I actually prefer queso on nachos because melted grated cheese hardens so quickly and all the chips stick together (the nucleus!) And I like the flavour of queso better too. I also like banana peppers on top…they’re nice and zingy and not as spicy as jalapeños.
So many ways to enjoy nachos. 😉

Did the American Chinese food claim to be authentic? Then the eye rolling would be understandable, but it would still be rude. I don't care how people in Texas make nachos. I do care that people in Texas think they get to dictate the definition of nachos. Do people from Italy get to define pizza and declare all other pizza styles non pizzas? If you as a Texas pea described your idea of, for example, a bagel, I bet the New York peas would not have the same description. Does that mean that when you eat a bagel in Texas you aren't actually eating a bagel? Maybe it just means that different regions and different people prepare various foods in different styles and dictating and defining shut down a conversation and then none of us learn anything about other people. I think you’re getting too worked up about nachos. And yes, people from Italy do often give a side eye to what we consider pizza here. No one is stopping anyone from eating it. Just as no one is stopping you from eating what you like. Why doesn’t it work both ways - why don’t you need to learn about what people from Texas consider real nachos? I'm not worked up at all. I'm not laying claim to an entire food style. I'm not saying other people's food choices give me nightmares. And I am learning about people from Texas. The difference is that I can learn without passing judgement.

I love just putting some chips on a baking tray and covering them with shredded cheese and melting them in the oven, then dipping them in sour cream. I also like chips with taco meat and queso poured over. Sometimes I make the queso, sometimes I pour it out of a jar. I'm not picky. LOL I also love using leftover shredded pork with melted colby jack cheese and barbeque sauce. I will eat nachos any way I can with whatever meat, cheese and chip combo I have on hand. I do not like to order them in restaurants because I can't stand how the chips at the bottom get soggy. I am sure that no way I eat them is authentic TexMex, but I don't care. LOL Although the first time I had pulled pork with cheese and barbeque sauce was at a restaurant in San Antonio, so does that count? And they were on homemade potato chips, not tortilla chips. LOL

I've never heard of walking tacos. I don't think they're a thing in the PNW? Off to google. Slit open an individual bag of Fritos or Doritos, add taco meat and any toppings youd like and eat with a fork or spoon (or spork). Often found at school sporting events and fundraisers. Not something you just make at home. Or at least I dont know anyone who does! Definitely not anything I have ever heard of or seen in the PNW. I think maybe my husband does something like this while camping, but I think he uses chili.

Next time I’ll think about buying a small block instead and freezing in smaller amounts. Wow, I go through 8 ounces in a week just myself (at least!) I could go through 8 ounces a day by myself! (But I usually end up sharing with a kid or some dogs, so…) I don’t have the time or the patience to shred my own cheese, mostly because I don’t want to mess with my food processor which is a huge PITA to clean. I buy the Supremo Mexican Quesadilla shredded cheese for melting from Costco and find it does the job quite nicely. I generally put a single layer of chips on my plate, a layer of cheese, another single layer of chips and more cheese. Microwave for exactly 50 seconds, any less and the cheese doesn’t totally melt and any more than that and it burns. I only put other stuff on it if we have leftover taco fixings and there’s only enough for one taco.

I'm not sure why people from Texas have such strong feelings about how people from other parts of the country prepare food. Your version is different and that is fine. The OP listed 3 restaurants that serve nachos that she likes. 2 out of the 3 list queso as a topping on their nachos. It doesn't matter if that's not how it's done in Texas, that's what the OP likes. But it’s OUR food. Tex-Mex food. Would you be upset at someone from China rolling their eyes at American Chinese food? Naw, not at all. I've been eating my family's version of 'nachos' as far back as I can remember, and we are in So Cal. Our version is thicker home made tortilla chips, a sprinkling of Monterrey Jack cheese, and jalapenos. Each tortilla chips was separate and had the cheese distributed equally. We ate them as fast as my mom could take them out of the oven. Now I'm not opposed to eating restaurant style nachos at places like Chilis or whatever, but I can't stand when they use 'taco flavor' spiced anything on them, so I'm super picky. Nachos are an American dish and any way anyone wants to make or eat them is VERY COOL with me. Its just dumb to argue over this dish, IDC if it originated in Mexcio, who cares. Eat. Food is good. Just don't put mayo in the guacamole. Say it with me.."wah, cah, mo leh". Not GWAK.
