Ugh, I don't know what my problem is. I'm tired of being fat. But yet I'm tired of constantly trying to eat healthy and exercise. I still have 60 lbs I want to lose but I just can't seem to get out of my own way. I'll do really good for a couple of weeks and then what little progress I've made is gone.
I've been sitting here for 2 hours trying to make out my menu for next week and I have like 2 days filled. I feel like we eat the same things every week, despite me trying to change things up. Add in that we're all pretty picky eaters in our own right so it makes things difficult. We're eating grilled chicken, grilled lean pork, grilled lean steak (occasionally)...more grilled chicken...more grilled chicken...and more grilled stuff. I love grilled food but I feel like that's ALL we eat.
I'm just in a super whiny mood...I must be PMSing.
Ok whine/vent over.

During the summer, it's easier to throw in a meatless day or two. That might be a bit of a change. Also, eat some fresh fruit as a side or garnish.

LOL You're probably right. I think that's why I'm whining. Because people can suggest but there's a pretty good chance at least 2 or 3 people in this house won't eat it. I've been on Pinterest a lot looking at recipes...the ones that call to me are the ones that are disgustingly unhealthy - chicken alfredo, mac and cheese, lasagna, etc. I'll probably just suck it up and eat chicken again all next week.

How about making kabobs to change up your grilling a little? Pizza on the grill? Everyone can make their own. Fish? Shrimp kabobs?
I much prefer grilling in the summer to heating up the kitchen with the oven.
What about sandwich night one night per week? Get a few different types of cold cuts and cheese, slice some tomatoes, prep some romaine leaves, put out condiments and let everyone make their own sandwich. Or, BLT night is always a huge hit when the fresh tomatoes in our garden ripen - we also add avocado to make them even more filling.
Breakfast for dinner night. Omelettes, pancakes or waffles. Fresh fruit salad.

How about light, brothy soups?
Stuff your own pita with a variety of veg & lean meat?
Make a salad base, then offer multiple different toppings (dried cranberries, raisins, hardboiled egg, mandarin oranges, any and all veggies, etc)

If you are into grilling in the summer every night like we are, I would add in kebabs. There are all kinds of chicken kebab recipes on Pinterest. Beef kebabs, prawn kebabs too. A couple of years ago I bought a grilling basket and we grill a lot of vegetables on the bbq in the summer. And if all else fails why not have "main dish salads" for dinner. There are so many chicken salad recipes on Pinterest as well. You could have all the ingredients out and let each person make their own salad, you know for the picky ones .

You've come SO far - everyone is entitled to a pause.
Check out the recipes on Taste of Home and search for their healthy recipes. I have a few of their "Comfort Food Diet" cookbooks and I can testify that I have never made anything in there that has not turned out GREAT. And I'm a super picky eater.

You know what I tell my family - I can't please everyone at every meal. Some meals one person will love it, while another doesn't. I'm not a short-order cook. I will try to accommodate, but chances are, at least one person won't be happy. I agree with checking out Skinnytaste.com. There's some great meal ideas. Every recipe I've cooked from there has turned out great.
Have you tried cutting back on carbs and in place add more veggies? Last night I made carbonara, dh and the boys had it with pasta I had mine with zoodles. Just as filling but less calories (and IMHO tasted much better too).

I agree with looking at SkinnyTaste for ideas. Another one I like is drizzle me skinny on Instagram. (She has a blog it may just be drizzlemeskinny.com, I can't remember!).

I'm not going to give you any suggestions. I'm just going to validate you and commiserate with you. Pardon me while I rant: I'm diabetic and sometimes I feel like it's a leash around my neck. Most of the times I feel in control but this week I don't. I am so tired of food. Tired of planning, shopping, cooking, eating. Tired of it. My blood sugar is good it's just I have to eat on schedule. And I don't want to. So I just find something quick, shove it in my craw and resent the heck out of it the entire time. This week I've just been cooking for my guys, food I can't eat. I'm living off of cottage cheese, eggs and salad this week. I'm sure I'll get through my phase of discontent. Pitching a fit and venting about it really helps though.

Since you do plan your meals in advance, plan one dinner a week that is what you want, not what you need. If the calories/fat/carbs are too over-the-top, then make the portions small. Allow yourself to enjoy it without guilt because this is part of your plan and it will balance out.

My blood sugar is good it's just I have to eat on schedule. And I don't want to. So I just find something quick, shove it in my craw and resent the heck out of it the entire time. This week I've just been cooking for my guys, food I can't eat. I'm living off of cottage cheese, eggs and salad this week. I'm sure I'll get through my phase of discontent. Pitching a fit and venting about it really helps though. Can you take extra insulin to compensate?

