I am doing a ham in the instant pot, roasted carrots, and spicy garlic sautéed green beans. I'll probably do a box of mac and cheese for DH and DD but I am trying to do only whole grains right now so none for me. I hope I can resist. 😩 Does anyone have any veggie side dishes they love? I'm trying have my plate at least 1/2 veggies but I know I am going to run out quickly of things. I hate mushy veggies and too often that's what I end up with. Vegetables are really hard for me. My grandmother usually made dinner and every vegetable was cooked until it lost all its color. Blech. Even the canned ones. Double blech. Do you like arugula? I have (okay, HOMECHEF has) a recipe for a simple salad that is arugula, tomatoes, some parmesan, and a homemade lemon vinaigrette dressing. I like it ... it's peppery spicy, though (there's a lot of black pepper in the dressing in addition to the arugula). But if that's not your jam, you could probably sub baby spinach. I also like fresh tomatoes with some cottage cheese. Sometimes I will add some pico de gallo to an entree... I will eat asparagus (I just steam it and serve it with a little dab of butter and seasoning). I like snow pea pods (those are the flat ones) but I don't have a recipe for them. I like sugar snap peas, but I think those are best eaten raw. (Cool, because I also like ranch dressing.) It's not a side dish, but I recently discovered this Creamy Tuscan Chicken recipe. I use boneless skinless breast and prep it a little differently, but what I love about the sauce is that I throw a whole clamshell of spinach in there and a bunch of tomatoes. That totally negates all the fat in the cream.

I like sugar snap peas, but I think those are best eaten raw. We just had this with our flank steak. Although I eat a lot of them raw, I like to roast them in the oven on 400 degrees for about 8 minutes. I coat them with some olive oil and sea salt before roasting.

Dh had a white hot, corn on the cob, fresh green beans seasoned with fresh basil, onions, and lots of roasted garlic. I had two soft-boiled eggs over a baked potato with the green beans piled on top.
We both had ice cream.
