Unrelated, anyone have any good recipes that use pinto beans? we add them to chilli - most of our recipes call for kidney beans but I detest those so...pinto it is. I also used to make a pinto beans and kielbasa recipe - let me know it you want it. And of course, refried beans and while I usually use black beans for 'Mexican' dishes (quotes because they are far from authentic, lol), I have used pintos at times also. rymeswithpurplePinto Beans with kielbasa 1 large onion, chopped 1 medium green pepper, chopped 1 Tbsp oil 1/2 lb kielbasa, diced (I just use one package - weight seems to vary by brand) 2 cups cooked great northern beans (or 1 can) 2 cups cooked pinto beans (or 1 can) 1.75 cups stewed tomatoes (or 1 can - I usually skip these) 1.25 cups diced tomatoes (I use 1 can petite diced) 1 cup tomato sauce 1/2 tsp garlic powder 1/4 tsp pepper saute onion and pepper in oil in a dutch oven until tender. Add remaining ingredients and bring to a boil. Reduce heat; cover and simmer until heated through.
