Good morning.
Today I have my voice lesson. I am looking fwd to it and not nervous this time. I'm just having fun w/this.
I'm not sure what to cook for dinner. I might do tacos or chicken tarragon. Hmmm...

What do you have planned for this week?
I have a much needed haircut this week. When I start to look like Thing from the Adam's Family it's time for the hair dresser. Also at some point we're gonna do some fun errands. Thurs. I think I have a get together w/my mom friends.

Happy Monday everyone! I am slow roasting beef,potatoes and carrots for dinner and fixing parmesan noodles later to add to the meal. Later in the week my oldest grandson is coming to stay a few days with us. Still working outside in the yard and the outside area cleaning hopefully will get it done this week.

Good Morning! scrapmaven I am glad you are looking forward to your lesson. My parents arrive today. Not sure how long they will be here so my week will be all kind of crazy I am sure. It is a dreary day here. The temps are not supposed to get out of the 60's. By Friday though they will be in the 90's. It was a busy, fun weekend. Lots of baseball games. All the kids and grandkids plus FIL came over last night to celebrate DD birthday. Fixing a pork loin for dinner. I have enough sides leftover to go along with the meat so it will be an easy dinner. Hope everyone has a great start to your week!

I once heard this quote that I can't remember who said it but it is "anything worth doing, is worth doing badly." I agree 100%. I am never going to be the best crocheter or quilter but I love doing that kind of stuff. What do you have planned for this week? I have a relatively low key week. At work, I'll be putting together expense reviews which is just tedious. But I do have a job interview tomorrow morning. So we shall see how that goes. It is a step back for me. But it would put me in a place with much more opportunity for upward movement. So there is career trajectory there. Other than that, I need to get on my scrapbooking. My dining room table is filled with stuff. So I'm hoping to work on that today some. I bought myself a small Crock-Pot. I was able to soak dry black beans last night and then this morning, put them in the crock with onions and jalapenos and a variety of spices. Can't wait to make a Mexican inspired bowl tonight with tomatoes, corn, avocado and rice. There will be a red pepper jam that I'm going to make, as well as a vegan queso. Not sure how that's going to taste, but I thought it was worth trying. Either way, I'm pretty excited about this dinner. And my cooking beans smell so good. Love to all!

Good morning everyone! Hope everyone is doing well...I try to keep up most days even though I haven't been posting. Sending love and comfort to those who need it.
It's chilly today, but we've had great weather recently...happy to be outside taking care of plants and flowers, pmaying with pups and reading in the fresh air. Off til my next class starts the first week of July and loving it. I'm reading about a book every day and have joined 2 book clubs. I have been SO ready for this break.
Tacos for dinner today! I have a pork roast in the crockpot with pineapple and spices for Al Pastor and some ground turkey defrosting for what I call "white girl tacos". I grew up eating tacos but never knew most authentic tacos did not use ground beef and pork. Nick is not a fan so we have grilled shrimp tacos, a great chicken recipe I got from a friend, arrachera, and carnitas. But I still have a soft spot for ground meat in tacos. I like pork or beef but often sub ground turkey to make it more healthy. I'll make a Sriracha slaw and pick up some pico de gallo...we like the tropical one with mango and pineapple but the regular one is fine if that's all they have. And sour cream and cilantro.
I had the weirdest most delicious fusion sort of tacos at a restaurant that has since closed, so now I have recreated it at home. Flour tortillas, grilled shrimp, spicy slaw, tropical pico/pineapple salsa, and Thai peanut sauce (?!?!?!?). Crazy, but it is freaking delicious! Need to put that in the plan soon. When we go camping I get the premade skewers of shrimp and throw the on the grill...so easy. At home I will do it myself with my own seasoning. But aldis citrus shrimp skewers are good and simple for camping.
What kind of tacos do you like? Toppings?

I do roasted black bean tacos.
we ended up doing takeout last night as everyone got home late. salad, strawberries to finish, I had shredded chicken, dh had hawaiian pizza and dd had crispy chicken cutlet.
more leftovers tonight.

Wow, the weekend went by entirely too fast. I've got a slow week at work but I'm working on social posting which I like.
Dinner tonight will be a chicken casserole because I have chicken to use up. I put in my grocery order for the week this morning so I'll be picking that up at lunch time. The pandemic was a nightmare but I sure like the things that came out of it like grocery and wine pickup. I never have to go into the store and can easily come up with $35 worth of groceries to make it free.

