We've had potatoes nearly every day this week, I was hoping to have something else with the roast that I just put in the crockpot. Do you ever serve it with rice or pasta? If so, do you do carrots like a traditional roast, or a different veggie on the side?
I'm probably overthinking it all, but roast without potatoes feels "wrong"...

I make my Nana's pot roast recipe. It comes out much on the stove in a pot vs a crock pot of the IP. I only add onions and spices to it. I normally make mashed potatoes (nothings better than that gravy on the mashed potatoes), corn, homemade bisquits. It's a fattening, old fashioned meal.
If I didn't make the mashed potatoes, I'm not sure what other carb side dish I'd make (not that it needs one), but i wouldn't make any veggie side dish in the pot that the roast is being cooked in.

WARNING: Random stream of consciousness post.
My original way to make pot roast in the crockpot was to put it in with diced potatoes, baby carrots, and sometimes sliced onion and/or celery. Then I would just serve a roll on the side because all the veggies are in the stew.
The way I make it now, it's just the beef and gravy, and I serve it over mashed potatoes. I like banana peppers (pickled) with mine. (Based on the food shows, I probably like the acid cutting through the richness of the stew and potatoes.) If I had to serve a veg with it, I'd probably serve a green salad. Maybe asparagus. SO probably wouldn't mind broccoli, but I don't love that. Oh, I might switch up to a sweet potato or squash... With pork roast, I like tomatoes with a little cottage cheese; I don't know how I feel about it with beef.
If you were thinking of a different starch, I might try stuffing/dressing, although we did go through a period of time where we had a lot of noodle-roni as our side dish. Oh, you know what? Egg noodles might be a good starch; if I make pepper steak in the crock pot, which is really just another beef stew variant, I serve that over egg noodles.

I’m not a huge pot roast fan, but if I make one, I slice a bunch of sweet onions and fill a 9 x 13 Pyrex with them—I mean, really pack them in—and roast on a fairly high setting—400 degrees or so—until they are syrupy and caramelized.

We are a rice family, we rarely have potatoes. So, I say rice. Lol! I also cook veggies with pot roast.

My husband's mom always used egg noodles, and I'd never had pot roast growing up. So on the rare occasion I make one, I throw them on egg noodles.

Pot roast sandwiches. Shred the pot roast. Serve with croissant rolls (or whatever type of rolls or bread is your favorite).

It's really good over cheesy polenta. We eat it that way every time. Yum!
I use Martha Stewart's recipe for baked polenta. Add Italian herbs, too. Double the recipe so we can have leftovers.

Roast without potatoes is wrong 😊 If I had to serve it with something else it would probably be egg noodles or polenta. Honestly though, I would make the potatoes since it goes so well then find something different tomorrow and the rest of the week. This is not the night I would cut out potatoes.

Carrots! I love roasted carrots. Onions also cook down to be so tender and add a wonderful flavor. I usually will line the bottom of the pot with celery to keep the meat out of fat drippings.

Rice or egg noodles (better than potatoes in my opinion) as a starch.
I have carrots and parsnips of course and either green beans, asparagus, or broccoli.

The recipe that I've been using lately for roast calls for onions and carrots which is perfect for me because a few years ago I realized that I don't like potatoes cooked with the pot roast--I'd rather have mashed. If I were to try something different I might try polenta, but I know my boys aren't fans of polenta so I don't make it very often. Egg noodles sounds better than rice to me, but honestly neither sounds better than mashed potatoes.

I usually do a bunch of carrots because several of us really love them. We don't always make potatoes to go with it, but we often have homemade bread.

I cook carrots and potatoes with the pot roast in the Dutch oven. Typically I serve cooked cabbage as a side dish.

We have one in the oven right now, with potatoes and baby carrots.
I tried to convince my husband to just do potatoes and make buttery broccoli as the other side, but he said it's too much work. It's so good though.

I always cook my pot roast with the veggies. Usually it's onions, potatoes, and carrots. Then I turn the left over cooking liquid into a gravy. And now I want pot roast.

Half of me says roast without potatoes is just wrong. The other half says the egg noodles sound good. Not rice, though. I associate rice with chicken dishes, more milk based gravies. But that's just a me quirk.
