Guacamole is a Spanish word, you do not pronounce the hard g sound. You’re gonna need to come up here and explain how I’m supposed to be pronouncing my last name. I'll come, too! What's for dinner?

I just 'know' which is which I guess lol. It’s okay, I’m sure the “gu” sound is pronounced differently from my “gr.” It just made me laugh.

For those who want to get way in the weeds. The "hard" g is softer in Spanish anyway and in some combinations has become softer and softer to essentially disappear. Although even for guacamole a very soft, soft g wouldn't be terrible. www.thoughtco.com/is-the-g-in-guacamole-silent-3079533And yes I am definitely adding guacamole to my enchiladas tonight after this discussion ETA and my mother definitely puts a breath sound (not hard g) before the acamole so disagree with oh yvonne that it completely silent - but she's from New Mexico so perhaps we're getting to regional differences

Wow, I go through 8 ounces in a week just myself (at least!) I know, I’m not a cheese girl. I mainly use a bit on top of a stuffed potato skin recipe that I like. 🤷🏼♀️ Cheese around my place always goes bad. I’ve got 2-3 different really nice ones in the fridge leftover from “the holidays that never happened” that should probably be tossed. Just so y’all don’t think me a total freak, I am a big chocoholic 😁 Ohhh…I love potato skins, would love the recipe. Please.

My son is dating a gal from Mexico. She came over last Sunday to make an authentic Mexican meal with me. We made her families favorite version of nachos, though she called them chilaquiles. She bought freshly made corn tortillas from a Mexican grocery store. We cut them into pieces and fried them in a pan of oil. We made two sauces--one red sauce and a mole sauce that had cocoa in it. We coated the fried pieces of tortillas in the sauce, then piled them up with shredded chicken, cotija cheese, Mexican crema, onions, and homemade salsa (that was soooo freaking spicy it about melted my tongue!). I thought the chips would become soggy quickly, but they didn't. No one else here liked the mole sauce, but that one was my favorite. It was all delicious, though definitely not our usual "cover some tostitos with taco meat and cheese on a plate and cook in the microwave" nachos.

I don’t cook per se but I do have a cookbook called Nachos for Dinner that I recommend, as someone who can at least arrange things on a tray and stick them in the oven .

Decades ago a dinner invitation with friends resulted in our family’s favorite way of making nachos.
She spread refried beans on her heavy pizza sheet, then spread those yummy green chiles( out of a can, not hot ), over the beans. Then stood tortilla chips up in the beans. After that she spread shredded cheese over the chips, and topped with sliced olives.
The whole thing went in the oven and baked until the cheese was melted and the chips wonderfully crisped up. Serving was easy, you just scooped with a pancake turner a section with the beans nicely cooked through and flavored by the chiles, each chip crisp and coated with cheese. Some liked salsa poured over theirs, sometimes we had taco meat to sprinkle over it. But standing the chips up rather than laying them down made all the difference.
