Chicken Tacos with tortilla chips and Mexicali dip on the side if anyone wants them. I have tons of cut up veggies and dip, but that really doesn't go with the chicken tacos, so we will hold those until tomorrow!

Well, now i want to go to the fair. And I want lobster.
We are having fish tacos tonight with "killer noodle salad" on the side (rice noodles, grated carrot, garlic, dry roasted peanuts, and lots of cilantro with a dressing of sesame oil, rice wine vinegar, grated lime peel, soy sauce, crushed red pepper flakes, and sugar). The salad has lots of heat so the fish taco with a dollop of nice cool Crema will be the perfect opposite.

mom what is fruit pizza? We are big fruit eaters and love new recipes. Basically a big sugar cookie, with fresh fruit piled up on the top. We will be putting all the fruit that needs to be eaten soon on it (blueberries, blackberries, some kiwi, a couple white peaches and then whatever else I have already. Here is the recipe I use. recipeOh, that looks good - will have to try this later this week! Thanks for the recipe.

Raining and a bit cool here today so we had oven baked pork chops, new potatoes, carrots and peas for dinner with ice cream and fruit for dessert.

I've got some left over cabbage from making cole slaw that I've got to use up so I'm trying a new recipe of Cheesy Cabbage, Potato and Sausage casserole. Peaches from the freezer for dessert.

It's my husband's birthday today and he loves Pioneer Woman's Spicy Italian sauce. I made the sauce with Italian sausage that we'll have over tortellini, salad, and garlic bread. For dessert I made his favorite - banana cream pie. Homemade graham crust, homemade custard filling, and I'll slice bananas on top with whipped cream. My daughter and I licked the custard pot clean!

It's poker night (YAY!) and we are having tacos with chips and salsa. It's one of our poker buddies' birthday tomorrow so I made his favorite - carrot cake with cream cheese frosting - for dessert. Yeah, they really don't go together, but tonight they do! LOL

We had another treasure from the freezer...chicken pot pie! Dh made salads and cooked potatoes to go with it.
Last night's freezer meal turned out to be pretty good for a bag of frozen breaded chicken and a pouch of sauce!!

Any kind of rice noodles (I used the curly Ramen-like kind tonight and reconstituted them in boiling water). 1 cup grated carrot 1/2 cup chopped cilantro 2 cloves minced garlic 3/4 cup dry roasted peanuts (I had honey roasted tonight and that worked fine, too) Juice & grated peel of one lime 1/3 cup rice vinegar 1/2 cup soy sauce 1-1/2 tsp sesame oil 1 tsp crushed red pepper flakes 2 tablespoons sugar
Mix well. Refrigerate at least 2 hours before serving. (Gets even better the next day!)

I have some crumbled bacon to use up, so I'm thinking either quiche or pasta salad. Obviously I haven't bothered to think very hard about it yet. ETA update, I think I'm going to try this BLT macaroni salad recipe. I have all of the ingredients on hand. I'll probably sub Greek yogurt for the sour cream, and add some chopped romaine, besides the spinach. Not that anyone asked but I'm reporting back on the BLT macaroni salad. I'm eating some right now. Delish and especially on such a hot day. I added chopped romaine, green onions, and shredded cheese, and I didn't measure a damn thing so who knows if I did it right. But it tastes good, and there's a lot so I'm taking some to the neighbors who are always giving me stuff from their gardens.

This looks interesting. Please report back on how it tastes! it was really good. I used boneless chicken thighs instead of bone-in. Next time around, I'll use sliced mushrooms not whole but otherwise the recipe was a hit. My youngest didn't like it - but at 8, that's not surprising.