What kind of tacos do you like? Toppings? I have yet to meet a taco I don't like. But I will say that I don't like pineapple at all. So I would reject a taco made with a pineapple salsa.

It is a dreary day here. The temps are not supposed to get out of the 60's. It's sunny here but the high is 69 for today. The past two days we've had like a high of 72. In my mind, that is about as perfect as summer weather can get. I love it.

Happy Monday! They are currently installing the generator so I am taking care of chores around the house today while waiting on them to shut the power down for about an hour. Once I get chores done I'll be working in my sewing room. When not doing either of those, I'm running outside to chase away a huge flock of pigeons that have decided they like my yard! They seem to do this every few years and are driving me nuts. Hopefully they move on quickly as they are super messy in large numbers. Fairly low key week here. DH has his first radiation treatment this afternoon, with one each day until Friday this week. Hopefully that doesn't wipe him out. For me it's self-care week with a facial tomorrow and hair on Wed. Working on prioritizing that each month. Friday we have an arborist coming to look at the leaning river birch the DH is convinced can be saved. First guy says no so I guess DH is going to keep looking until he finds someone who agrees with him. Dinner will be salad and probably some broiled fish. Hope everyone has a good week. What kind of tacos do you like? Toppings? Texas girl here so I eat most any taco, just no super hot salsa or spices please. Shrimp & pineapple is a good one. My absolute favorite texmex food though is tamales and I'll always order those over a taco when I have the opportunity.

Good evening. Today has been fairly quiet here. I messaged DS this morning to check with him the suggestion he gave me at Easter for Lucia’s birthday present. Thankfully, it’s still on, so I didn’t need plan B. Like Sophia, she will be starting dance classes in July, so I said I’d pay for the first 6 months. Otherwise , I’d have been calling DS2 and getting him to buy something to give her from me. Of course, after I messaged, I got a video call from Sophia, who told me all about her day off today (it’s King’s Birthday in their state today) - she wasn’t impressed as they just stayed home and cleaned up and did laundry! She also told me she had done most of the cooking for dinner, which was chickpea soup. Lucia then entertained me by making the sounds of all the animals they saw at the zoo yesterday.
This afternoon my hedge trimmer man came, so now the front of the yard looks lovely. He said when he comes back in October, he’ll trim it into shape for winter, so the snow won’t damage it as much.
DH is out for dinner with a group of colleagues visiting from all over, so I am going to have rechauffe of the chicken casserole we had last night.

I'm with jeremysgirl , 72 is perfect weather. The humidity is coming back this week, so I will enjoy the couple more days of no AC and nice nights. Dinner is meatball subs that I had simmering yesterday so they should be yummy. I even made my own sauce...minus using canned tomatoes instead of fresh. New wall for shower has a date of June 28th...I guess we will work on everything else that we need to before it gets here and that should be one of the last things we need to do. SO's uncle is coming over tonight to help him look at what needs to be done to redirect the tub plumbing to bring that up to code and move the vanity plumbing over to fit the new vanity. Then we can start drywalling the walls. We have the ceiling done, but a miscalculation on the fan height has us needing to take down one sheet, drop down the fan, then put it back up. It's this kind of fun that makes home reno FUN! Oh, what I like, I am a basic girl, lettuce, tomatoes, cheese, and sour cream on my soft flour tortilla. I do make "real" taco meat from chuck roast that I also enjoy, but ground beef is my go to.

linda I love a good breakfast for dinner meal tmarschall I rarely make tacos at home. No one likes them the way I do. There is a Mexican restaurant next to my office that I eat at for lunch. Their tacos are at the top of my list to order. jeremysgirl I know we are opposite for weather. I always tell DH I live too far North...

It's all about the lettuce and salsa. Pineapple would make it even better. Then again, I like pineapple on pizza. Oh no, jeremysgirl. Went into the city this morning. DH wanted to fill up on gas for his road trip later this week. I bought an insulated water bottle for myself and my bestie to take on our cruise. I looked online because I wanted to personalize them with our names but the shipping was almost as much as the tumblers. I’m going to try and find someone local who has a laser printer to put our names on them.
We grabbed some groceries and are now home for the rest of the day.
Winter has returned here. It’s 10 degrees and cloudy. I had to wear pants today for the first time in months.
Supper will be leftover pulled pork fries for me and Hamnurger Helper for DH.

