I'm making a "vat" of soup for a large gathering on Sunday. My sister loves tart apples added to this type of soup. I'm not using a recipe.
So far I've got 2 gigundo onions, sauteed in EVOO, 3 lbs carrots and 5 lbs frozen butternut squash simmering in 18 cups vegetarian bouillon with black pepper added. I'm thinking of adding some apple. Other seasonings suggested are cayenne (I would use a bit if at all, it's largely an elderly crowd), cinnamon and nutmeg. Coconut milk optional. I have purchased green onions and parsley to serve as garnishes.
Soooo.... would you add some apples to the soup pot?

Well I've never added apples to my pumpkin soup, but I don't see why not. You're not really going to taste them anyway.
The only other thing I add to my pumpkin soup is a tub of cream cheese - very naughty!

I always put a granny smith apple and fresh ginger in carrot and/or butternut squash soups.

Forget the cinnamon , just a bit of nutmeg.
Serve some major grey’s chutney with it.

I have seen recipes with apple added to butternut squash soup. My preference is to add orange juice. I agree with @megmc on using nutmeg instead of ginger though.

Do you cook off a recipe and if so did you share it on the recent Butternut Squash Soup thread? If so, I printed it but haven’t made it yet. If not, can you please point us in the right direction for the recipe? eta: Nevermind, I found the thread and yes you shared and yes I printed! We are basically repainting our entire house and other small projects as we go so we haven’t had time to cook more than simple meals. But this Butternut Squash soup needs to happen, and soon!

Sounds good! I’ve never had mine with apples, we usually garnish ours with candied pecans and dried cranberries. So yummy!

I use an apple.
Apple is also potato substitute. It will make the soup thicker / star chief and add a sweetness. Really you won’t be able to taste the apple but the added texture will be great.
ETA: I sometimes sub an apple for the potato in my leek / chickpea soup.

And now I’m officially hungry. It’s 12:23 at the moment so thanks for that I have to make a confession, there actually can be too much cheese and butter in the mashed potatoes. I used to make the recipe by memory and the potatoes started to be really, really mushy. I just assumed we were mixing them too much, or boiling them too long. Turns out we were adding an extra stick of butter and extra block of cream cheese to the exact same amount of potatoes. Now that I think about it, they’d be an excellent soup base. So let me amend my statement. There can be too much butter and cream cheese for your intended purpose

I add apple or apple juice to my butternut squash soup. I also use curry spices in my soup. Just enough to give a hint of the spice—I don’t use a lot. I just made it last week and it was wonderful! I garnish it with homemade croutons, bananas, and toasted cashews.
