Good Morning.
leannec, did you get some sleep last night? I hope that you got some rest.
jeremysgirl, in case I posted to late, how was your bruschetta?
What is everyone up to today?
I have a quiet day and I'm still very tired, so I'll take it. I've been on a knitting binge.
Dinner will be the tacos that I didn't make last night.
What's on your menu?
May you each have an easy day and let's have some good news, too.

Thanks for asking scrapmaven! I seem to have caught a bug and I was up coughing all night. So far, it's just the coughing but I sound like I'm hacking up a lung and it kept me up most of the night. I've got a slow day at work and nothing to do tonight so I'm going to take it easy and rest. I'm hoping I can nip it in the bud and stave off whatever it is. It doesn't surprise me that I'm sick as I'm sure stress has really lowered my resistance. Dinner tonight will be a homemade hamburger helper dish. I haven't cooked for over a week so I had to place a grocery delivery for some basics. leannec I hope your mom is doing better jeremysgirl I don't like raw tomatoes but bruschetta always looks so good. So does a caprese salad. Makes me wish I like tomatoes. Hope you all have a great day!

so the baseball game was fine last night except the team was losing when we left early.. I was warm though--took my big down parka. the fog is drizzling enough this morning that they measured .02 of rain in my neighborhood so far. it was grateful dead night at the ballpark.. so the kid of one of the band members threw out the first pitch, a cover band played for 15 min and we had a small orchestra playing the national anthem.
dh has a doc appt this morning and I am getting out the backpacking gear from the basement. I am making dinner (lemon chicken and salad) at noon.. as we are going to the grateful dead movie in imax at 5 pm. do you see a pattern here? dh just bought tickets to see the Who in sept.
a day of hauling up and down stairs.

I'm popping in on my phone to share pics. Bruschetta was delicious. My bread is not pretty. Tasted good but the presentation needs some work.

What is everyone up to today? Unfortunately, I am not home sitting in my cold house with a warm blanket and a cat on my lap while I read. I am at work. Boo. The worst part is that I did all my work. Like all of it. LIke reports, done, tracking done. Like I just do not have a single other thing to do. So I sit. And talk to you guys. So there is a silver lining. I'll be sending you a PM scrapmaven. I seem to have caught a bug and I was up coughing all night. So far, it's just the coughing but I sound like I'm hacking up a lung and it kept me up most of the night. The stress of it all probably compromised your immunity. Pamper yourself, rest. I am having bruschetta again tonight for dinner. I think!

Good morning from the slug. I am dragging today. I do think one reason is I was up at 3:45 and I couldn't get back to sleep. I turned on West Wing and hit the sleep timer. I do recall waking up and realizing the TV was off and the room was lighter so I must have gone back out for a bit. But decided at 6:45 to go ahead and call it a night. I posted on FB, jokingly, about how tired I was and I needed a B-12 bag. My GP's wife reached out to me on FB Messenger and told me to call the office and he would give me a shot. She said she has had them from time to time and they really help. I thought I would but then I wonder will I still be up at midnight. I am just going to survive on coffee and cokes today, go to choir and then we are being treated to shakes afterward. Then I am most likely bed bound. I also have some swelling going on so I figure it is just something going on internally that I need to push water for. With all that typed, I probably won't be having dinner. I do have 2 tacos leftover from last night. Gotta say, this is least satisfying recipe from Rainbow Plant Life that I have had. There could be 2 reasons I considered them duds. #1 is I think I got too happy with my pulsing on the beans and I didn't have many whole beans. It looked more like refried beans. #2 I got everything made by 6 and was waiting on my DIL to pop over to grab some things. So they sat for about 45 minutes and weren't crispy any longer. #3 I made and used the Chipotle crema suggested. I am really more of an avocado crema chick. I like the idea of chipotle but then when I actually eat it, it is just off to me. teddyw I don't really know what you could sub for walnuts. There's really so few in there, you might even be able to leave them out. Maybe jeremysgirl will have a suggestion. On the crispy black bean tacos, she is wanting a sub for the walnuts due to a tree allergy. Take your easy day and rest! I seem to have caught a bug and I was up coughing all night Awww gee, I hope it just a summer cold. Drink plenty of fluids. cadoodlebug, cute meme! dh just bought tickets to see the Who I want to say we saw The Who way way back when we were much younger. I could be wrong though. jeremysgirl your bruschetta looked fabulous! I do a variation of where I heat all the same veggies and seasonings up and spread over a piece of sourdough toast. And when I have it, I spread the non-dairy Garlic and Herb Boursin on the toast first, then the cooked stuff. It is so good.

