I first had Panang curry chicken about a year ago at a very good little Thai restaurant that opened here a couple years ago. I immediately loved it and decided I needed to try and recreate it at home. The hardest part was finding the right heat level. I like it very hot but not so hot it masks the flavor. I have a friend who loves all things hot. I seriously don't think you could make anything that she would find too hot. Her DH spends the summer fishing in Alaska so she's been my test subject ![:)](//storage.proboards.com/5645536/images/MNrJDkDuSwqIMVw33MdD.jpg) The Sunday before last I finally nailed it. Panang curry chicken, stir fried vegetables and steam basmati rice. We are taking our niece out to dinner to celebrate her birthday, which was Friday. She wanted Mexican food so we are going to a local place she has never tried before.

DH is grilling some pork burgers and making corn/tomato/avocado salad. I'm probably going to fix some green beans.

I'm making spinach and tofu curry, onion relish, raita, butter naan, dahl, rice biryani, and possibly one other vegetable dish.

We were going to take dd out for her 21st b-day but she asked if I would make her favorite salmon recipe instead. So this morning off to the grocery store I went and picked up salmon for 12. We're having it with rice pilaf, green beans and caprese (sp?) salad. For dessert I am baking a devil's food chocolate cake with whipped cream and strawberries. Tomorrow morning dd#4 heads back to Virginia... boy the long weekend flew by Hope everyone is having a great Sunday!

I am staring at rice, green beans and ground turkey waiting for some kind of inspiration to hit. I haven't cooked any of it yet, but I decided to grab something from various parts of my pantry and then force myself to combine it into something edible. Kind of like a game. ![:laugh:](//storage.proboards.com/5645536/images/Ivm7lm0DayrhoRpwvCeH.jpg) The only thing I know for sure is the dessert-we went yesterday to a pastry type place and I got some kind of chocolate mousse, cheesecake, chocolate cake, chocolate chip with chocolate icing thing (pms and birthdays make for a day of chocolate LOL.) I could only eat half, so the rest is for tonight. (a whole paragraph on the cake should tell you what I really want to eat. ![:P](//storage.proboards.com/5645536/images/OrTI4SBmZ2ZYSFv6ag4f.jpg) )

What lovely sounding meals everyone is having (with the exception of squash). ![:D](//storage.proboards.com/forum/images/smiley/grin.png) I couldn't face cooking so popped a shop bought quiche in the oven - Tesco's Finest Maple Bacon and Gruyere Quiche for UK Peas benefit, it is absolutely delicious! - and we just had mashed potatoes and petit pois with it. I would have liked a second vegetable but unexpectedly had a toddler to mind and did not have the energy or brain power to do any more! Dessert was a big cream choux bun. Hardly the healthiest of meals when you think of the fat in the pastry and the butter and cream I managed to add to the mash, oops.

I'm beyond exhausted. I've been up since 2:30am thanks to a FURIOUS puppy who wanted to let me know loud and clear she was not happy about being crate trained ;-)
Planning to make something easy. As of right now it might be sausage and bean ragout, over rice, with veggies.

gar Ah-So sauce link...and here is the description if you don't want to click the link (in fear of having ads for AhSo sauce appear everywhere you go on the internet for the next week!): The legendary Chinese style sauce that started it all, you’d be hard pressed to find a single home in Boston without a bottle of Ah-So Sauce. Visit any Chinese restaurant on the New England coast and you will find that their Chinese BBQ sauce of choice is Ah-So Original Chinese Style BBQ Sauce. You are probably familiar with the red-glazed spareribs as well as a Chinese BBQ marinade for chicken and pork. This red sticky sauce will give your food a sweet taste with a hint of garlic flavor; the perfect combination for chicken wings! I only learned in the past couple of years that it's not available all over the states. Anyway, after all that, the chicken wings were delicious!!

Spaghetti and meatballs. I've had the meatballs and italian sausage simmering in the sauce for about 4-4 1/2 hours. Should be ready soon. Ice cream for dessert.

I'm not sure- we just returned from a week in the Sierra and our frig is kind of empty. We will most likely go to our very favorite local restaurant and have either spaghetti bolognese or maybe the chicken special.they have great soups of the day so that's always a surprise . We can also get veggies and skip the dessert or starch. Happy Sunday!
