I only have a few sets, so I am happy with what I have.
I have a few Lawn Fawn sets (mostly because I want to use them for scrapbooking, not really into card making) and then I also have an alphabet set and want to get a second.

I've been collecting stamps since the 80's. I had a ton of wooden backed stamps that have been donated to an elementary school. I have purged through the years. I now have a decent sized collection of stamps that are all newly organized and stored in new baskets with labels that make sense to me. I love that I can just pull the entire basket and put it on my desk.

After reading all the responses in this thread, and also reading about the bare shelves at Michaels in another thread, I feel like I want to add some extra thoughts.
Like Don, I have a lot of stamps, and I tend to keep them. However, it is mainly because they represent potential.
I may not “love” every stamp I own, but there are plenty of stamps that I have used because they were suited to a project at the time.
Some of you say that you don’t need many stamps because you are a scrapbooker, not a card maker. I was a stamper/card maker for 10 years before I started scrapbooking. My first scrapbook page was stamped because the CM white pages seemed so plain. I still sometimes use stamps to create a stamped multi-colored background “paper” (actually on card stock) when it suits my photos better than any of the papers in my stash. I also sometimes use stamps to create page embellishments. I stopped buying flowers when I learned to make my own with Heartfelt Creations stamps. Yes, it takes longer, but some of my favorite pages that I have done were created with stamps.
I store my stamps in pocket pages in zippered binders, many in the old Crop in Style Paper Sticker Binders (PSB’s) that have been repurposed to stamp storage. I can store as many as 400 stamps in one PSB, which makes my very large stamp collection fast and easy to look through but takes up less space.
Has my taste changed over time? Yes, but while my kids are grown, I now have grandkids, so those cutesy stamps have come in handy again.
For some people, too many choices can be more overwhelming than helpful, but I love having choices. I don’t live near any LSS. I shop from my stash or make what I need with what I have. I don’t feel overwhelmed by the many choices at the LSS, so why should I be overwhelmed by having more choices in my stash?
You don’t have to love every stamp in your collection for them to be useful for crafting, and that includes scrapbooking. If you are a minimalist, that’s fine. However, not everyone needs to feel pressured to purge just because they don’t “love” every stamp. I noticed the comment of the former stamp rep who sometimes finds herself looking for stamps she has purged. When you purge stamps, you can be purging potential, and you are limiting your choices. Considering the comments in the thread about bare shelves at Michaels, craft supply options may be limited somewhat for awhile. If you can’t buy what you need, making it yourself is at least an option when you have stamps.

Most (other than 3) of my stamps are sayings, words and alphabets. I can use them multiple times on cards. The others are a baby set with animals for cards, a Koala set that has cute matching sayings for cards and a grungy background set for art journaling and canvases.

I donated a good 200 stamps that were school related and gave myself a lot more room. I also had some that screamed 80's that were no longer my jam. I also have some from the 80's that make me smile, so those stayed. I do not stamp nearly enough on my pages for all of the stamps that I do have. If I have an organized reasonable amount, I am more likely to look through them. Stamp were the first thing I collected as an adult (on a teacher's salary). At the mall, there was a cart of stamps and I couldn't go past it without buying one. Then the lady got a small store in a little town right next to us and I shopped there if I ever got extra money. Then she moved to a larger store and eventually sold her business (I believe) and decided to go big and now she has a HUGE warehouse of all things crafty. It is an amazing place, but she does her business online and for wholesale buyers. She lets me shop in person since I've know her since the 80's. If you ever need a bunch of something crafty for a decent price, check this site out. It is the same stuff you can find in your LSS. I am really good at purging, as I said in another thread. And I'm getting much better at being discerning when I buy stamps. Will I use it? Do I have something similar? If it's in the same theme (say, coffee), will this set work complement my current sets, or will it be repetitive? How many flower stamps does one person need?!
I do make cards... lots of them. So as long as they're still my style it's all good. I have a box of stamps I've pulled from my shelves to play with & see whether they are staying or going.
I use the Marie Kondo scale. As I use it I ask if it sparks joy, and if it doesn't, it goes so it can find a home with someone for whom it will spark joy.

I wish that idea worked for me; I have discovered I need something more visual. I am learning the balance I like between too many choices & not enough choices. I'm in the middle.

I will almost NEVER pay full price for any product (save for kit subs, basically) but I LOVE to organize and am very much willing to pay full price on that perfect piece of organization and I don't feel the slightest bit guilty about it. If the products are sorted in a pretty way, I'm more likely to reach them...the things that I don't have organized that well just get lost.

I am in the process of trying a different organization system - hoping that will inspire me to pull them out more and use them....we'll see. If that doesn't work I will explore purging. For perspective, I've been scrapbooking / paper crafting / card making for 16+ years and while I have purged paper and supplies, I have never purged stamps, tools, etc.

I rarely use them but have been trying (and succeeding) to use them more. This remains an effort I plan to pursue this year. I think I'm still going to purge some.