I love tamales too, but once I had them fresh out of the steamer it's hard to eat anything else. Nick and I usually make them on Christmas or NY's and stock the freezer. Now I want spicy pork tamales with sour cream!
I'll settle for what we have going though...it's easy and Nick will be happy with the leftovers for lunch.
The best "topping" for me is a killer hot sauce/salsa either from our favorite mom and pop Mexican place here or the Tortas place in Indy. Soooooo hot but sooooo good. I'd eat that stuff on a shoe!
Funny talking about what I grew up with...I always ate flour tortillas, but I didn't "cook" them. I still like a chewy tortilla out of the bag for a snack. But Nick was horrified, so now I toast them on the stove burner. I like corn tortillas and hard shells too, but the BEST is when I make them fresh. It's not hard and so worth it. He may get grocery store tortillas today though, bc I have physical therapy this afternoon.

Finally back from the dealership for my oil change. Turns out my battery needed replacing and, of course, the Highlander takes a special battery that costs $330+. It's lasted for over 5 years so I'm not complaining. Dinner might be pizza ETA: I have Crazy Rummy this afternoon. Today’s photos are from Uppsala University in Uppsala, Sweden. The University Main Building is situated in the center of the town, close to the cathedral. It was built in the 1880s and today it is used for lectures, conferences, concerts and academic festivities.

Happy Monday. I am making chicken spaghetti for the new parents tonight. I am going to have a cauliflower pizza. My dh is out of town so simple dinner is whats what!! I got to soak up a lot of baby snugs over the weekend. He is just the best!! I am working around the house and office today. I think I have most of my office work done except for checking the mail. My favorite is fish tacos tmarschall. I get those every time at a restaurant here in town. They have some kind of spicy aioli on them and I LOVE it!! When at home I make a version of your white girl tacos!! Just ground meat, lettuce, cheese, sour cream and hot sauce. YUM!!! I woke up with a terrible migraine so I had to cancel the job I had booked today ... I hated to do it because it was at a school that I really like ... I took meds and now I'm feeling human again ... Not a lot will get accomplished today though! My cleaning lady was here this morning so my place sparkles! Have a great time at your singing lesson scrapmaven! Fingers crossed for you at your job interview soon jeremysgirl! I'm another who prefers "white girl tacos" when I make them at home ... when I eat them in a restaurant I love a good grilled fish taco ... no deep fried fish ones though ...

I like fish tacos too...fried cod, frilled whitefish, whatever. I enjoy the aioli or whatever that is too. I have had bad tacos but not very often. What's not to like? There's a taco for everybody!

Good luck with your interview jeremysgirl ! I love tacos ! There's not a taco that I've had that I don't like. My favorite are ground beef and chicken tacos with tomato, onions, avocado and hot sauce. Hubby and I are celebrating our anniversary today so after I got off work we went out for dinner. We had Chicken Parmigiana with spaghetti and a salad. It was delicious !

Happy Monday all! Working through the todo list. 9 days until vacation - whoop whoop! Chicken quesadillas for dinner. I eat all kinds of tacos - picking a favorite would be like picking a favorite child. My mom's Hispanic, so grew up eating more traditional tacos (although that's a bit misleading as cuisine varies tremendously in different regions of Mexico and Latin/South America - her mom was from New Mexico - so that's "traditional" for me. My daughter was a bit horrified when she went to a friends house and they made ground beef tacos with the seasoning packet and hard shells - she had just never experienced that kind of a taco.

I had a lovely Monday. It was the King’s Birthday long weekend. DDO and DS went to the football, and I had the house to myself from 10am until 7pm. Heaven! I watched a lot of TV, did a lot of scrapping, and threw in a bit of housework.
For dinner I made corned beef in the slow cooker. I’ve never made it before, because DSO hates it. The only time I get to eat it is once in a blue moon when MIL cooked it for me. My dad used to make it for us often.

We've made them a few times now and I can rock the filling, but just can't quite get the masa right. They're good, but more like Costco frozen section vs true homemade tamales.

I'm like feeling so very bad for AussieMeg right now. Usually I am totally jealous of her food but never having a tamale? 😭 Dinner was good. Even the vegan queso. It tasted nice with the beans, but is not something you'd want to scoop up on a tortilla chip and just eat by the spoonful.
