We've got quite a bit of leftover shredded pork (not BBQ sauce was added as we use it on the side)
What ideas for using up the leftovers do you all have?

Heat up some black beans and mix in the pork. Serve it over yellow rice (I get the Vigo brand).

Shepards pie... pork on bottom
Some can or frozen veggies...corn, grn beans, peas n carrots top with mashed potatoes (instant works just fine)
Stick it in oven.. add some cheese... nothing really needs to cook... just reheat...

Okay hear me out because at first I thought this sounded weird until I tried it at Harry Caray’s restaurant in Chicago. Add it to homemade Mac-n-Cheese. I think they also had shredded chicken in with it too but when we make it at home we just use shredded pork with bbq sauce.

I usually freeze some if we have a lot leftover but we also use it to:
* top on Mac n cheese and drizzle with BBQ sauce
*Egg Roll Bowls: shred cabbage and carrots (or get a plain slaw mix), cook the cabbage and carrots in a little chicken stock, add in the leftover pork to warm it up. Mix in with an Asian seasoning of your choice. Top with scallions or wonton chips --whatever you like. (Wegmans makes a great Thai Peanut sauce that we stock up on when we visit DD as sadly our part of NY isn't in Wegmans territory. But I digress.)

Pork tostadas. I get crunchy tostada shells, put on a layer of refried black beans, sliced avocado, pork, topped with heated up jalapeño peach jam, queso fresco and cilantro. Yum!

I’m making pozole soup .
I’m not following a particular recipe, just putting in what tastes good that’s on hand, loosely based on what pozole is.
I’ll sauté a sweet onion, add chicken stock, a jar of salsa verde, add 2 cans of hominy (can also use white sweet corn), a chopped fresh jalapeño, cubed cooked potatoes—either homemade or canned, (I have also used white canned beans instead), a squeeze of lime, and depending on the taste as it heats up, I might add more salt, pepper, lime zest, cilantro…
It’s a delicious warming soup.

Oh and if you have the makings for a Cuban sandwich—do it!
I do Cubans and grilled cheese in big quantities for winter get togethers with family and friend and they are a hit! Serve with chips and soup.
My version:
Slice open, spread with Mayo or butter and toast a good baguette, French bread (slightly hollowed out) or hoagie rolls.
We make a Mayo/sweet mustard as a sauce and generously spread on both sides of the toasted roll.
Layer sides with thinly sliced ham, pulled pork, and Swiss or Havarti cheese.
Place in super hot oven yo melt cheese (it goes faster if your pork is already hot)
Top with thinly sliced dill pickles. And close sandwiches. Slice diagonal and enjoy!
