I was cleaning out my baking supplies and I have two cans of cocoa powder from Trader Joe's. I don't even know why. I even threw away a can of Hershey's cocoa powder that expired a couple of years ago. Do you have any great recipes that use cocoa powder? Please, don't say brownies. I have a brownie recipe that I love. It uses Baker's unsweetened baking squares.
Also, can dark brown sugar be used in place of light brown sugar? (I suppose I should Google that one.)

I routinely make recipes that use cocoa powder...here are a couple of anxious household favorites: First, don't let the name fool you...it is NOT a brownie at all. LOL brownie puddingSecondly, similar to the first, but different. chocolate cobbler
I could probably come up with more, but I will need a bit of time to figure out our favorite ones...

I also wanted to add that I have a cookie recipe that my grandmother gave me that used baking chocolate and she had a note that said if you wanted you could use cocoa powder and some extra butter as a substitute.
I think you can probably substitute it into many recipes that call for baking chocolate. I am not sure of the amounts off the top of my head and I am not at home, but I am sure there is someplace/someone that will have this information.

I like the cookie recipe on the back of reese's peanut butter chips. Cocoa powder is used in the dough and it comes out as a cookie version of the candy.

Rum balls... Don't have a great recipe to share - I've been trying news ones looking for The One myself... There's two kinds of cocoa powder so just make sure you're using the one called for - can't remember which ones the rumballs usuall call for...

This is a favorite of ours:
Easy Chocolate Cake
2 tablespoons (25 mL) espresso powder or instant coffee granules 1/2 cup (125mL) boiling water 2 1/4 cups (550mL) all-purpose flour 2 cups (500 mL) granulated sugar 3/4 cup (175 mL) unsweetened cocoa powder, sifted 1 1/2 teaspoon (7 mL) each baking powder and baking soda 1 teaspoon (5 mL) salt 1 3/4 cups (425 mL buttermilk 2 eggs, beaten 1/4 cup (50 mL) vegetable oil 2 teaspoons (10 mL) vanilla Chocolate icing
Dissolve espresso powder in boiling water; let cool. Grease a 13-by-9 inch baking dish with nonstick cooking spray, line bottom with waxed paper.
In large bowl, mix flour, sugar, cocoa, baking powder, baking soda and salt. Beat in buttermilk, eggs, oil, vanilla and espresso mixture; beat at medium speed for 2 minutes.
Pour into prepared pan. Bake in 350º F (180º C) oven for 40 to 45 minutes or until top springs back when lightly touched. Let cool in pan on rack for 20 minuted. Remove from pan; let cool completely on rack. Spread with chocolate icing.
Yield: 16 servings.

Not sure how they taste - the rum is sorta my favourite part

I love making this cake because you don't even need eggs in the pantry. I make a Bundt cake and stab out a bunch of times with a skewer and them shortly pour half a cup of coconut rum to a cup of coconut rum on it and let it sit for a day or so. Delicious and moist! Yes, you can interchange dark brown and light brown sugar.
And you can use cocoa powder plus a little butter/oil in place of baking chocolate in pretty much any recipe.
The recipes posted so far all sounds great! In going to finally try those "waffles" too. Had them pinned forever, it's about time!

Slice a banana and put it in a ziploc bag. Put in a tablespoon or so of cocoa powder and shake it. Yummmm!!!!

I don't ever buy the unsweetened chocolate squares since they are so expensive ( especially now since they cut the size of the package in half and it costs almost the same!), I use 3 tablespoons of cocoa powder and 1 tablespoon of oil for each oz of unsweetened chocolate. It works perfectly!
