Potatoes, carrots, celery onions in the roast served on rice. Keep in mind I live in Hawaii and we eat everything with rice.

Gnocchi! I have a recipe for gnocchi beef stew that is my absolute favorite! I know it's not pot roast, but it's a similar idea and is also still kind of potatoes? But it's so yummy. beef stew

When I tried a keto recipe I put radishes instead of potatoes. They come out looking and sort of tasting like potatoes. It's kinda strange, but I actually liked it and have chosen to add them more often now.

Generally I dislike radishes but if they taste like a potato after cooking, that sounds like a great keto option. Do you just dump them in the crockpot whole (with ends cut off)?

I do mine with potatoes, carrots and mushrooms in a gravy. I put it over egg noodles and then add a glob of sour cream when it is on the plate. You can still have potatoes/veggies but the sour cream is a delish addition.

Nowadays I make a garlic cauli mash. I find it more and more difficult to tell the difference between mashed cauli and mashes potatoes. And you get that creamy yummiest for the gravy.
