Please share your tips for nachos my favorites come from Ted’s Montana grill or BJ’s Brewhouse or even Moe’s but I can’t get the cheese right at home.

I like to try to replicate what a local restaurant calls "crazy nachoes" The chip is loaded with browned HB meat, refried beans, cheese and a Jalapano slice (for those who can bear the heat). A "layer" of each item....

Here is what google says about the cheese:
A Monterey Jack cheese will have the oozy-melty quality sought after in the best nachos, while a standard sharp cheddar will offer a little tang.

I always use some of the jarred white queso Tostitos makes. It has the ooey gooey quality I like and helps the other toppings stick to the chips.

Are you trying to do it in the microwave at home?
The cheese melts better in the oven or on a grill.

Oh and I just use the Kraft, shredded “Mexican blend” cheese.

Shred your own cheese. I do a combo of pepper jack and medium cheddar, 1 cup in total. Melt 2 tbsp butter over medium low heat. Once melted, add in 2 tbsp flour (I used GF). Stir constantly and cook for 1-2 min. I like mine to get golden brown. Slowly pour in 1 cup cold milk and whisk until thick. Add in the 1 cup cheese. Mix well until all melted and combined. I then turn off the heat and add in pepper, cumin, my favorite salsa, and lime juice to taste.

For sure, you need to shred your own cheese.
Do not buy shredded cheese. It has a coating on it to keep it from clumping, but it also keeps it from melting well.
Shred your own cheese and make the nachos in the oven.

Thanks White american cheese (sliced from your deli counter, probably) PLUS half-n-half, melted together on stove top. Stir frequently to avoid bottom burning. Sometimes I add green chiles. I use about 4 ounces of cheese for two people and 4T half and half. (That's my starting ratio.) If you use chiles, you may want to start with one less T of half and half, since the chiles are a little liquidy.

I like to mix Doritos and Tostitos on a cookie sheet and then top with seasoned beef mixed with refried beans and cheese. Then once out of the oven, onions, salsa, guac, jalapenos, lettuce, and sour cream. (For the record, i top different sections with the toppings each person likes.)
I dont like queso, so I use shredded cheese, but I usually have some purchased queso for DH.

I usually get the canned sauce from Smart & Final (formerly the Montecito brand, but I think it’s now First Street), then add some cheddar and jalapeño juice while it’s cooking.

We do what I call taco plate. Bottom layer of cream cheese and sour cream mixed. Next salsa or taco sauce. Then the taco meat, lettuce, tomatoes, black olives, cheese, cilantro or whatever you want on there. Eat it by scooping it up with taco chips.

There is a local restaurant who steams their nachos. We do a take off at home. Doritos on a cookie sheet, top with pepper jack cheese slices and top with jalapeno slices. These are baked in the oven for 10 minutes or so on 325. The chips get warm and toasty.
Before this I would broil them and burn them every.single.time.

We always build our nachos individually on our plates. We put tortilla chips in a single layer, then put on whatever our meat is (I do the meatless crumbles stuff) then put cheese on it. Melt in microwave for 40-50 seconds. Then we add whatever toppings we like (black beans, corn, tomatoes, whatever you want). I put the sour cream in a piping bag and put it on in ribbons so each nacho gets the same amount of sour cream. Then I top with chopped scallions.
If we had a lot of people eating nachos, we put the tortilla chips, meat and cheese on a cookie sheet and melt in the oven all at once. then everyone builds their own nachos.

I always fry a fast-fry steak with tex mex seasoning then cut it into thin strips. I heat the chips in the oven. I used to make my own queso but it wasn't that different from tostitos in a jar so I just use that plus shred some cheddar and jack cheese, and also some canned jalapeno pepper slices. I go in layers - chips, queso, steak, peppers, shredded cheese, then another layer. I put the whole thing under the broiler for a minute and serve guac on the side. It's dh's favourite thing.

I wouldn't try that because I don't like Doritos, but I have heard of using potato chips. And I've made totchos with tater tots instead of any kind of chip.

I mainly use a bit on top of a stuffed potato skin recipe that I like. 🤷🏼♀️ Cheese around my place always goes bad. I’ve got 2-3 different really nice ones in the fridge leftover from “the holidays that never happened” that should probably be tossed. Just so y’all don’t think me a total freak, I am a big chocoholic 😁
