My brother from Michigan is coming to spend a couple of weeks hunting and is using my place as home base. They'll be here in time for dinner.
I'm making beef stew just like our Mom used to make it. I'd like to make southern style biscuits with it but that's not something I ever learned. Anyone want to tell me how? I've got a well stocked pantry and don't want to go to the store to get some special ingredient. Can I make good biscuits with just the basics?
What are you planning for dinner tonight?

We are going to have nachos with lots of toppings. Ground beef, smashed pintos, cheese, tomatoes, diced avocado, pico, olives, sour cream...
Can't wait! Cupcakes for dessert.

I am making chicken tacos/burritos/taco salad.
I am putting chicken breasts in the crockpot with a jar of salsa. After it is cooked I will shred it and my family can "build" whatever they want out of it.
I have all the fixin's...tortillas, shells, cheese, sour cream, jalapenos, olives, tomato, avocado.

This is a good basic biscuit recipe linkAs a Southern girl, I suggest you use lard vs Crisco. LOL I'm making a white bean chicken chili.

As for us, I don't know what to have. I am frustrated. I am still battling some kind of bug because I can't really take off work.
The chicken and dumplings were delicious last night. I don't really want that again, but I don't know what I am hungry for. I don't want to cook, either. At all.
I wish I could just get taco Tuesday, but I am not sure how well that would settle in my stomach. Now ds1 is battling it as well.

I'm making cauliflower pasta. It's a filling meal. No sides are necessary.

gottapeanow I hope you feel better soon. We went away for the long weekend with 26 family members. MIL came up with this annual vacation where we celebrate Thanksgiving so that non of her grown/married grandkids feel like they are pulled in different directions on actual Thanksgiving. MIL insists on buying all of the food and there are always tons of leftovers. She sent us home with 2 large boxes of Bubba burgers, hot dogs, enough sandwich meat for the rest of the week, buns, 3 bags of salad, turkey, stuffing, and all of the other side dishes. So tonight dh is going to grill burgers and we'll have salad and chips on the side.

My gas grill fell apart, my oven wouldn't heat last night so I put carrots, potatoes, onions, celery with a bone in chicken breast and a little water in my crock pot. I seasoned it well so hope it's good.
Gotta clean the oven before the repairman comes. Anybody have to do things like that before a repair is done?

I guess cheeseburgers (made with ground turkey and no bun because that's what the 6yo insists on) and I have delicata squash to try out, which I believe was recommended here. What I really want is some of the massive amount of leftover baked spaghetti from last night. Sooooo good! But I'm saving it for Thursday, our late night.

I put a pork roast in the crock pot this a.m. with onions and a dry rub. So I am hoping for a quick pulled pork sandwich with coleslaw before I rush off to choir practice this evening!

Dh was convinced that we were going to eat turkey and the trimmings leftovers for the third night in a row so he didn't eat them for lunch ... ummmm, NO! (Men are weird.) We're actually going to have chicken stir fry on rice ... super yummy but the dd's will hate it so they are fending for themselves ... kids are weird.

This is the buttermilk biscuit recipe I used last week. Despite loving to bake, my biscuits always turned out like hockey pucks. This recipe is amazing. Light, flaky biscuits. traceysculinaryadventures.com/2013/03/foolproof-flaky-buttermilk-biscuits.html
My plan for tonight was to make the same African sweet potato/black bean/peanut soup I made last week along with the biscuits. But, last night my car died on the way home. The good news, it might be ready for me to pick up from the shop tonight. If so, it will mean a late night, in which case, it might end up being some kind of pasta for dh and the kids and maybe a bowl of oatmeal for me.

DH had a seminar today about 80 miles away. He suggested that he could pick up pizza on his way home since he's passing by an Italian restaurant. Fine by me!

Gosh, I have gotten so lazy with the biscuits lately. For the last couple of years I just go with bisquik. If I were to dig out the recipe I use though it would be similar to the buttermilk recipes that have already been posted. I never remember to buy buttermilk!!
The boy is having dinner with his girlfriend tonight, so it is just little old moi at the table tonight. I am not terribly hungry though, so it might be something easy like chicken purloo.

I'm eating some toast and yogurt because I leave for yoga in about an hour. DH will fend for himself. He's a very good sport about doing that.

Creamy chicken & wild rice soup in the crockpot. I wasn't going to make it because it was supposed to be almost 70 but the morning was cold and damp so I made it anyway. Smells delicious! It's a new recipe so hopefully it's as good as it smells!!

I don't remember the last time I bought real buttermilk, I fake it and use regular milk with a splash of vinegar, wait a few minutes and voila - buttermilk

Mixed Mushroom tacos with avocado and cotija cheese. DH is out tonight, and he wasn't all that excited about this Blue Apron recipe since he isn't a mushroom fan. I am excited about it, so it's dinner for me!

I don't remember the last time I bought real buttermilk, I fake it and use regular milk with a splash of vinegar, wait a few minutes and voila - buttermilk That's exactly what I was going to say. It works perfectly. I've got thick cut pork chops and mushrooms in the oven all under a creamy wine gravy --covered in foil and doing it's thing. I'll make rice and steamed broccoli on the side.

Spaghetti and toast - we had leftover marinara sauce from Saturday so DH spiced it up for the spaghetti sauce. Very good!

I have to go to Costco this evening so I'll probably just get a hot dog from the concession stand outside.

We're having a scalloped potato & ground beef casserole, roasted green beans, carrots, and shallots, apple slices, rolls, and there's a little of the brownie-cake dessert left from last night. ETA: The Italian Sausage Soup with Tortellini I made last night was a hit with everyone. Including those that don't normally like soup and the "soup is not a dinner!" individuals, so it goes into the "keep" binder.
