I'm getting ds some spices and I was thinking. There are spices that come with all the spice racks or in other sets that I have never used.
The first one that comes to mind is Herbs de Provence. I have no idea even what to use it for.
What is your favorite spice to use and what do you have that you have never used?

I occasionally use Herbs de Provence on roasted chicken.
I avoid chili powder and cayenne pepper if I can, because I just don’t like the flavors. My most used from my cabinet are probably Italian seasoning blend, cinnamon, and curry powder.

I have only used Herbs de Procence once and I have no idea what recipe it was and if I even liked it.
I use seafood grill and broil blend, basil, thyme, oregano, Italian seasoning, cumin, cumin seed, chili powder, cayenne, poultry seasoning, sage, ground cardomom, cardomom pods, coriander, crushed red pepper flakes. White pepper, black pepper, curry powder, rosemary, marjoram, garlic lowder, onion powder, paprika, smoked paprika, ground mustard, parsley, celery seed and ground celery seed, tarragon, cilantro, dill weed, bay leaf, ginger, cinnamon, nutmeg, cloves. I make my own taco seasoning
Ones I've had that I have never used: tandoori masala seasoning, fajita seasoning, szechwan seasoning, French thyme, pesto seasoning, mint flakes, truffle parmesan seasoning.

I'd say my top three spices that I regularly refill (buy in bags at Penzeys) are cumin, smoked paprika and garlic powder.
I have never used celery seed or dried parsley.

since you already said Herbs de Provence (which I don't think I have ever used, either), I don't think I've ever used Tarragon for anything.
Some of my most-used herbs / mixes are Italian Seasoning, basil, Adobo seasoning, garlic powder, smoked paprika, and Arizona Dreaming, which is a Penzey's mix. eta: also cumin! how could I have forgotten cumin?!?
eta: truffle Parmesan seasoning sounds like it would be heavenly decadent! my DH loves truffle fries, I bet that seasoning would be great sprinkled on roasted potatoes.

I haven't used Herbs de Provance and I probably wouldn't buy it because I had a stuffing mix with it last year or the year before and didn't care for the flavour.
I've never bought a set of herbs/spices, I always buy either for a specific recipe or more likely at this point in my life - to replace an empty.
That said, I have quite a few herbs and spices in my collection but I use them all - some more often than others.
The ones I replace most frequently are minced onion, garlic powder, onion powder, thyme, rosemary, ginger, allspice, cumin, chili powder, and dillweed. I would add Madras Curry powder to that list except I've been buying it in 1-lb tins and that's cut down on the replacement frequency.
I never buy anything-salt (celery, garlic...). I don't usually buy mixtures either - I made up my own Greek seasoning mix for instance and I make my own taco seasoning as well. The curry powder would be the exception and only because it is the curry powder of my childhood and it has a familiar flavour.

my DH likes using onion salt, for some reason... I don't like it. it's way too easy to overdo the salt. blech. I much prefer using onion and garlic powder. I never use CELERY seed, unless I'm at a place that serves Chicago style hot dogs.
edited to add the word celery- I don't use 'seeds' for anything except in the birdfeeder, lol.

I guess my least used is cayenne pepper but I use everything I have Oh wait, no, I have 2 free bottles of ‘pie spice’ that I’ve never used because I use all the spices for baking directly who uses a blend?
I even use my bay leaves but mostly for tea, I mean yea I’ll throw them in stew or when I’m making stock fit the potassium and magnesium but I use it very frequently for tea in the summer.

We eat a lot of Mexican, Indian and Italian flavors. I keep ground cumin, chili powder (ancho and medium hot from Penzey's), cayenne, crushed red pepper flakes, oregano (both Mexican and Mediterranean), garlic powder, onion powder, ground coriander, cardamom, a couple of different kinds of curry powder, paprika (both sweet and smoked), garam masala, turmeric, ginger, cinnamon, clove, nutmeg. I don't care for dried thyme, parsley or basil so I only use those fresh. I don't like tarragon at all, so I don't keep that or any Herbes de Provence blend. The only Penzey's blend I use is the Northwoods Seasoning, and I keep Tony Chachere's cajun seasoning and Old Bay seasoning.
For a kid who is maybe only going to cook simply, I wouldn't get all that. When my oldest was living on her own last year I think she only had cajun and adobo seasoning blends, and garlic powder. And salt and pepper, of course. I would figure out what your kid is likely to cook and eat, and start with that.

I never use oregano because I hate it. Took me a long to realize that is why I don’t really like pizza or spaghetti sauce since most places use oregano for them. I make my own sauces with basil now,

Much easier than taking out 4 or 5 little bottles. Also some recipes call for a blend like pumpkin pie spice. Rather than trying to decide how much of each individual spice to add, if I have the blend on hand I use it.

The spices I use in heavy rotation are: Oregano Rosemary Garlic powder Chili powder Cumin
Then: Paprika Onion powder Italian seasoning Smoked paprika Cayenne pepper Allspice Old bay Bay leaves I also have mixes from a spice store but the names all blue together- they are like jerk seasonings and similar...

A sappy little story for you. On DH's and my second Valentine's Day together, we were house-hunting. We decided that instead of wasting money on expensive flowers and chocolates, we would each choose something for the house. One of us bought a dinner service and the other bought a stocked spice rack. 25 years later, we still use those dishes every day, and I use the spice rack for every meal I cook. Those little Schwartz jars have been washed out and restocked, one of the labels has come off, many have been refilled and relabelled with new spices or herbs that weren't in the original jars.
There is only one that I have never even opened, and that is saffron. To start with I thought it was too expensive to refill, then I had no idea what recipes I would use it in, and now that I'm more adventurous, I don't fancy using something that's 25 years old!
Herbes de Provence are my most refilled jar! I throw a teaspoon into most casseroles, sprinkle it on Feta salad, or use it to make mini "lunch pizzas" out of Ryvita spread with tomato paste, sprinkled with the herbs and a slice of mozzarella on top, 1 minute in the microwave. Mmm.
I say go for it, get the spice rack. Then be adventurous and try them all. You might discover some new family gems of recipes.

I use Herb de Provence all the time 😊 I think of it a general mix and use it in casseroles (bakes?) etc. What would I not want to be without...Basil, Rosemary, garlic salt, chilli powder, sage and sweet paprika

Everyone seems to have hit my basics. I don’t use marjoram or tarragon. One of them I really don’t like and can never remember which is which.

Our family-favorite seasoning is Garlic Garlic from Tastefully Simple. We're also fans of Onion Onion. In addition, we use Italian seasoning, basil, oregano, parsley, garlic and onion powder (and salt), chili powder, cumin, cinnamon, nutmeg and ground cloves.
I completely despise the taste of rosemary, so it's never even in our kitchen (other than probably in the Italian seasoning mix, which I tolerate). I also don't care for Indian, so not much of that here, thought DH and DD both like it. I can't remember how I've used Herbs de Provence in the past. Must not have been very memorable.

I’m not an adventurous cook or eater. Besides salt and pepper, whole nutmeg is a big favourite for soups, vegetables and some egg dishes. A little goes a long way. I do occasionally use an Herbes de Provence blend for roasted chicken. My least favourite spice is paprika. All types. Loathe it.
