I'm looking for some new ideas for topping homemade nachos. Right now we do taco meat, queso, pico salsa, sour cream and a spiced bean and corn mix from a can. DH also adds black olives to his. I'm looking for some new ideas, either to add to the traditional Tex-Mex toppings we are using now, or a totally new twist would be awesome as well.

Nachos are simply deconstructed tacos imo. So you could do a take on fish/seafood tacos with small shrimp, diced breaded fish nuggets, shredded cabbage, diced avocado and a cilantro lime sauce.

When we make them at home they are super simple - but when we get them at our local Mexican place they come with fajita style onions and peppers snd grilled steak - soooo good.

We used to have a place here that made veggie nachos. So simple yet so good! They would put bell peppers, onions, mushrooms and spinach. I don't even think there was cheese on there. Maybe just a little. And then I would add salsa and guac on the side. The key to theirs being so good was the thin and crispy tortilla chips they used. The other couple of places here don't have that type of chip. Our Chili's is the closest to the thin crispy chip I like and prefer.

A lot of times just cheese.
But sometimes salsa, sour cream, guacamole, onions, tomatoes, refried beans ... whatever is available.

My nachos are different now due to allergies.
I make my own sauce and add in green onion along with the rotel. I dip Simply ruffles chips into the dip. (Allergic to corn).
Before that it was corn chips, nacho sauce, green onion, black ives, tomatoes, sour cream.

Nachos for me are often a clean-out-the-fridge meal. I might have white beans, black beans, or refried beans. Leftover steak, chicken, pot roast, bbq chicken. Cheese and standard toppings, of course. I also like to melt cream cheese and add jalapeños , lime, cilantro, to make a thick sauce to go on top, in place of the sour cream (sometimes I have both).

Ground beef, sliced avocado, corn with tajin, fried onions, shredded colby jack and some cotija crumbles. I make a aioli with mayo, crema, cilantro and lime juice and drizzle that on to finish.

We use chorizo as our meat, it’s so much more flavorful then ground beef and taco seasoning.

We love the loaded nachos from Smokey Bones Restaurant.
Loaded BBQ Mag-Nachos: Freshly fried tortilla chips topped with BBQ pulled chicken, hickory smoked, hand pulled pork, house-made queso, cheddar jack cheese, tomatoes, sliced jalapeños, sour cream, sweet BBQ glaze, and cilantro.

Ours our pretty simple. Most of the time it's just the boys & I so I dice up red peppers and green onions (if I have the green onions), open a can of sliced black olives and shred some cheese (cheddar, colby jack, cheddar jack, or monty jack--some combo of those--but it has to be freshly grated, not the bagged stuff.) If I have jalapenos I'll add some to mine, but the boys usually avoid those. After they have baked we add salsa and sour cream, maybe guacamole if there's any on hand. I almost never do meat, but DH will find a meat to add if he's having nachos with us.

We have a Mexican restaurant two blocks away and I let them make it for me. ;-) I can get an appetizer size of fresh guac for six dollars! I can't even get the ingredients for that little these days!

My nacho's are the way my cousin who used to work in a Mexican restaurant makes them.
A layer of chips, taco meat, enchilada sauce and shredded cheese. Then I add lettuce and tomatoes, pico de gallo and to top it all off, a thin chili con queso.
My family loves these nacho's and we eat it almost once a week during the summer.

Jennifer C yes I have! It's been awhile so I can't remember their thin/thickness. I'll grab a bag next time I'm in the store. I also want to try and make the Chili's salsa. I make a really good one but these days I don't feel like going through the motions of making homemade. I am the grab and go route mostly.

Nachos are the perfect casual party food. The hot stuff stays hot, the cold stuff stays cold, and guests can build the plate they want.
These are some of the meats and toppings I make:
Shredded Jerk Chicken - special toppings are mango salsa and black beans;
Ceviche (shrimp or fish) - chunks of avocado, lime soaked slivered red onion;
Fire roasted chicken - fire roasted corn, cotija cheese and a lime/crema dressing;
Flank steak with seared fajita veggies (onion, tomato, peppers).
We usually use ground beef and/or chicken for nachos.. The standard nacho toppings I use are: lettuce, onion (I serve a mix of white, red and green because it's pretty), tomato, fresh jalapeños and serranos (diced), various salsas I make, grated cheeses, pico, guacamole, limes, diced cilantro, pickled jalapeños and pinto beans. For large parties, I cheat and use canned queso. For just our family, I make my own queso.
