Please share your easiest delicious cookie recipe! I'm in a cookie exchange and need to make 10 dozen cookies for next Saturday. I have to make them in someone else's house (don't want to make them early as they may get stale), so the easier the better although they do have to be baked; no no bakes.

These are amazing, I usually bring these to cookie exchanges.  Scotch Bars 1 C. margarine or butter, softened 1/2 C. brown sugar, packed 1/2 C. white sugar 1 tsp. vanilla 1 egg 1 C. flour 1 C. oats 12 oz. chocolate chips chopped walnuts or sliced almonds Cream butter and sugars. Add egg and vanilla. Beat until fluffy. Mix in flour and oats. Spread mixture 3/8" thick on cookie sheet (~10" x 15") Bake 20-25 minutes @ 325. While still hot, sprinkle on chocolate chips. Let stand and spread. Sprinkle chopped nuts on top.

Not a traditional cookie, more like a shortbread bar but pretty much the easiest thing I have ever made and by that I mean I put it together in about 5 minutes. I made them for the first time the other night and I liked them just fine but the boy almost swooned and said they were the best thing ever. I used a hand mixer because I didn't want to deal with the stand mixer, but it was a really thick dough and I will use the stand mixer next time. It was almost too much for the hand mixer. Easiest cookie recipe ever (I think I got it from the Peas way back):
1 box spice cake mix 1 can pumpkin 2 c chocolate chips
Mix cake mix with pumpkin. Fold in chocolate chips (I don't even use a measuring cup; I just fill the empty pumpkin can.) Drop by spoonfuls onto cookie sheet and bake at 350 approximately 20 minutes.

Shortbread Cookies/ Chocolate Nougat Shortbread - Anna Olsen 1 cup unsalted butter at room temperature ½ cup plus 2 Tbsp icing sugar ¼ cup cornstarch or rice flour 1 ½ cup all purpose flour ½ tsp salt 1 tsp vanilla extract
1 bar of chocolate nougat bar (Toblerone)
DIRECTIONS Preheat oven to 350 °F. Beat butter until light and fluffy. Sift in icing sugar and beat again until fluffy, scraping down sides of the bowl often. Sift in cornstarch or rice flour and blend in.
Sift in all purpose flour and salt and mix until dough comes together (it will be soft). Stir in vanilla. Chop up a regular sized Toblerone bar. Spoon a large teaspoonful of cookie dough and roll into a round ball, slightly press the ball down and then press the tops of the cookies into the chocolate nougat finely chopped pieces.
Place onto an un-greased cookie sheet, leaving 2inches between cookies and bake for 18 to 20 minutes, until bottoms brown lightly. Remove from cookie sheet to cool.

These look good and sound easy to make. I'm going to try them but I have a question do you use old fashioned oats or quick cook oats?

These are easy, and one recipe makes 8 dozen! You don't need to chill the dough or anything. We flatten the balls slightly with the bottom of a glass dipped in sugar once they're on the pan. DH loves them which is why I always have to make a double batch of these at Christmas. They melt in your mouth. Powdered Sugar Cookies--Allrecipes.com
To save time and mess, can you mix up your dough at home and bake it there? That's what we do. My brother mixes up his dough at home, dumps each kind into a big (labeled) ziplock bag and puts it in the fridge until baking day and I do the same. Then he comes to my house and we bake everything in my double ovens one after the other.

These are really good. One of the things I like about making spritz cookies is that they don't spread when you bake them so you can put a lot of them on one baking sheet.
Gingerbread Spritz
2/3 c. brown sugar 1 c. butter 1 egg 3 c. flour 1/2 teas. salt 1/2 teas. allspice 1/2 teas. cloves 1/2 teas. cinnamon 1/2 teas. ginger
Cream together sugar, butter and egg. Add remaining ingredients and mix until smooth. Place dough in cookie press. Using the desired disk, press shapes onto a cool, ungreased cookie sheet. Bake at 375 for 8-10 minutes or until lightly browned

Sort of more a treat than a cookie, but everybody loves these Rolo candy pretzel delights.
I use those small pretzel snaps as the base. Then you put an unwrapped rolo candy on top of each one. You bake them on foil 350 for about 3 minutes, then you take them out of the oven and press a pecan half (flat side down) into the top of each one.
3 minutes. 3 ingredients. Done!
(If you don't like nuts you can top with another pretzel)

This isn't a cookie but super easy and delicious!
Preheat oven to 375
Line 11"x15" jelly roll pan with foil, then layer the pan with saltine crackers.
Bring to a boil 1 cup of butter & 1 cup of brown sugar. Boil EXACTLY 3 minutes then pour over the crackers.
Place pan in preheated oven for 5 to 15 minutes or until the crackers float.
Take out of oven and generously sprinkle chocolate chips over the top and smooth them out with a knife. Top with chopped nuts.
After it has completely cooled, break into pieces.

Another easy cookie using a cake box mix that people seem to really like:
1 Box dark chocolate cake mix 2 eggs 1/2 cup oil 1/2 package of Andes peppermint crunch chips
Mix the cake mix, eggs and oil until blended. Stir in chips.
Bake at 350 degrees for about 8-10 minutes depending on the size of the cookies. I sometimes frost and add some more of the peppermint chips on top as sprinkles.
