Every morning I eat the same thing, a toasted plain or onion bagel with a fried egg, a slice of white American cheese and 4 breakfast sausage links on it. I get tired of all the grease spatters on my stove in the mornings just to fry up 4 sausages so this morning I made three big packages of them. After they were cool, I put them in serving size portions and tossed them in the freezer. Now I only have to heat them up in the mornings Yesterday while grocery shopping I picked up 2 rotisserie chickens, removed the meat and vacuum packed it in recipe sized portions and into the freezer it went. I used the carcasses and made homemade chicken stock. This morning I skimmed off the fat and put that in recipe sized portions as well My freezer is happy. As I was busy in the kitchen I discovered I have some nice big shrimp in the freezer, some heavy cream, some green onions and of course frozen peas and some parmesan. So for dinner tonight I am having a quick and easy creamy shrimp linguine. That always used to be my go to meal but I haven't had it for a long time and I'm looking forward to it What's cooking at your place tonight?

We do the same thing with breakfast sausage.
No clue for dinner tonight. At the weekend dh made chicken stock, so now I have pre-cooked chicken breast to use (the dogs get the dark meat) and I also have leftover sticky rice. Still figuring out what to make with it.
Yeah for Pinterest - dinner is now decided - we're having one pot chicken burrito bowls

The shrimp linguine and curry sound delicious.
I love time-saving tips, akathy. Nicely done.
I am grabbing sandwiches from Sprouts tonight. These are a well-kept secret. $2.99 for a sandwich on your choice bread loaded with meat, condiments and veggies of choice. Add avocado, bacon or cheese for 50 cents extra each.
I personally love the veggie sandwich, which includes avocado and cheese, for $2.99.
Can't beat it for a super inexpensive and healthy meal.

I loaded up my crockpot this morning with the fixings for vegetable beef soup. I'll make cornbread or crusty bread to go with it.

I will let you how it turns out I don't have a recipe for Naan, I buy them from the store lol. I do miss a proper authetic naan bread - Indian cuisine is not common around here, the nearest restaurants are at least 45 minutes drive away. Sometimes I wish Jacksonville wasn't quite so big lol.

I was going to make pasta with meat sauce for dinner, but my daughter ended up having a friend come over unexpectedly and I took them out for pizza for lunch. Now I feel too stuffed for a pasta dinner. I think I am going to make chicken Caesar wrap sandwiches for dinner and I will serve them with roasted asparagus. That should be lighter!

Yesterday I made beef cabbage soup. I'd love another soup today but know the guys would grumble. So I'm making something man/kid friendly. Patty melts, tater tots and fruit salad. Tomorrow we have to go to Dallas so we get to eat out.

Meatloaf and Harvest Green Beans is the plan. Although I'm currently having a vodka drink to brace myself because I need to call the evil that is known as at&t. If I'm a hot mess in a puddle on the floor after that phone call, the menu will change to frozen pizza.
ETA: It's 6:20 pm. I survived the at&t phone call in less than 45 minutes and I *think* everything has been corrected but I'll keep my eye on them. I even had time to walk down to the polling station and vote, come back home and prepare the meatloaf which is now in the oven. Yay! I'm cooked myself though now, so postponing Harvest Green Beans and substituting prepackaged cauliflower with cheese sauce from the freezer.

In & Out! I am so tired that I have zero desire to cook.
Dd will have the hamburger protien style spread only with fries and a coke.
Dh will have the double double, no tomato, animal style fries, and chocolate shake.
I will have the grilled cheese with grilled onion lettuce, and no tomato, cheese fries, and chocolate shake.
Ds will have his Elecare Jr Medical Formula and a few fries.
Gotta go all out when eating there.

How much do you use? I always think a little bit of acid adds freshness but I've never tried it in a soup.

I made shepherd's pie. My dh asked for it and I didn't even think that it's his bowling night so he wasn't here to enjoy it hot from the oven. He'll reheat it once he gets home.
