If schedules work out I think I am cooking dinner for her and her husband for her bday. Her husband doesn't do anything spicy. I don't know if I will be doing bread or not. My friend is a HUGE fan of my cooking and I know she would love any of these meals. I am just not sure which one would be best.
I have thought of a couple of things: br [HASH]1 pork cutlets-marinated and stove top sauteed. garlic parm mashed potatoes oven roasted broccoli, onions, cauliflower, green beans etc
[HASH]2 chicken breast topped with sauteed mushrooms and onions melted smoked cheddar over the top mixed rice pilaf with pecans oven roasted vegetables -probably carrots, sweet potatoes, beets, parsnip
[HASH]3 seasoned and browned chicken breast grilled polenta rounds topped with saucy sauteed vegetables oven roasted cabbage slabs (some call them steaks)
Cake will be chocolate with frangelica cream, covered with ganache and sprinkled with chopped hazelnuts.

I would pick option 2. Chicken with mushrooms, onions, and cheese; rice pilaf with pecans, and roasted root veggies.

[HASH]2 sounds best to me, but let's be real--I'd eat and enjoy any one of them! The cake sounds wonderful. Your friend will surely enjoy her birthday dinner and dessert!

I think I'd go with [HASH]2 as well. It seems more like a comfort food entree so I would go with that if her dh doesn't do spicy.

As long as we are mixing and matching, I would like the potatoes and vegetables from [HASH]1 and the chicken from [HASH]2.

Just to be really, really difficult...
I want the pork & potatoes from 1 and the veggies from 2. That said, the veggies from 1 would be fine if you skipped the onions. Please don't corrupt my broccoli with onions!
Two would be fine were it not for the onions & mushrooms on the chicken. And I'm not a fan of rice pilaf. Regular brown rice, yes, but not rice pilaf. [HASH]3 is my favourite way to eat chicken (I love chicken) but I'd want the potatoes from 1 and different veggies.

For me, I would like [HASH]1, but cooking for others, I would pick [HASH]2. I know too many people who love pork, but it affects them negatively.

Definitely number 2. But I do like the sound of the garlic parm mashed potatoes from number 1.
I eat pretty much everything, but I wouldn't be too excited with polenta and cabbage so I wouldn't choose number 3.
