork Belly with Caramel Vinegar
And our favorite restaurant does the best pork belly ever: Pork belly, apple slaw, chilli caramel, black vinegar. I am pretty sure that 95% of the people who eat at this restaurant have the pork belly, it is their signature dish. They also do a bao with pork belly which is almost identical to the one I made. Sorry for inundating y'all with pork belly pictures LOL! I'm quite passionate about it haha.