Do you want an accountability partner? I totally get where you are coming from... BTDT with the annoying plateau and wanting to just put an end to planning/preparing/eating dinner every day! (EVERY DAY!!!). When I get really stuck and bored with dinner ideas I start brainstorming a list and ask my family for ideas, too -- that doesn't mean I'm catering every night, but we usually come up with some good meal plans that we hadn't eaten for a while and had sort of forgotten about. Or, I go through my Pinterest boards and pick one new recipe to try. Or buy ONE new vegetable/ingredient to try out. Usually one of those things gets me going again! I know you didn't ask for input on any of this, but I'd also suggest you consider an alternative to cooking dinner that doesn't involve pleasing everyone. There are 6 people in my family including 4 kids who are 14 (almost), 11, 3.5, and 1.5 years old. NONE of them like the same things and dislike the same things. My DH eats everything and praises me to the heavens, which is very sweet. But, my point is.. I make healthy dinners and aim to please half of the small humans. The other half can pick and choose what they want from the table, and otherwise can have plain raw vegetables, a peanut butter sandwich (no jam! I'm so mean!), a cheese sandwich, or a scrambled egg. Everyone is offered and takes and tries one bite of everything on the table. I was going crazy trying to balance and keep up with everyone's changing tastes and dislikes.. one week EVERYONE ate spinach, and the next week two kids decided they didn't like it. So, I decided to balance being reasonable with being accommodating. Dinner is the only meal we all eat together and the only meal I prepare regularly (EVERY DAY!!!) for all of us. I started eating no/low carb a few weeks ago, so dinner went no/low carb, too. So far 1/2-3/4 of the kids have enjoyed this, and the remainder are eating vegetables and scrambled eggs and whatever else is on the table that they like. I don't think this is unhealthy, unreasonable, or mean of me. There are one or two nights a week that there is a carb on the table, but for the most part I've been letting/making DH take care of that. I'm not making some of my favourite, most addictive foods and serving it up when I'm choosing not to eat it: I'm just not that strong. You've done such an amazing job so far, making healthy choices! You can do this. You can make the hard choices that make you healthier and happier.

I can eat whatever and however much I want. My problem is making sure I get enough calories in each day. I also don't pre-plan. And no we do not have a grocery store that sells already made food or that is what we would be eating every night. But I would still have to make the decision of what to serve.

You can do this. You can make the hard choices that make you healthier and happier. I think I REALLY need to adapt some of these things you suggested. My 12yo ds is on the spectrum and so he RARELY eats what I make, unless it's hamburgers, hot dogs, french fries or mac and cheese. Add in that he's new to having braces on his teeth and a bite plate, and he's not all that into eating much of anything lately (unless it's ice cream)! The girls are great eaters for the most part but there's stuff they won't eat...like peppers and onions. So like for tonight's dinner of breakfast casserole (hash browns, lean ham, half whole eggs [6] and half just egg whites, cheddar cheese, peppers & onions) - I mixed up half of it poured it into the pan and then added peppers and onions to my and dh's half. I often leave ingredients out and cook separately because they don't like those things. I struggle because as a kid, my parents were very much in the camp of you eat it even if you don't like it...I remember sitting for what felt like forever at the table because they wanted me to finish the mexican corn and I hated it (still can't eat it to this day even though I like all the ingredients that go into it). I swore I'd never do that to my kids. Yet on the other hand, I feel like either you eat it or you don't. LOL I'm really thinking I'm going to start with the pb sandwich thing. If they don't like what we're having, they can have a pb sandwich. It'll be somewhat of a fight because I KNOW they'll ask for cereal or mac and cheese or something else. But I think we'll sit down and discuss that I'm having issues finding healthy stuff that everyone will eat and if you don't like what I'm making, a pb sandwich it is. Thanks for the suggestions!!

Have you tried stir fries? So easy to use whatever you have on hand or whatever you like. Switch them up and serve them over rice noodles, brown rice or spaghetti squash. You can make whatever sauce you like and go a variety of ways with it. And they're quick

It's hard to even make something as simple as a smoothie without pushing the carbs over the limit for a meal.
Sometimes you just want to say screw it.

One thing that gets me going after a slump is a goal; a trip, an outfit, an event...something to look forward to and work towards. I don't like to set an actual "pound"' amount, more of an "I'm going to push myself for X amount of weeks and do the best I can." Is there anything like that you can use?

Make breakfast one night a week! Kids and spouse will love it. Also, enjoy some grilled chicken or fish salads with all kinds of stuff thrown in. My current fave is specialty lettuces, dried fruits, feta cheeses and various dressings.
