My DD is in an apartment in college and her gas stove still doesn't work. She has a microwave and a waffle iron, and her friend is loaning her a panini press. What are some inexpensive but relatively healthy recipes, both vegetarian and not, that she can make? Any ideas?

I don't know...but I would find a crockpot for her. That would open a ton of possibilities.

Baked potatoes are pretty easy to cook in the microwave. I like to top mine with diced deli ham and cheese. She could do broccoli cheese if she's the vegetarian.

The crockpot is a great idea, except that I am one who doesn't like to leave it on when I go out. How about a hot plate? She could make some soup. Or, could she borrow a GEorge Foreman grill? Then she could grill some chicken and make salads and sandwiches. Can you just grill the chicken on the panini press? I don't know as I've never had one.

Crock pot and a griddle and you can make anything you would normally make in the oven Our oven hasn't worked in a long time and it's just not a priority to get it fixed bc it's so easy to substitute. Now, both the stove and the oven out at the same time would suck, lol.

There are lots of frozen microwaveable meals that are fairly inexpensive, especially at Trader Joe's but if that's not an option, Wal-Mart. You just have to know what you're looking for.

Apparently the apartment Suoer is dragging his feet. He says they need to have a maintenance person cone out one day to check it, then a second day to install parts, which will require her to miss one half day of classes or her work internship on two separate days, which is hard to schedule. I guess they don't do these things on the weekend? She pays for a lot of her own expenses so she's hesitant to miss work. They'll get it fixed eventually, I hope, but I don't want her eating junk every meal until then.

Mmm, you can make so many veggie laden sandwiches in the panini maker, and a crock-pot would be a great idea. Good thinking to the pea above who mentioned it.

Sautee veggies on the George Foreman. And yes there is a wave of people cooking obscure thinks on waffle irons: stuffing, mashed potatoes, eggs, Pillsbury cinnamon rolls...the list goes on (check Pinterest for ideas).

Or an electric fry pan. That could be used as a griddle, pot to warm up soup, and a frying pan.

lasagna i dont boil the noodles..just layer..and cook about 20-35 minutes depending on size of pan 9x9--20 min

Toaster oven. They have gotten to be a decent size so you can even fit a pizza. I use mine all the time for lunch and snacks.

SALADS, lots of salads.
I use a 4c Pyrex measuring cup to heat a lot of things in the microwave, especially soups. The handle stays relatively cool, easy to eat out of or serve out of. Can also "steam" broccoli and other veggies in it by adding a tiny bit of water.
I love potatoes "baked" in the microwave and then topped with cooked broccoli and cheese and popped back in to melt the cheese...

Lots of things can be made in a waffle iron--hash browns, stuffing, French toast, waffles (get some fried chicken and syrup!!), brownies....

She can keep diced cooked chicken in the freezer and use it on salads. When I am in a bind I have the deli section at the market slice the chicken in 1/2 inch slices then cubes it when I get home. Jen

Some panini presses have plates you can flip and then she would have a solid surface. And… I have tried to cook several things on the waffle maker. Many of them turn out as total fails. Hash browns are good though!

pinterest has lots of ideas for non waffle foods cooked on a waffle iron. I know my son in law made a squash recipe that was fabulous.

You can cook lots of things in a microwave. I too would recommend doing a Pinterest search and you'll instantly be overwhelmed with loads of recipes. There are hundreds. I would invest in a Pampered Chef Micro Cooker, that thing is awesome! You can cook everything from meat to fresh/frozen veggies to homemade fudge in it.

You just spray the waffle iron with cooking spray and heat it up. Mix up your eggs with whatever you want to put in them, I used green onion and ham. Once the waffle iron is nice and hot you pour in your egg mixture and close the lid. Cook for a couple minutes until done. The eggs don't come out as fluffy as regular scrambled eggs but I liked how easy it was to do on a weekday morning.

Ou stove caught on fire in July. We picked out a new one and it took 3 weeks to get here! We relied heavily on our small toaster oven and the crockpot, and we did just fine! We don't microwave so can't help you there.