ntsf , does the Who have the same slogan, "I'd step on you to see the Who"? The Giants are sucking major wind. The season started out w/such promise. UGH! It's still the greatest ballpark. Have fun tonight. Ods wants to see the Who. He loves classic rock and plays it in his classroom to help engage the students. He keeps a record player at the ready. He has students who have learned to love Dark Side of the Moon. In fact, ods performed The Great Gig in the Sky for karaoke at a student event. No, he is NOT an opera singer. LOL. He said it earned him made respect from the kids. Tearisci , no doubt that you are ill. Your body is just taking a huge breather. Rest and pamper yourself. Give the love that you gave to your beloved mom to yourself. jeremysgirl , that bruschetta and bread looks so yummy. I can't wait to read your PM. cadoodlebug , enjoy your day! Dinner sounds delicious. naby64, I hope that your swelling goes away and that the shot helps give you energy, but also allows you to get a good night's sleep tonight. You don't need a flare and I'm sending go away vibes to you.

Thanks!! Those sound really good. The seasonings and such. I don't know, it just tastes meaty to me. And while Jeremy wouldn't eat the tacos, he loves that slaw. He put it right on a chicke taco.

He was getting into Keto baked goods and he wanted more bean based meals. He's tall and thin, but he did enjoy the meals on the cruise. So, now he's determined to lose weight. He keeps calling himself fat. The two of you have similar tastebuds. Ok. You can have him. I get to keep the cats.

Yes, I would make that to just have around as a side with other things. Let's talk sloppy joes! I know they have been mentioned here and some laugh at them but sometimes I do crave a sloppy joe. DH always would ask for them. He put a slice of cheese and mustard on his(yuk). I am a purist and just want them on a bun. However, I am watching TT videos of a girl, who is vegan, and stays with the FDA guidelines of $57 a week for groceries. Or something along those lines. Anywho, she made lentil sloppy joes and served it up on white bread. I'll use a brioche bun because I don't have any white bread. Are there any knock it outta the park recipes that anyone has tried?

Well then you take mine because he wants to eat crap that no one with any decent palate wants to eat. So you won't be tempted by his alfredo in a jar. (The horror. YOu should have seen the look on my face when he made it last night.) He'd be a good companion for someone who doesn't eat dinner.

There are two kinds of people...

Good Morning! Tearisci I am sure your body is reacting to all the stress of the past few weeks. Take it easy! jeremysgirl your dinner looks delicious. I couldn't sleep last night so I was up with DH at 6:00. I am antsy. Have some good things going on but it is making me anxious. I had my walk in by 8:00. I've done all the exciting things like wash dishes and pay bills. I am about to start cleaning. I am even going to do the bathrooms. DH usually does those but I need to stay busy. I am going to try and talk DH into a walk on campus this evening. Classes haven't started yet so the 30k+ students haven't taken over the city. It isn't supposed to be nearly as hot today so I figure that would be a perfect evening. Dinner will be something on the grill.

I have been out running errands, Costco where I got a rotisserie chicken which I will use to make chicken ceaser salads for dinner. I needed something easy as I have a platelet donation at 230...which means 3pm before I am actually on the machine, which means I will be home between 530 and 6pm. I also made a trip to the farm stand as the corn at the market was so awful this week I wouldn't spend the money there. So at least what I got today was fresh picked and when I pulled back the tops they were not brown and yucky!
My girl got a clean bill of health yesterday...as good as it can be for a 10 y.o. dog. She spent a couple of days in the ICU 2 weeks ago after vomiting for 12 hours....She gave us quite a scare, and a lot more grey hairs!! We just have to keep an eye on her, as she has a tendency to be...well, a dog and eat things like sticks and any other thing she finds out and about on her walks. Thanks for your good thoughts ❤️

I am antsy. Have some good things going on but it is making me anxious. Well I can't wait to hear what it is. Is it the anticipation of something that going to impact you in a way you'll have to make big changes? Or something that could fall through?

naby64 thank you for the links. If jeremysgirl and I promise to behave can we go out and play after school?

I can remember when my son was about 11 he came home from some church event and asked me if I had ever heard of sloppy joes!! course I knew what they were, but never made them, and still to this day never had them.. belong with boxed mac and cheese in my mind.
I didn't grow up with pizza and other american standards. every meal was made at home--salad, beef in some way, rice or potatoes, peas or corn. period.. year after year..lots of food allergies really limited our food choices.
