I'm growing basil in my garden and it's getting huge. I use it in sandwiches and soups but I don't know what else to use it for besides making pesto.
Can I freeze or dry it?
What recipes do you use it in?

It doesn't freeze well, but you can make basil infused oil. I also make homemade pizza with lots of basil, and caprese salad with tomatoes and mozzarella. I don't like it dried...doesn't have the same flavor.

I just made a big cold pasta salad with lots of basil from the garden, some lemon juice, red wine vinegar, tomatoes, garlic, etc

I just used it with chicken last night.
Basil, Thyme and Feta Chicken
chicken olive oil garlic clove salt pepper big handful of basil 5-10 stems of thyme 2 oz or so of feta cheese
I take a few tablespoons of olive oil and mix in a minced clove of garlic. Spread it over the chicken (I used chicken breasts) and put in a shallow baking dish or sheet tray. Sprinkle with salt and pepper. Chop up some basil and thyme and sprinkle it over the chicken. Then I added some crumbled feta over the top of that. Bake at 350 until the chicken is done. (Baking time will depend on boneless vs bone-in, thickness of breasts, etc.) For thin boneless, skinless breasts, I baked them for about 30 minutes. Allow up to an hour for large bone in chicken breasts.

I chop it, put about two Tablespoons in each ice cube tray, add water to cover and freeze. When frozen, pop the cubes out and put in a bag in your freezer.
I add the frozen cube to sauce , soup or whatever I want. Works great.

I make this Chicken in Basil Cream Sauce and it is delicious! I also make it as a pasta sauce, and with the leftovers I mix it with some shredded chicken to put in sandwiches. It is one of our favorites at my house. If you make this, just a hint - I add some cornflour (I think you call it cornstarch?) to thicken the sauce. ETA: Eddie-n-Harley, I just noticed your post - it's the same recipe that I posted. It is SO YUMMY - you MUST try it!

My favorite way to use basil is chopped up with some diced fresh tomatoes and balsamic vinegar on toasted sliced baguette.

I make basil chicken in the crockpot.
Add sliced onions, couple chunks of garlic, 2 - 3 chicken breasts, 2 small cans of pear juice but only 1 can of the pears and lots of fresh basil. Cook on high for 4 hours. The last 20 minutes add the 2nd can of pears. The pears will dissolve so that's why I use half at a time.

A friend of mine just posted a pic on Facebook of her dinner, which was basil tofu wraps. She cubed the tofu and cooked it, then used large basil leaves to wrap and eat. No specifi recipe but it looked delicious.

I would chop and freeze it with a little water in ice cube trays. I have bought it like that before at Trader Joe's...making my own would be so much better.
