What about Asian Chicken Wraps. It's like a salad rolled up in a tortilla, you could tell your hubs that it's a sandwich!
Buy a rotisserie chicken and shred it. Buy a bag of Asian salad mix Combine the two Roll it in a spinach tortilla
Wa-la dinner!

I did Taco Salad last week when it was so hot and humid. I know you said no salad but he could have tacos or make nachos out of the ingredients.

I threw chicken and salsa in the crock pot. I've never done that before so we'll see how it goes. And I'm cooking quinoa for a side since it doesn't take long.

Chicken, yellow rice, and broccoli.
Use (shredded) rotisserie or canned/cooked chicken. 1 pkg yellow rice fresh or frozen broccoli
After cooking the rice and the broccoli (I do the rice on the stovetop and the broccoli in the microwave), mix all together and serve.
Cheap, easy, and filling. And easy to make more or less, depending on how many you need to feed!
