I am looking for a sweet treat to bring to a ladies meeting next week. Something small & not messy.
So far I have thought of small cream puffs (so easy to make), mini lemon tarts and mini pumpkin muffins with a cream cheese topping.
I have the silpat (silicon) mini muffin pan and it makes 24 items. I have used this silicon pan for making 2 bite brownies, but they always come out a bit dry.
What do you like to have as a small treat with your coffee or tea, if someone else would make it for you to enjoy?
Edited to add that the cream puff recipe (choux paste) is posted later in this post.

I've made the cannoli dip recipe (on Pinterest). Having the girls over for book club this week and I am going to make a cannoli poke cake.

I like these little guys... easy, sweet, and not messy.
Mini Pumpkin Butterscotch Muffins
1 3/4 cups all-purpose flour 1/2 cup brown sugar 1/2 cup white sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 1 teaspoon baking soda 1/4 teaspoon baking powder 1/2 teaspoon salt 2 eggs 1/2 cup melted butter 1 cup canned pumpkin 1 (6 oz) package butterscotch chips
1. Preheat oven to 350 degrees F. Grease mini-muffin pan with cooking spray. 2. Sift together the flour, brown sugar, white sugar, cinnamon, ginger, nutmeg, baking soda, baking powder, and salt into a large bowl. Whisk together the eggs, butter, and pumpkin in a separate bowl. Mix the flour mixture with the egg mixture. Stir in the butterscotch chips; pour into each cup of the muffin pan to about 3/4 full. 3. Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, 10 to 12 minutes.
Note: I usually add about 1/2 tsp vanilla

Pecan pie tartlets use a mini muffin pan. Cookies are easy, brownies.

anxiousmom, they are so easy to do. You can make them ahead and even freeze them unfilled.
1/2 cup butter 1 cup water 1/4 tsp. salt 1 cup all-purpose flour 4 eggs
Grease 2 large cookie sheets and set aside. Preheat oven to 375 degrees
In a 2-quart saucepan over medium heat, heat butter, water & salt until the butter mixture boils. Remove from heat. Add flour all at once. With a wooden spoon, vigorously stir and mixture forms a ball and leaves the side of the pan. Add the eggs to flour mixture, one at a time, beating well after each addition until smooth. Cool mixture slightly. Using large spoon and rubber spatula, drop batter onto cookie sheets into 12 large mounds, 3 inches apart, swirling top of each. Bake for 50 minutes. Remove from oven; cut slit in side of each puff. Return to oven; bake 10 minutes. Turn oven off; dry puffs in oven 10 minutes. Cool. Prepare filling; cover & chill.

Enjoy! Thank you! I am going to practice making them this week...  My only question? What is does the bolded mean? I have to admit, I bake a fair amount and have never seen directions that call for "dry putts."

spelling mistake - dry puffs.  I figured. I just didn't know what. I can't wait to try them. What do you use as filling? I think something chocolate would be delicious.
