I often make quesadillas with it. Just corn tortillas and some cheese.
I recently had chili at my brother's house, and they put their leftover pulled pork in the chili. It sounded odd to me at first, but it was sooooo tasty. It was normal chili with onions, peppers, ground beef, chili powder, etc, and the leftover shredded pork.
I also had Brunswick stew for the first time at a restaurant in Atlanta, and it was delicious. Next time I have leftover pork, I'm going to make it.
