My niece is still here and she requested tacos so we will be having that. She's been a big help since she's been here..she asked if I had any household jobs where she could earn some money so I had her help me organize my pantry which was something I had meant to get to but didn't get it before the baby came. Best $10 I ever spent! Is she saving for something special? Sweet of her to come over.

It is so stinking hot here I don't want to go outside to grill. A Costco run earlier means we have rotisserie chicken, bread and lots of salad stuff for dinner. leannec I am the griller in our family although I make DH change the propane tanks for me. DH takes over if he wants to slow cook and/or use the rotisserie.

Thanks for posting, Leanne. I don't grill and don't own a grill or BBQ since DH died. I'd like to give it a try one of these days but I'm intimidated by the whole thing, too. So we'll see. Dinner last night was pulled pork and a bunch of other related stuff at my sister's with extended family. Then we had breakfast out at the Original Pancake House this morning. So, dinner tonight ... probably leftover pulled pork and pancakes. Oh, Lucy, you should buy a small gas grill. They are so easy these days. The only thing DH does is get the propane tank refilled and attaches it for me. When we were first married, his schedule was so all over the place (real estate) and I never knew when he would be home. Therefore I started the grill (charcoal at the time) and just went ahead and grilled whatever. That was 30+ years ago and I've never given it up. He can grill but I don't mind doing it. That way I can time everything to be ready at the same time. Yeah, I'm anal that way. I know I really should. I'm just a little nervous of those propane tanks but I get that it's irrational. What I'd really like is an electric grill, but then I remember that part of the reason for a grill is that it works when the power goes out. Then I think I should just get a stovetop grill pan and call it a day. Then I get paralyzed and can't make a decision at all.

I've got a pork roast in the crock pot which I am going to shred for pulled pork. I cooked it in Coke Zero (no root beer or Dr. Pepper so I used what we have ), seasoned salt, some garlic salt, and a little liquid smoke. I just stirred together a homemade BBQ sauce, and I have some slaw in the fridge. We'll have corn on the cob and watermelon for dessert.

It's really hot but decided to cook some appetizers. I am trying to clean out the freezer. Not that I am putting a dent in my freezer but at least I am trying. I am heating honey BBQ wings, baked potatoes, taquitos, mini quiche. So not a healthy meal but will do that tomorrow.

Are those the St. Louis ribs? We LOVE them! I'm a grill-master but I do the ribs in the oven because they fall off the bone. I seal them in foil and bake for 4 hours in a 225* oven. I then cut them into 2-3 rib sections and slather on BBQ sauce and broil for a few minutes. Yummy!! ETA: Oh, yeah, about dinner. It's over 100 degrees outside so we're having meatless Sunday ~ fruit salad, potato salad, green salad and crunch vegetable salad. Yes, I think it is those ribs ... I wish I knew that you cook them that long ... I don't have that kind of time tonight so hopefully mine will be done following the directions that Costco gives and then throwing them on the grill for a bit I'm sure they will be fine. Let us know ~ maybe I don't need to have the oven on for 4 hours. ETA: I used to do baby back ribs in the slow cooker. The St. Louis ribs are so much better!

These threads always make me so hungry!
I just had surgery on Tuesday so I've been slowly working my way back to full meals. My ds and his bf are here, which is a treat, so dh is grilling steaks (and honestly he makes the best steaks ANYWHERE), corn on the cob and baked potatoes. We're also having kale salad and my DD baked some cinnamon roll cookies for dessert.
As far as grilling goes, I am inept. I used to grill on the propane grill many years ago with my exdh, but current dh only uses charcoal and he IS the grillmaster. He does the majority of the cooking at our house and I'm A OK with that.

Yesterday I cooked a pot of great northern beans along with kielbasa and biscuits. Had leftovers tonite. I gave my grill away due to "grill fear."

I had a bunch of veggies that needed to be used up so I made a gigantic batch of sauteed zucchini, yellow squash, green and red peppers, grape tomatoes, garlic and Italian chicken sausage. I'm going to be eating it for days, which is fine because we have stretch of really hot weather coming up and I probably won't feel like turning on the stove (no central AC in my house.)

I do all the griing at our house and always have. Gas or charcoal makes no difference to me. I smoke things with hardwoods on the charcoal grill. Different woods give meats a different taste. Gas grills are so easy to use these days.
I digress.........we had take and bake pizza from Kroger.

Our last childless night- ds will be home tomorrow evening! I've missed him and can't wait to see him! Anyway, that's not what you asked! We are having sliders on the grill, a southwestern hot dip mix with Tostitos rolls (bought at Costco, they are tostitos rolled up for easy dipping!), and baked beans (from a can, but dressed up and baked in the oven). Dessert will be banana cake with chocolate frosting from our favorite bakery down the road. When I bought it yesterday, the girl asked if I wanted anything written on it. Since I was just buying it because it is delicious, I went blank. Finally, I said, I don't know what I'd have you write - Eat me? Lol, she laughed and said she could do that. Dh would have cracked up, but I passed. Maybe next time! I giggled like a 12-year-old boy over this. This this being your last night with just the two of you, it would have been funny.

They use the small cans of propane you can buy in the camping section of the department stores or at Lowes/Home Depot. Seriously, so so easy!

It is first full day back from vacation. Since we brought a new kitten home w/us I made an easy dinner. It was Taco Sunday. Kitty had Chicken Soup for the Cat Lovers Soul Kitten food. After a night of sleep deprivation from new kitty(sorry to make an issue of it @carblover443, because I know it's nothing compared to new mommy sleepless nights)I'm just glad I didn't mix up the two dinners.

It is first full day back from vacation. Since we brought a new kitten home w/us I made an easy dinner. It was Taco Sunday. Kitty had Chicken Soup for the Cat Lovers Soul Kitten food.  After a night of sleep deprivation from new kitty(sorry to make an issue of it @carblover443, because I know it's nothing compared to new mommy sleepless nights)I'm just glad I didn't mix up the two dinners. Hey..sleep deprivation is sleep deprivation! Whether it be from human parents or pet parents! DS gave me four consecutive hours of sleep last night...I felt like a new woman today!
