Yesterday dh took the boys for a late lunch, which meant come dinnertime they weren't hungry. I was starving so made myself a bowl of oatmeal and berries (Trader Joes quick cook steel cut oats are so damned good). That means tonight we're having what I'd planned for last night. Sausage, white bean and kale and I've decided to serve it over steamed rice. The best part, the rice is leftover from a couple of nights ago and I made the sausage and beans last night. We'll be home late tonight because of a doctor appointment. All I need to do is re-heat the rice and sausage, chop up the kale and dump in the pot. Dinner will be on the table in 10 minutes

I still don't feel great and my Dh goes back to work tonight so I am planning something fairly easy. I'm going to cook some ground beef and put it in the crock pot with homemade sloppy joe sauce. Let it simmer for a few hours. Will make roasted potatoes to go with it.

It's late night at Tae Kwon Do, yesterday ended up being Taco Bell, and I really need something that's just going to be ready when we get home. Plus they unexpectedly gave him another stripe at TKD last night and invited him for belt testing in a couple of weeks. That means I need to come up with an unexpected $200 cash for a new uniform and additional equipment by next week, and $60 for the belt testing. So now I need comfort food!

We're having French Onion Chicken Casserole, roasted brussels sprouts and cauliflower (didn't use them last night), another vegetable (carrots?), bakery bread, and cupcakes for dessert. Everyone is tired of apples, so no fruit at dinner tonight tonight. This is a bad time of year for fruit. lucyg, I won't say a word about your cream o' crap soup and stuffing. I know better than to throw that stone.

DS is home from school recovering from his bout of stomach flu. If DH and I are going to get it, it would be in the next 36 hours, so I am trying to keep to light meals. Probably some Bear Creek Chicken Noodle soup tonight.

I am SERIOUSLY thinking about making Stovetop Stuffing for Thanksgiving!! I personally really like it! I have always made homemade stuffing with apples and little sausage balls, something I learned from Martha Stewart back in the day. I wonder if anyone will notice if I make stovetop instead!! Of course I will throw the boxes away in the outside trash so no one will see the packaging!!

I have made something really similar, lucyg. I kind of forgot about that meal, which is why I love this thread. I bought some stuffed Santa Fe chicken the other night at Sprouts. It is stuffed with Jack cheese, green chiles and ranch dressing. Yes, please!!!! I will serve it with mixed veggies and maybe some nice crusty bread. @the Birdhouse Lady - Oh my word, that is insane!!! I hope that all is well and that you resolved everything as much as possible. Just doctor it up a little and it will be fine for Thanksgiving. Add some lightly sautéed celery and onion, stir in some chopped parsley, and it will taste nice and fresh. Stovetop is just packaged breadcrumbs and premixed seasonings, right? Not all that different from making your own stuffing. but WTH on your DS?! Poor baby. We will need more details, of course. This is 2peas. What were you thinking? ETA just saw your latest post. I'll go look for the last-night thread. So never mind.

Well, it's getting really cold, and I have a monster baguette & a rotisserie chicken from Costco, so I'll throw some Wyler's Soup Starter (Homestyle Chicken Noodle) in a pot with some water & chicken & dip my bread in it.

I have a recipe for black bean and rice burritos that I make (though I roll and bake them like you would enchiladas) using either whole wheat or multi-grain flour tortillas, and they are just delicious.
We are probably having fast food. DS has a German session at the library on Thursdays, and we usually do the easy thing afterward. I generally look forward to having a night off from cooking. Then I'll be having likely my second glass of wine with the premier of Project Runway Junior later tonight!
