Kathy is away for about a week so I'm taking over the thread in her absence We made a huge Costco run the other day and bought some seasoned pork ribs that I'm going to bake in the oven and then have dh finish on the grill ... because I'm terrified of the grill Anyone else have a grill fear or am I just a loser? Dd#1 requested mashed potatoes so we'll have them as well ... and some to be determined veggie ... What's on your menu tonight?

I have a grill fear because I was never taught how to use one properly. It's too bad, too. That's a great life skill and I am sure I will need it once the zombie apocalypse comes. I am making pork carnitas for dinner. Last time I bought the giant pork shoulder I froze half of it and was impressed by my smarts in that regard. When I make this recipe, I double most of the spice rub (I don't double the salt, and I cut waaaaaaaaay back on cumin because I don't like it). I am going to make Yvonne's mexican rice to go with it, cut up an avocado, get some pico de gallo from Qdoba, shred some monterey jack... it'll be great.

We decided to let someone else do the cooking today and went to a Carvery restaurant - so we had a choice of roast beef, roast gammon, roast pork, turkey, Yorkshire puddings, seven different veg and gravy. Dessert was ice cream....just because they make it there and it's delicious!

DH doesn't have the patience or attention span to cook the food without it coming off the grill like hockey pucks, he's easily distracted by whatever...lol.
So by default many years ago I learned how to grill and love grilling. I BBQ'd burgers yesterday and he's off golfing during supper so he'll eat leftovers while my poor sick child and I will probably have cereal for supper.
I'm so tired of trying to figure out healthy quick meal ideas. I use SkinnyMS website and love it but am so tired of cooking in this awful BC heat. I come to this thread daily for inspiration and have read some great ideas then I end up making the same old thing. Lol.

Our plan is to grill steaks and have corn on the cob with them. We brought home a bunch of garden tomatoes from my Dad's house today and I will cut a couple of them up and eat them with salt...YUM! In actuality, who knows?! We were both really hungry when we were driving home from church, after bringing my Dad home, and I suggested Chinese food. We each had a "luncheon" plate so by dinner time it's anyone's guess as to whether or not either of us will be hungry enough for steak!
As for the bbq...I've never had an issue using a grill of any kind. My Mom taught me to light a charcoal grill when I was about 15 and used to cook dinner because she and Dad got home from work too late to do it. I have used gas grills for years and never had a problem. DH recently bought a little Weber portable gas grill that runs on the small cylinders of propane. That thing is the easiest grill ever to operate! You turn the knob to "on" and push the ignition button once and it's on. It cooks great and is really easy to clean as the cooking grids come right off and can be washed in the sink! If you really want to learn (but why would you if dh is willing to take it on??) I suggest you get dh to teach you! There's nothing to be afraid of unless you're going to pour pure fat on an open flame!!

The grill is my way of getting food on the table without having to do all the work. I don't like the heat or the smoke so I'm content in letting my husband handle the grill. Speaking of which, he's gonna throw some huge burgers and corn on it for our dinner today. I'll fry up some bacon inside and throw together a small side salad to go with it. They can have ice cream for dessert later.

We are having grilled ribs, asparagus and baked potatoes. I do not grill as I am scared of being burned. I am only 5 foot 2 and I swear the handle to get the lid up I have to get on my tip toes and pray I do not get singed. My 6 foot husband does it for me instead. It is my favorite part of summer since I do so little cooking during this time.

I used to grill, but once DH took over, I'm not allowed. My job is to marinate, prep and remind him of cooking times.
We're having grilled lamb chops, baked potatoes and broccoli.

We just got home from the most amazing family vacation in Mexico. The only downside, we were crazy careful about what we ate, which meant no salads (didn't want to eat raw food that had been washed in their water). So, tonight it's napa cabbage asian chicken salad, which will of course (in order to keep the vacation mood alive) include a glass or two of margaritas

Dinner last night was pulled pork and a bunch of other related stuff at my sister's with extended family. Then we had breakfast out at the Original Pancake House this morning. So, dinner tonight ... probably leftover pulled pork and pancakes.

No grilling for us tonight, but when we do grill...DH usually handles it. We have the Big Green Egg and I've never really mastered the art of keeping the temp steady.

My niece is still here and she requested tacos so we will be having that. She's been a big help since she's been here..she asked if I had any household jobs where she could earn some money so I had her help me organize my pantry which was something I had meant to get to but didn't get it before the baby came. Best $10 I ever spent!

Our last childless night- ds will be home tomorrow evening! I've missed him and can't wait to see him! Anyway, that's not what you asked! We are having sliders on the grill, a southwestern hot dip mix with Tostitos rolls (bought at Costco, they are tostitos rolled up for easy dipping!), and baked beans (from a can, but dressed up and baked in the oven). Dessert will be banana cake with chocolate frosting from our favorite bakery down the road. When I bought it yesterday, the girl asked if I wanted anything written on it. Since I was just buying it because it is delicious, I went blank. Finally, I said, I don't know what I'd have you write - Eat me? Lol, she laughed and said she could do that. Dh would have cracked up, but I passed. Maybe next time!

I'm not sure. Dh went to his parent's house to help them get their house ready to be painted and then I will be bringing the boys over after naptime. My father in love is going to paint the exterior next week while he is on vacation. So with that said, I still don't know. Probably get take out of some kind since no one will feel like cooking. I think a tostada sounds good so maybe I talk everyone into getting Mexican food

My DH is the griller around here. He prefers charcoal over gas, so I let him do it. I usually do the prep work - trimming, marinating, whatever. He does the heating and flipping.
Tonight we're having pretzel dogs and homemade fries. I made some jumbo blueberry muffins earlier this afternoon, so that will be dessert.

I'm a grill-master but I do the ribs in the oven because they fall off the bone. I seal them in foil and bake for 4 hours in a 225* oven. I then cut them into 2-3 rib sections and slather on BBQ sauce and broil for a few minutes. Yummy!! ETA: Oh, yeah, about dinner. It's over 100 degrees outside so we're having meatless Sunday ~ fruit salad, potato salad, green salad and crunchy vegetable salad.

The only thing DH does is get the propane tank refilled and attaches it for me. When we were first married, his schedule was so all over the place (real estate) and I never knew when he would be home. Therefore I started the grill (charcoal at the time) and just went ahead and grilled whatever. That was 30+ years ago and I've never given it up. He can grill but I don't mind doing it. That way I can time everything to be ready at the same time. Yeah, I'm anal that way.

DH is still out of town on business, so I packed up the kids and went to a local Mexican restaurant for dinner. I had Shrimp Quesadilla Fajita for dinner and the kids had taco's enchiladas and cheese dip

I wish I knew that you cook them that long ... Dh always does our grilling, but he broke his arm and has had difficulties grilling. We grilled pizza the other night and all he did was open the top for me.
