Hi peas! How would you season chicken that was to go in a coconut curry dish? I have a jar of coconut curry sauce that I will use--should I season the chicken in any way? I'm new to Indian cooking so thanks for any help! Merilee

I don't really know anything about Indian cuisine, so I wouldn't know what "fancy" spices would go with a coconut curry, but I find any chicken I have to cook before putting it in something else, even sauce, is always tastier with a little bit of salt and pepper.
You could also look at the ingredients on the sauce and try taking your cues from that. One chicken recipe I make has garlic powder in the sauce, so when I cook the chicken, I sprinkle it with salt, pepper, and garlic powder even though the recipe does not call for garlic powder on the chicken. But it really makes the dish so much better.

When I make chicken curry I just use salt on the chicken. The curry is a combo of many seasonings already, so I don’t think you will need much other then salt.

I would just use salt and pepper because the sauce will have spices.

For recipes like that, I’ll braised chicken in 1/2 broth, 1/2 white wine. Then I add it to the curry.
One thing to note-every brand of curry has a slightly different taste because “curry” is a blend of spices. If you have a store where you can get curry by the ounce, it’s good to try a few to see what you like. Otherwise, go in with a friend and buy 4-5 different brands. My favorite is form Spice and Tease, but I do grind it finer before using it. My second favorite is McCormic in the glass jars. Probably the cheapest out there!

I cook a lot of Indian meals but if I was using a ready made sauce I wouldn’t be adding any other seasonings to the dish unless the label suggested it. I would just brown the chicken then add the sauce and cook them together for about 20 minutes. Maybe add some cashew nuts and cilantro at the end.

Unless I am making a tikka masala or a butter chicken, I would just brown the chicken with salt and pepper and add the sauce for it to cook in.
With a tikka masala or butter chicken, I will marinate in tandoori masala, cumin, garlic and yogurt and bbq before adding it to the sauce.

Season it with salt. You could marinate it in yogurt too if you wanted. I make curry weekly but I make it from spices and I usually use coconut milk and maybe some tomato sauce. Probably one of our favorite dinners.

For a pre-packaged sauce I wouldn’t use salt until after I tasted it. But we’ve cut back on our salt and processed foods so just about everything tastes too salty to us now.

You can rub the chicken with some of the sauce and let marinated Until time to cook.
